How to Make Homemade Gravy without Flour
Strain your turkey drippings using a fine mesh sieve.
Add the butter to a shallow saucepan over medium heat.
Once the butter has melted, whisk in the turkey drippings and chicken stock.
Slowly sprinkle the xanthan gum in as the stock mixture is simmering, whisking the entire time.
Continue to simmer until the gravy has thickened and slightly reduced, about 8-10 minutes.
Tip: Too much xanthan gum could ruin the texture of your gravy, so I don’t recommend adding more xanthan gum. The gravy will also thicken further as it cools.
Can I Thicken Gravy with Almond Flour?
Almond flour does not work well as a thickener. Gluten free flours, like almond flour and coconut flour have a tendency to remain a little on the gritty side.
Can I Make Gluten Free Gravy in Advance?
The texture of this gravy is best when it's first made. But you can make it a day or two in advance and store it in the fridge. To reheat it, pour it into a skillet or saucepan on the stove and heat it slowly whisking at the same time.
Will Gravy Kick You Out of Ketosis?
Traditional gravy will most likely effect ketosis because it's made using regular flour as a thickener. This increases the amount of carbs so depending on the amount you eat; it can have an impact your ketone level.
How Many Carbs are in Keto Gravy?
This recipe is mostly made using healthy fats with a little sprinkle of xanthan gum which means there are very few carbs. For one serving of this savory low carb gravy, there are only 3 nets carbs which makes it an awesome Keto substitute for regular gravy.
Tips for Making Keto Gravy
- How to thicken runny gravy: If the gravy is too loose for your personal preference, just add a tiny bit more xanthan gum.
- How to thin out thick gravy: If you have added too much xanthan gum add a little more stock and whisk really well until it's the consistency you're looking for.
- Can I make gravy without turkey drippings? Drippings give the gravy a lot of flavor. You can use Roasted Chicken drippings or even the juice from a cooked beef or pork roast. If you don't have any of those things, you can use bone broth.
- Can I add other seasonings? Definitely! If you want more herb flavor to the gravy, fresh rosemary, bay leaves and thyme are great choices. I would recommend straining the gravy to remove the small herb bits before serving.
- Do I have to strain the pan drippings first? I always recommend it. This is not to catch any small bits of meat that may be in the drippings, it's more about straining it to catch any little bones that may have broken loose from the turkey. No one wants bony gravy!
