Nothing beats a warm bowl of soup on a cool evening. Of course, if you’re anything like me, I enjoy eating soup all year round! While most soup recipes can be a labor of love and take hours to prepare, this soup comes together rather quickly.
Chock full of robust flavors from smoky sausage, tangy tomatoes and tender tasty veggies, this is a super satisfying one-pot meal.
Not only is this a flavorful, stick to your ribs kind of soup, it’s also low carb, full of nutritious ingredients and a really great way to sneak a few extra veggies into your diet. It’s just one of those meals you can feel good about feeding your family.

🛒 What’s in Cabbage Soup with Sausage
- Kielbasa/Smoked Sausage
- Cabbage
- Chicken broth
- Yellow onion
- Diced tomatoes
- Carrot
- Celery
- Garlic
- Tomato paste
- Olive oil
- Butter
- Dried thyme
- Salt
- Ground black pepper
- Optional: red pepper flakes

How to Make Smoked Sausage and Cabbage Soup
Heat a large pot or Dutch oven to medium and add in the olive oil and smoked sausage.
Sauté for a few minutes, or until they’re starting to brown, then remove and set aside.
Add in the butter and once melted, add in the onion, carrot, celery, half the salt and pepper.
Sauté for a few minutes, the add in the garlic.
Sauté for about 15 seconds, making sure you don’t brown it, then add the sausage back in, along with the diced tomatoes, tomato paste, dried thyme, remaining salt, chicken broth and bring to a simmer.
Turn the heat down to medium low and add in the cabbage. With the lid slightly offset, simmer for 35 minutes or until the celery, carrots and cabbage are tender.

Can You Freeze Cabbage Sausage Soup?
You sure can, which makes it a great meal prep option. For best results, allow the soup to cool to room temperature. Transfer it to a freezer-safe bag, squeezing out any excess air, then place the bag on a flat surface in the freezer. It should stay fresh for up about six months when frozen properly.
Cabbage and Sausage Soup Variations and Add-ins
One of the things I love about making a big pot of soup is you can add or take away any ingredient you prefer. Here are some popular variations:
Types of Sausage: Though smoked sausage provides the most flavor, you can use any type of sausage you prefer. You can even use browned ground Italian sausage. Chicken or turkey sausage links work well with this soup also.
Chicken or Beef: If you're not a fan of sausage, you can use rotisserie chicken or leftover roasted chicken instead. Another option is using ground beef, just be sure to brown it first.
Tomatoes: This recipe calls for regular, canned diced tomatoes. But for added flavor you can use fire roasted or diced rotel tomatoes.
Herbs: Change up the flavors with your favorite herbs. Sage, marjoram and bay leaves tastes great with cabbage and sausage.
Veggies: If you are worried about the few carrots in this soup recipe, you can certainly omit them. Just keep in mind, you are only eating ⅛th of a carrot per serving. If you'd like to add other low carb veggies to this recipe, cauliflower chunks, mushrooms, sautéed bell peppers or green beans are options you could consider.
Which Sausage is Best for Keto?
Most any type of sausage is Keto friendly, but it’s the brands you have to watch out for. Not all brands are made using healthy ingredients. Make sure you read the label and look for sausage with zero carbs, zero added sugars and no maltodextrin, an ingredient that can be very inflammatory and can spikes blood sugar.

Cabbage Soup with Sausage
Ingredients
- 14 ounces smoked kielbasa sausage, sliced
- ½ large head cabbage, shredded
- 6 cups chicken broth
- ½ yellow onion, diced
- 14.5 ounce can diced tomatoes, lowest carb
- 1 carrot, sliced
- 1 rib celery, sliced
- 3 cloves garlic
- 1 tablespoon tomato paste

I have this simmering on the stove now but had to taste it - so good. I used sausage leftover from a seafood boil which raised the spice level just like we like it here in South Louisiana! I used 1/2 can of fire roasted diced tomatoes instead of the full can of diced tomatoes and replaced the paste with a small cannof sauce as that is what I had on hand. Perfect use for seafood boil leftover sausage! Thank you - I will definitely make this again!
