🔪 How to Make Chimichurri Chicken
Prepare your batch of Chimichurri Sauce and leave at room temperature, while you prepare the chicken.
Tip: You can make a double batch to have extra on hand to serve over steak, fish, shrimp and even grilled veggies!
Sprinkle the salt, pepper and smoked paprika on both sides of each chicken breast.
Take about ¼ of the chimichurri sauce and brush it over both sides of the chicken to act as a marinade.
Allow the chicken to marinate for 20 minutes at room temperature.
Tip: You can marinate it up to 1 hour, but I wouldn't recommend much past that or the acids in the sauce will start to cook the chicken.
In a large skillet over medium heat, add in the olive oil and once heated, add in the chicken.
Cook for 5-7 minutes on each side or until the internal temperature reaches at least 165°F when checked with a meat thermometer.
Tip: Alternatively, you can grill or roast the chicken if you’d like.
Top each piece with a generous serving of the chimichurri sauce and add the rest to a small bowl on the side for easy dipping.
Store leftovers in an airtight container in the fridge for 2-3 days.

The chimichurri sauce can be prepared several days in advance and stored in the refrigerator until ready to use.
You can also marinate the chicken in the chimichurri sauce, anywhere from 20 minutes to overnight, in an airtight container, in the refrigerator.
You can freeze it with the marinade as well. Just add the chicken with the sauce to a freezer bag and flatten it out, getting out all the extra air. Place it in the freezer for up to 2 months. Thaw in the fridge overnight before cooking.
