This recipe for Beef Bourguignon, is a classic French one pot dish that gets a low carb makeover. The traditional gravy that you see in most Beef Burgundy recipes is thickened using flour, which is off limits for those on Keto or gluten-free diets. With just a few simple substitutions, you skip the extra carbs without reducing any of the robust, intense flavors.
Though there are no shortcuts in making this impressive dinner, the payoff is well worth the extra braising time. The low and slow method ensures you end up with the most delicious flavorful chunks of juicy beef, that literally falls apart with your fork.

🔪 How to Make Healthy Beef Bourguignon
Preheat oven to 350°F.
Cut the chuck roast into small chunks, trimming off any excess fat. Add salt and pepper to all sides.
Heat a dutch oven or large pot to medium. Add in the bacon and fry until crisp.
Remove the bacon, set it aside and leave some the rendered fat in the pot and reserving the rest to sauté the veggies in. Add in the chunks of beef and sear on all sides.
Tip: You might have to do this in 2 batches, so you don’t crowd the pan otherwise the beef ends up steaming, rather than searing.
Set the beef aside and add in more of the bacon fat, carrots, mushrooms and pearl onions. Sauté until they have some good color, should take about 3-4 minutes.
Remove the carrots, onions and mushrooms and set aside to add in later. Add in the garlic and sauté for about 15 seconds, then deglaze the pan with the red wine and beef broth, scraping up all the brown bits of flavor.
Tip: This is an important step because it not only adds more flavor to the pot where the beef will be braised, but also gives extra flavor to the veggies that you'll be adding back in later.
Add the tomato paste, parsley, bay leaves, thyme, bacon and seared beef. Cover and place it in the oven, cook for 1 ½ hours.
Tip: The cooking time might vary depending on the size of the beef chunks you add to the low carb stew.
Add in the mushrooms, carrots and onions, cook for an additional hour or until the meat is fall-apart tender.
Stir in the xanthan gum and heat on the stovetop until the sauce has thickened to your liking. Start with ¼ teaspoon, and wait before adding another ¼ teaspoon.
Tip: If you add too much, you might end up with a texture that is gooey and unpleasant. Remember, you can always add more, but can’t take it away once you add too much.
Serve your delicious low carb stew over mashed cauliflower or with your favorite Keto friendly side.

- Beef chuck: affordable and you can easily find it at any grocery store
- Short rib: always super tender, but is typically pricier
- Fatty brisket: makes a good stew, but requires a good bit of trimming
- Round roast: relatively lean and may dry out easier than chuck when its overcooked
What Wine is Best for Beef Bourguignon?
To give the sauce that classic beef bourguignon flavor, choose a dry, red wine, preferably from Burgundy, France but not required. Pinot Noir, Merlot and Cabernet Sauvignon are popular choices.
Though you don’t have to splurge on expensive wine, you’ll want to avoid the cooking wines you find in the grocery store. They’re usually lower quality and higher in sugar content that will not reduce as well as better quality wine.
What Do the French Serve with Beef Bourguignon?
Unfortunately for those of us that are watching our carb intake, authentic Beef Bourguignon is typically served with braised, roasted or creamy mashed potatoes.

I have not tried cooking beef bourguignon in a slow cooker. Braising it gives the beef a deep rich flavor. If you prefer to cook it the slow cooker, you could probably just follow the steps for making beef stew in the crockpot.
