  • Heavy cream
  • Mascarpone cheese
  • Parmesan cheese
  • Unsalted butter
  • Garlic
  • Salt
  • Ground black pepper

🔪 How to Make Alfredo Sauce

Add the butter to a saucepan over medium heat and sauté the garlic for about 20 seconds.

Be careful not to brown it or it will become bitter.

Stir in the mascarpone cheese and once it melts, add in the heavy cream, salt and ground black pepper.

Then add in the parmesan cheese.

Simmer on low for about 5-7 minutes or until thickened to your liking.

☑️ Storage Instructions

Store leftovers in the fridge for several days.  The sauce will thicken as it cools.  Reheat in a saucepan or microwave and whisk.  You’ll still have that same smooth and creamy texture! If you use a saucepan, rather than a large skillet, the sauce will take a little longer to thicken.

💡 Tips for Making Alfredo Sauce

  • Use freshly grated parmesan cheese. Pre-grated cheese often contains additives that can make the sauce grainy.
  • Keep the heat on low. Too much heat can cause the dairy to separate, so let everything melt slowly.
  • Don’t skip the mascarpone. It gives the sauce extra creaminess and helps it thicken naturally.
  • Adjust the consistency. If it gets too thick, add a splash of heavy cream to loosen it up.
  • Taste and season at the end. Parmesan is salty, so wait until the cheese is melted before adding extra salt.

Easy Keto Alfredo Sauce

Ingredients
 

  • 1 1/2 cups heavy cream
  • 1 1/2 cups parmesan cheese, grated
  • 1 cup mascarpone cheese
  • 1/4 cup unsalted butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Add the butter to a saucepan over medium heat and sauté the garlic for about 20 seconds.  Be careful not to brown it or it will become very bitter!
  • Stir in the mascarpone cheese and once it melts, add in the heavy cream and salt.  Then add in the parmesan cheese and simmer on low for about 5-7 minutes or until thickened to your liking.
  • Serve over zucchini noodles, Palmini, chicken, fish, shrimp or whatever you like! Store leftovers in the fridge in an airtight container for several days or freeze.
