🔪 How to Make Alfredo Sauce
Add the butter to a saucepan over medium heat and sauté the garlic for about 20 seconds.
Be careful not to brown it or it will become bitter.
Stir in the mascarpone cheese and once it melts, add in the heavy cream, salt and ground black pepper.
Then add in the parmesan cheese.
Simmer on low for about 5-7 minutes or until thickened to your liking.
Serve over zucchini noodles, chicken, fish, shrimp or whatever you like!
☑️ Storage Instructions
Store leftovers in the fridge for several days. The sauce will thicken as it cools. Reheat in a saucepan or microwave and whisk. You'll still have that same smooth and creamy texture! If you use a saucepan, rather than a large skillet, the sauce will take a little longer to thicken.
🍴 What to Serve with This Alfredo Sauce
- Zucchini noodles are perfect low-carb alternative to pasta.
- Spaghetti squash is Naturally sweet and pairs beautifully with the rich sauce.
- Drizzled over grilled chicken is a classic pairing that’s simple and so good!
- Toss sautéed shrimp in the sauce for an easy seafood Alfredo.
- Grilled broccoli is fantastic with the creamy sauce and it really complements the crispy roasted edges.
- Use it as a dipping sauce for homemade Keto breadsticks because who doesn’t love a little bread to scoop up extra sauce?
💡 Tips for Making Alfredo Sauce
- Use freshly grated parmesan cheese. Pre-grated cheese often contains additives that can make the sauce grainy.
- Keep the heat on low. Too much heat can cause the dairy to separate, so let everything melt slowly.
- Don’t skip the mascarpone. It gives the sauce extra creaminess and helps it thicken naturally.
- Adjust the consistency. If it gets too thick, add a splash of heavy cream to loosen it up.
- Taste and season at the end. Parmesan is salty, so wait until the cheese is melted before adding extra salt.
- Reheat gently. Alfredo sauce thickens as it cools, but a little heat and a quick whisk will bring it back to life.
🔄 Substitutions and Additions
- Make it extra garlicky: Add more minced garlic or a pinch of garlic powder for extra depth.
- Try a different cheese: Swap some of the parmesan for Romano or asiago for a sharper flavor.
- Add a kick: A pinch of red pepper flakes adds a subtle heat that balances the richness.
- Herbs: Stir in fresh parsley or a sprinkle of Italian seasoning.
Can I Make This Dairy-Free?
This recipe is all about the creamy, cheesy goodness, so a dairy-free version wouldn’t have the same texture. However, you can try coconut cream and nutritional yeast as alternatives.
Why Did My Sauce Turn Grainy?
It’s usually because of pre-grated cheese or high heat. Use freshly grated parmesan and keep the heat low.
How Do I Fix Alfredo That’s Too Thick?
Add a splash of heavy cream or a bit of chicken broth and whisk until smooth.
Can I Use Cream Cheese Instead of Mascarpone?
Yes! Cream cheese will give it a slightly tangier flavor but works as a substitute.
Will This Sauce Thicken as it Cools?
Yes! It thickens up quite a bit, but reheating it gently with a little extra cream will bring it back to the perfect consistency.
What are the Carbs in Keto Alfredo Sauce?
There are only 1 net carb in Alfredo sauce. On top of being super low carb, it's mostly made up of healthy fats. That's a double Keto win.
Is Alfredo Sauce Keto?
