☑️ Storage Instructions

Fridge: You can store leftover dip in an airtight container for up to 4 days. When ready to enjoy, reheat it in the oven at 350°F until warmed through or in the microwave in 30-second bursts.

Freezer: Though it’s best when it’s freshly made you can freeze it in a freezer-safe container for up to 2 months. Thaw in the fridge overnight, then reheat in the oven until bubbly

🍴 What to Serve with Reuben Dip

💡 Tips

  • Drain that sauerkraut well. Excess moisture will make your dip watery. Press it in a strainer to get every bit out.
  • Go for fresh deli corned beef. It has better flavor and texture than pre-packaged options from the grocery store.
  • Softened cream cheese blends better. Let it sit at room temp for 30 minutes for smooth mixing.
  • Use freshly shredded cheese. Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • Keep it warm for parties. You can transfer it to a small slow cooker on the warm setting after baking.

🔄 Substitutions and Additions

  • Swap the cheese: Swiss cheese is a classic swap for Gruyère if you want a more traditional Reuben taste.
  • Make it spicy: Add chopped jalapeños or a dash of hot sauce for a little kick.
  • Thousand Island dressing: For a slightly sweeter flavor you can use homemade Thousand Island instead of homemade Russian dressing.
  • Crispy bacon: A sprinkle of cooked bacon on top adds a smoky crunch.
  • Slow cooker version: Mix everything in a slow cooker and heat on low for 1-2 hours until hot and bubbly.
  • Yogurt: Swap sour cream for Greek yogurt without losing that creamy texture.

Can I Make Hot Reuben Dip Ahead of Time?

Yes, you can mix all the ingredients and store the unbaked dip in the fridge for up to 24 hours. Just bake it when you’re ready to serve.

Can I Double This Recipe for a Larger Crowd?

Absolutely! Just use a larger baking dish and add an extra 5-10 minutes of baking time, checking for that golden, bubbly top.

How Do I Make This Dip Gluten-Free?

The dip itself is naturally gluten-free. Just serve it with gluten-free bread, crackers, or veggie sticks for dipping.

What if My Dip Turns Out Too Thick?

You can stir in a little extra sour cream after baking to loosen the texture.

Can I Use Pre-packaged Corned Beef Slices?

Yes, but fresh deli corned beef will give you better texture and flavor for this dip. If using pre-packaged, chop it finely for the best result.

Can I Serve Hot Reuben Dip Cold?

This dip is best served hot because the melted cheese and creamy texture are what make it so irresistible. However, if you have leftovers, you can enjoy them cold straight from the fridge. Just keep in mind that the flavors and texture are best when the dip is warm and gooey.

Rend your heart and not your garments. Return to the LORD your God, for he is gracious and compassionate, slow to anger and abounding in love, and he relents from sending calamity.
