    If you’re a fan of a classic Reuben sandwich, you’re going to love this Hot Reuben Dip. It’s everything you want from that deli favorite with melty cheese, juicy corned beef, and tangy sauerkraut, all baked into a creamy, gooey dip. It’s basically comfort food in a bowl, and every bite makes you want just one more.

    This recipe is my go-to when I have leftover corned beef, but honestly, I’ll head straight to the deli counter just for this dip. The homemade Russian dressing takes it up a notch, while the crunchy dill pickles add the perfect little zing. It’s so easy to make and always a huge hit at parties and get-togethers.

    🛒 Ingredients for Reuben Dip

    • Corned beef
    • Cream cheese
    • Gruyere cheese
    • Sauerkraut
    • Dill pickles
    • Keto Russian Dressing

    🔪 How to Make Easy Reuben Dip

    Preheat oven to 400°F.

    Take your corned beef and finely shred it using a fork, then set is aside.

    In a large mixing bowl, add in the softened cream cheese, sour cream and Russian dressing.

    Using a hand mixer, mix to combine.

    Add in the shredded corned beef, drained sauerkraut, chopped dill pickles and ⅔ of the shredded Gruyere cheese.

    Mix until combined.

    Spread into a small casserole dish that’s been sprayed with olive oil.

    Top with the reserved Gruyere cheese.

    Bake for 20 minutes or until the cheese is melted and golden.

    ☑️ Storage Instructions

    Fridge: You can store leftover dip in an airtight container for up to 4 days. When ready to enjoy, reheat it in the oven at 350°F until warmed through or in the microwave in 30-second bursts.

    Freezer: Though it's best when it's freshly made you can freeze it in a freezer-safe container for up to 2 months. Thaw in the fridge overnight, then reheat in the oven until bubbly

    🍴 What to Serve with Reuben Dip

    • Fresh veggies like cucumbers, celery and carrots
    • Toast points made from homemade Keto Bread or your favorite store-bought bread
    • Every Bagel Crackers, Ranch Crackers or Baked Cheese Crisps.
    • Spread on homemade Keto Bagels

    💡 Tips

    • Drain that sauerkraut well. Excess moisture will make your dip watery. Press it in a strainer to get every bit out.
    • Go for fresh deli corned beef. It has better flavor and texture than pre-packaged options from the grocery store.
    • Softened cream cheese blends better. Let it sit at room temp for 30 minutes for smooth mixing.
    • Use freshly shredded cheese. Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
    • Keep it warm for parties. You can transfer it to a small slow cooker on the warm setting after baking.

    • ½ pound corned beef, shredded

    • 6 ounces Gruyere cheese, shredded
    • ⅔ cup Sauerkraut, drained and chopped
