Egg salad is such as easy low carb meal to put together, but can sometimes be a little boring. You might wonder what you can add to plain egg salad to make it taste better.
Adding the traditional flavors of jalapeño poppers like jalapeño peppers, cream cheese and bacon really spices things up and turns the plain into bold and satisfying! - Eggs
- Pickled jalapeño peppers (juice reserved)
- Uncured bacon
- Cream cheese
- Mayonnaise
- Scallions
- Garlic salt
- Ground black pepper

🔪 How to Make the Perfect Hard Boiled Eggs
Add the eggs to a saucepan, with just enough cold water to cover them. Pour in a splash of white vinegar and a healthy pinch of salt.
Set your burner to high and bring a boil. Once boiling, turn down the heat to a simmer and set your timer for exactly 10 minutes. After the 10 minutes, transfer the eggs to a bowl with cold water and leave them in there for another 10 minutes before peeling.
To peel, crack the egg on a solid surface, the gently roll it, cracking the shell all over then peel.
Chop the eggs and add them to a large mixing bowl.
Add the mayonnaise, cream cheese, pickled jalapeño juice, garlic salt and pepper to a small mixing bowl.
Whisk to combine.
Pour the mixture into the bowl with the chopped eggs, along with the chopped bacon, pickled jalapeño peppers and scallions.
Mix to combine and it's ready to serve or chill in the fridge.
💡 Tips for Making the Best Egg Salad
- Allow the hard boiled eggs to cool in cold water before attempting to peel them. It will make the peeling process much easier and also stop the eggs from overcooking.
- Mix the dressing in a separate bowl before adding it to the eggs. This way the egg chunks can hold their shape better and not become too broken down.
- Gently fold the chopped eggs, dressing, scallions and jalapeños together, so that everything stays perfectly chunky.

Jalapeño Popper Egg salad is such a versatile recipe, the ways to serve it are endless. Here are some great ideas that are most popular:
- My favorite way is to serve it on my Keto Buns, Homemade Keto Bread or Keto Dinner Rolls for mini sandwiches.
- You can also serve on my Drop Biscuits with some lettuce and tomato.
- Make an egg salad wrap with these Keto Tortillas.
- For another great quick and easy Keto friendly lunch, you can replace the shrimp salad with this egg salad in this stuffed avocado recipe.
- Take a scoop and serve it over a cobb salad, replacing the eggs for a filling and satisfying meal.
- Serve in lettuce cups or with some Homemade Keto Crackers.
- You can also stuff a tomato with this egg salad for a quick and easy lunch.
🔄 Substitutions and Additions
- Pickled jalapeños are my favorite to use in this recipe for a couple of reasons. First, since they are pickled (you can easily make your own too) they are not as spicy and have a nice vinegary kick that works well in this recipe. So well, in fact, that I use some of that pickling liquid as well! If you only have fresh jalapeños, can use them instead, though I would suggest giving them a quick pickle. This method only takes 10 minutes and is well worth it!
- If you don't have bacon on hand, crispy pancetta will work just as well, though it lacks that smokiness, it still has amazing flavor.
- Chopped fresh chives can be substituted for the scallions, if that's what you have on hand. You can also use diced red onion if you'd like instead.
- Add a pinch of smoked paprika for added smoky flavor. Adding some cayenne pepper can also add more of a kick of heat too.
- If you don't like the tanginess of cream cheese, mascarpone cheese will work just as well since it has the same texture and a very mild flavor.
- Greek yogurt or sour cream would be a suitable replacement for the mayonnaise, if you happen to have either on hand.
How Long Should I Hard Boil Eggs?
The method that I outlined above, starting with cold water brought to a boil, then simmering for 10 minutes gives you perfectly cooked hard boiled eggs.
What are the Carbs in Eggs?
Eggs contain a very small amount of carbs, but they are high in protein. For one egg, there is less than .5 carb.

This recipe has 2 net carbs per serving, making it ideal for a Keto diet.

Eggs are truly one of the most nutritious foods you can eat. And for those on Keto, they are especially good because not only are they loaded with vitamins and minerals, (B2, B12, B5, A, and Selenium) and are a high quality protein, they're are a good source of healthy fats!
As stated in this article from Healthline, " Eggs contain amounts of almost every vitamin and mineral required by the human body, including calcium, iron, potassium, zinc, manganese, vitamin E, folate and many more."
How Many Eggs Can I Eat on Keto?
It's perfectly acceptable to eat between 5-6 eggs a day on Keto. Keep in mind that it is a good idea to introduce a variety of proteins, so that you don't get tired of any one in particular.
I say this from experience, as when I first started Keto, I had eggs daily and got to the point where I couldn't stand them. It took some backing off for a while to return to enjoying them again.
