Scoop out the butter mixture onto a piece of parchment paper and shape in the form of a log.

You can use something with a flat edge like a dough scraper to help make it easier.

Twist the ends to seal it up and refrigerate until firm. When you're ready make the lobster, cut the log into discs.

    How to Broil Lobster Tails

For me, it is hard to beat broiled lobster! They remain moist and tender without drying out or becoming rubbery. To broil, take each lobster tail and using kitchen shears, cut the top of the shell all the way to the tail.

Open up the shell to reveal the lobster meat, then carefully separate the lobster meal from the shell.

Pull the meat up over the shells, so the meat is sitting on top.

Place the rack in the upper ⅓ section of your oven, then turn it on broil.  Broil the lobster tails for 4-6 minutes (or 1-2 minutes per ounce) until the meat is opaque and white in the center.  It should measure 140°F using a thermometer.

    Tips for Buying Lobster

When Buying Fresh Lobster: Look for ones that are active and lively. One way to tell if the lobster is healthy is to hold the lobster by the upper shell and look at its claws. Make sure the lobster is holding its claws above its head and not dropping them down by it's side.

Know Your Lobster Shells: There are basically two types of shells on lobster. Hard shell and soft shell. Soft shells on lobster mean they have recently shed it shell to form a new one. Softer shell lobster has meat that it typically sweeter.

When Buying Lobster Tails: Look for lobster tails ranging from 5oz. to 12oz. This size is typically sweet and tender. Tails should be purchased frozen, and thawed just before cooking.

Other Ways to Cook Lobster Tails

Broiled lobster tails are such a great way to bring out the best flavor in lobster, but there are many ways to cook it, so experiment some with other ways!

Grilled: This a super fun and super quick way of cooking lobster tail. Place the lobster tails, meat side up on the grill. Cook them covered, with medium heat for 10-12 minutes or until meat is becomes opaque in color.

Boiled: Add thawed lobster tails in boiling water with some Keto friendly seafood seasoning. The amount of time you boil them depends on the size of the tails. You can use the below as a boiling guide:

    • 6-7 oz. tails - 5-6 minutes
    • 8-10 oz. tails - 6-8 minutes
    • 16-20 oz. tails- 10 minutes
    • 20-24 oz. tails 10-12 minutes

Baked: Bake lobster much the same way you broil it, just at a lower temperature for a little bit longer.

Poached: In a skillet, add about 3-4 tablespoons of water with about ½ cup of compound butter you've cut into small pieces. Allow the butter to melt into the water, but don't let it come to a boil. Gently place the lobster in the pan, turning them every minute or so until the meat is opaque or reaches an internal temperature of 145°F.
