Buffalo Cauliflower "Mac" and Cheese - Keto and Low Carb

If you like buffalo wings, you will love this dish!  Cauliflower takes the place of macaroni and is smothered in a cheesy sauce flavored with my homemade buffalo wing sauce.  It’s topped with blue cheese crumbles and can be served with your favorite protein.  

Buffalo Cauliflower "Mac" and Cheese - Keto and Low Carb

This buffalo cauliflower “mac” and cheese is quick and very easy to make, and absolutely packed with flavor!

Ingredients

1 large head cauliflower (or 2 small), cut into small bites

1/4 cup buffalo wing sauce (see recipe here)

6 ounces of mascarpone cheese, softened (or cream cheese)

2 cups shredded cheddar cheese

2 tablespoons grass-fed butter

1/2 cup heavy cream

1/4 cup blue cheese dressing, (see my homemade recipe here)

Preparation

Add the cauliflower florets to a microwave save bowl.  Microwave for 7-8 minutes or until slightly tender (or your desired texture).  You can steam it instead, if you don’t have or want to use a microwave, but I would not boil it, it will be too watery.  Drain any water and pat dry with paper towels.

Heat a saucepan to medium and melt the butter.

Add in the heavy cream.

Then the mascarpone cheese.

Add salt and pepper to taste.  Add in the shredded cheddar.

Then whisk in the buffalo sauce.

And finally, whisk in the blue cheese dressing.

Mix until well combined and smooth.  Remove from the heat.

Pour the sauce over the cauliflower and toss to coat.

Serve with a drizzle of the buffalo wing sauce  and top with blue cheese crumbles.
