    Are you’re watching your carbs, and wondering," What can I have instead of rice on Keto?" Cauliflower rice is the ultimate substitute for starchy, high carb foods like rice, bread and potatoes. And while some cauliflower recipes can be a tad bit boring, this coconut lime cauliflower is anything BUT boring!

    Coconut is one those ingredients that totally wakes up whatever dish you add it to. Some super popular examples are Thai Red Curry Coconut Grilled Chicken, Coconut Curry Chicken Soup and Red Curry Coconut Pork. Not only does the coconut add a nice subtle flavor, but it also adds a bit of richness to each dish.

    That is case with this cauliflower rice as well. Unsweetened coconut milk and the perfect amount of lime transforms ordinary cauliflower rice into a fragrant and flavorful side dish that won't overpower or compete with whatever you serve it with.

    What's in Coconut Cauliflower Rice

    • Cauliflower rice
    • Unsweetened coconut cream
    • Coconut oil
    • Cilantro
    • Lime
    • Salt
    • Pepper
    • Optional: Unsweetened shredded coconut

    How to Make Coconut Cauliflower Rice

    Heat a large nonstick skillet to medium and add in the coconut oil.  Pour in the cauliflower rice and toss in the coconut oil to coat it.

    Sauté 5 minutes, then add in coconut cream, lime juice and zest, salt and pepper.

    Cook for an additional 5 minutes or until most of the liquid has been absorbed by the cauliflower.

    Add in the cilantro, top with the optional shredded coconut and serve.

    Is Cauliflower Rice Good for Keto

    If you have been on Keto or a low carb diet, there is no doubt you have seen cauliflower recipes. That's because it has considerably less carbs than real rice and it has a fairly neutral flavor making it a good base for many low carb recipes.

    Is Cauliflower Rice Healthier Than Rice?

    Let's look at the comparison in carbs alone! For one cup of regular white rice, there are 45 grams of carbs. But is cauliflower rice high in carbs? No! For the same cup measurement, cauliflower rice only has 10 carbs!

    But it's not just about the huge difference in carbs. White rice basically contains no nutrients and is a starchy carbohydrate which your body converts into sugar.

    There really isn't any comparison between the two! And with as many delicious ways there are to prepare it, you could add a totally different cauliflower rice recipe to your menu plan every week.

    How Healthy is Cauliflower Rice?

    Cauliflower is very nutritious. It's packed with fiber, and many vitamins and minerals, including potassium, magnesium, manganese, phosphorus, calcium, sodium, zinc, folate, omega-3 fatty acids, and vitamins B complex, C, K and E.

    According to this article on Healthline, " Cauliflower is an excellent source of vitamins and minerals, containing some of almost every vitamin and mineral that you need."

    Tips for Buying Fresh Cauliflower

    • Look for cauliflower that has a creamy white color that is free of blemishes.
    • The head of cauliflower should feel heavy, and the florets should be densely packed.
    • Take a little sniff of the cauliflower. It shouldn't have much of a smell at all. When it begins to age, cauliflower will begin to smell pungent and rather unpleasant.
    • Most of the time cauliflower comes wrapped tightly in cellophane, which traps moisture. When you get it home, unwrap it and transfer it to a loosely sealed plastic bag. This really helps extend the life of a head of cauliflower.

    How to Make Cauliflower Rice

    You can always buy frozen cauliflower rice, but nothing beats the taste and texture of freshly riced cauliflower. And it's so easy to do!

    Just start with a head of cauliflower. Wash and cut the stems and leaves off.

    Cut into florets and place them in small batches in the bowl of your food processor.

    Pulse just until you have pieces that resemble the size of regular rice.

    Do not overmix or they will come out too fine. If you don't have a food processor, you can use a box grater instead.

    Coconut Cauliflower Rice

    Ingredients
     

    • 5 cups raw cauliflower rice
    • ¾ cup unsweetened coconut cream, (see notes)
    • 2 tablespoons coconut oil
    • 1 tablespoon cilantro, chopped
    • 2 limes Zest and juice
    • 1 teaspoon salt
    • ¼ teaspoon ground pepper
    • Optional: 1 tablespoon unsweetened shredded coconut, chopped

    Instructions

    Recipe Notes

    Take a 15 ounce can of unsweetened coconut milk and refrigerate it overnight.  The cream will rise to the top and solidify.  Scoop out ¾ cup of the cream and either discard or save the coconut water for another use.
