Once these Keto muffins are cooled, a delightfully fresh and bright lemon icing is drizzled over the top. The sugar free glaze brings together all the flavors of the strawberries and lemon and truly puts icing on the cake (no pun intended).
Gluten free muffins are a staple in my home. Because they freeze so well, they are one of my favorite things to meal prep. Whether it's for a low carb snack or for mornings when I just don't have time to cook, Keto muffins are the perfect answer.

With strawberry season in full swing where I live, I just had to seize the moment and create a recipe using those sweet and delicious berries. And boy, was I glad I did! Give them a try because you're going to fall in love with the lemonade factor that has been added to these amazing Keto Strawberry Muffins.
What's in Keto Strawberry Lemonade Muffins
- Almond flour
- Strawberries
- Monk fruit/allulose confectioners
- Oat fiber
- Eggs
- Butter
- Sour cream
- Heavy cream
- Lemon
- Baking powder
- Vanilla extract
- Salt

How to Make Keto Muffins
To Make the Strawberry Lemonade Muffins
Preheat oven to 350°F.
Add the almond flour, oat fiber, baking powder and salt to a mixing bowl and whisk to combine.
In a separate bowl, add in the eggs, sour cream, butter, vanilla extract, lemon juice and zest and mix until well combined. Add in the monk fruit/allulose and continue mixing.
Combine the wet and dry ingredients and mix until everything just until combined.
Then fold in the chopped strawberries. Be a little gentle with the batter at this point. You want the strawberries well incorporated but not mushed.
Using an ice cream scoop, add in the batter to 12 silicone muffin cups or a muffin pan that's been sprayed with nonstick spray.
Bake for 20-23 minutes or until a toothpick, when inserted, comes out clean. Allow them to cool while you make the icing.
To Make the Sugar Free Lemon Icing
Add in all the icing ingredients and whisk until combined. Start with a tiny bit of the heavy cream and add a little at a time, until you get the consistency of icing.
Drizzle the icing over the cooled muffins and allow to set before serving. Store leftovers in the fridge in an airtight container for several days or freeze.
How to Freeze Strawberry Lemonade Almond Flour Muffins
If you have leftover strawberry muffins or if you've made them in advance of needing them, they will freeze beautifully if you follow just a few steps. First, you must allow the muffins to cool completely. You can even place them in the fridge to ensure they are cooled.
Next, wrap them individually with plastic wrap, making sure the plastic is touching as much of the surface of the muffin as possible. For this reason, you may decide to glaze them after they have thawed. It's not necessary but as with anything you freeze with glaze, some of the glaze may stick to the plastic.
Are Strawberries Keto? What are the Carbs in Strawberries?
A lot of people wonder if strawberries are Keto because they have natural sugar. The truth is almost everything you eat has some trace amounts of natural sugar, even most green veggies.
So the key to eating fruit on Keto is to find those fruits that are lowest in sugar and highest in fiber. Berries are perfect in that way, which is why in small amounts, strawberries are just fine on Keto.
One way to eat berries on Keto is to incorporate them into recipes where you aren't eating a lot at one time. For instance, this Strawberry Keto Muffin recipe uses one cup for the whole recipe and the net carbs in ½ cup of strawberries is only 5 grams.

Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. What is a Substitute for Oat Fiber?
To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.

Tips for Making the Best Strawberry Gluten Free Muffins
These Strawberry Lemonade Keto Muffins are so east to make. But baking with almond flour is slightly different than baking with gluten. Here are a few of my best tips to make sure your muffins turn out great every time:
Silicone is your friend: Silicone muffin cups or a silicone muffin pan makes baking with almond flour so much easier. There's no sticking to the side of the cups like you can have with paper liners.
Let them cool: While I love the taste of muffins with almond flour, with the absence of gluten, you they can crumble on you. The way to prevent that is to allow them to cool for at least 15 minutes in the pan before transferring to a cooling rack.
How to give muffins a fluffy texture: Almond flour is fairly dense and can make whatever your baking rather dense. That is the reason I love to add just a little Oat Fiber. You just won't believe the difference in texture it makes.
Add them to your next breakfast buffet: If you need a sweet treat to add to your next buffet, you can make these Strawberry Keto Muffins in mini silicone muffin cups. Adjust the time and start watching for them to be done after 10-12 minutes.
Change up the flavor: What goes great with lemon and strawberries? Blueberries! Add a few to the batter. I hate to waste anything so I do this sometimes when I only have a few blueberry left in a carton. There's no need to change up any of the other ingredients.

For the Muffins
- 1 ¾ cups almond flour

- 1-2 teaspoons heavy cream, or as needed
