This is one of my very favorite Keto desserts! I absolutely love all things lemon, I use it in so many dishes that I make, both sweet and savory. I love using the zest as well, which has TONS of lemon flavor. In many dishes I actually use both, enter Lemon Curd...
I used my 5 Minute Lemon Curd in this recipe to save on time, but if you aren't into using a microwave, you can certainly make my traditional Lemon Curd instead.
Once you prepare the dough for the tart and get it baking, you can make the lemon curd and it will be ready by the time your tart crusts are done!
Allow them to set up in the fridge in about an hour, and they'll be good to go!
These lemon curd min tarts are the perfect Low Carb dessert to serve at parties, pot luck, barbecues, you name it! You can serve them plain, or dress them up with an assortment of fresh berries or whip cream.
What's in Mini Keto Lemon Tarts
- Super fine almond flour
- Unsalted butter
- Egg
- Swerve confectioners
- Vanilla extract
- 5 Minute Lemon Curd
- Optional: Top with berries or homemade whip cream

How to Make Keto Lemon Curd Mini Tarts
Preheat oven to 350F.
Add the almond flour, butter, egg, Swerve confectioners and vanilla extract to the bowl of a food processor and mix until a dough is formed.
Form the dough into a log and cut into 12 even pieces.
Roll each piece into a ball, then flatten out into a disc and press into a greased non-stick mini tart pan.
Prick the dough with a fork and bake for 12-15 minutes, or until slightly golden, while you make the lemon curd.
Allow the tart crusts to cool before filling with the lemon curd.
Chill in the fridge for at least 1 hour to allow them to set. Top each mini tart with the berries of your choice.
I also garnished mine with some fresh mint, which I had in my garden. If you've ever planted mint in your garden, you know that it can really take over and becomes nearly impossible to contain! Don't get me wrong, I love mint, but in hindsight, I wish I had kept it in a pot, rather than in the ground!
Store leftovers in the fridge for up to a week.
Are Lemons Keto?
They absolutely are! In fact, lemons are recommended on Keto because of their many health benefits. Where you typically avoid a lot of citrus fruit on Keto, lemons are the exception.
They're low in sugar, a great source of Vitamin C and contain antioxidants that promote healthy digestion and aid in fluid retention. There're many other great health benefits discussed in this article on Healthline.
What are the Carbs in Lemons?
Lemons are low in carbs with only .5 grams per lemon wedge! How is that for Keto friendly?! If you're craving something to drink with a little flavor, lemon makes a great low carb flavor option you can add to your water each day, and its healthy too!
Tips for Healthy Lemon Curd Tarts
How Do I Keep My Gluten Free Crusts from Breaking?
Tart crusts made with almond flour are very tender when they are still warm. In order to keep them from crumbling, allow them to cool in the tart pan for at least 15 minutes before removing them.
Why Did My Keto Lemon Curd Split?
Even though the Lemon Curd used in this recipe is super easy to make, a common variation from the recipe people make is using too many whole eggs. It is really important not to add more egg white than what is called for. Egg whites cook faster and will coagulate if cooked at too high of a temp.
Can These Gluten Free Lemon Tarts Be Frozen?
These lemon tarts freeze very well. Just pop the lemon tarts in an airtight container and store for up to a couple of months in the freezer.
Leftover lemon curd, if stored in an airtight container, can be frozen for up to 6 months. For optimal results in thawing, allow it to set in the fridge for 24 hours until completely thawed.
How Do I Fix Grainy Keto Lemon Curd?
Swerve confectioner really helps to keep the lemon curd in these tarts smooth. Depending on the power of your microwave, if it cooks too quickly, it can have a slightly grainy texture. But no worries, if this happens, just run through a fine mesh strainer. Problem solved!
What Toppings are Best with Low Carb Lemon Tarts?
This is truly a personal preference so feel free to get a little creative. You just can't go wrong with fresh berries. But from time to time, I do enjoy these gluten free tarts with homemade whipped cream mixed along with fresh berries.
Another great idea for a little extra decadence is drizzling a little sugar free fruit sauce over the top like this, Raspberry Sauce, Strawberry Sauce or Blueberry Sauce.

Dough was way to soft, I couldn’t make a circle to save my life. I put the dough in the freezer to harden up a bit and it sort of worked. I used the 5 min curd and it worked way better than expected! I didn’t have a mini tart pan so I used a muffin tin and it worked just fine. These aren’t the prettiest thing I’ve made since I normally bake very technical desserts like macrons but taste good very impressive for being keto!
