I have to admit, cauliflower is my favorite Keto veggie! In part, the versatility makes cauliflower a MVP for low carb “mock” recipes that typically use pasta or potatoes.

But its versatility is not the only great thing about this veggie. There are many health benefits to cauliflower. It’s packed with fiber, and many vitamins and minerals, including potassium, magnesium, manganese, phosphorus, calcium, sodium, zinc, folate, omega-3 fatty acids, and vitamins B complex, C, K and E!

By pan roasting the cauliflower florets with homemade ranch seasoning, you are taking what appears to be a simple Keto side dish and creating a roasted veggie with huge wow factor. The flavors are zesty and tangy and oh so good!

How to Make Ranch Roasted Cauliflower

Preheat oven to 425°F.

Add the cauliflower to a large mixing bowl, pour the olive oil and melted butter over the top, then toss to coat.

Sprinkle 2 tablespoons of the ranch dressing over the top and toss.

Pour the cauliflower onto a baking sheet and roast for 25 minutes.

Serve with a dusting of the ranch seasoning mix.

If you like extra zesty flavor, you can add as much homemade ranch seasoning as you’d like. You can even add a little heat to it by adding a few red pepper flakes! Go easy though, a little goes a long way.

How to Freeze Ranch Roasted Cauliflower

If you’re wanting to get a little meal prep done, this Keto roasted cauliflower is PERFECT for that and it’s so easy! After you have roasted the florets, allow them to come to room temp, then place the whole sheet pan in the freezer for about 30 minutes to a hour.

Then all you have to do is transfer the frozen florets to a freezer bag or air tight container for up to a couple of months. When you’re ready to serve them, just allow put the desired serving amount on your sheet pan and cook on 375°F until heated through.

What Goes with Ranch Roasted Cauliflower?

Hmmm, everything! Of course I may be partial. I love the way the flavors tend to go perfectly with anything you serve with it.

I love to serve it with Instant Pot Pot Roast, Pork Chops with Bacon Mushroom Gravy and Grilled Steak with Compound Butter, but it will go with any of your favorite Keto entrees.

Tips for Making the Best Roasted Cauliflower Recipe

Look at the Color: Always look for cauliflower heads that are uniformly creamy white in color. From time to time you might see a head of cauliflower with some light brown spots. Though the spots are not harmful, it’s a sign of oxidation resulting from being stored a little too long.

Moisture is not a friend of cauliflower: When you purchase cauliflower from most grocery stores, it comes wrapped in a plastic covering, which can trap moisture. As soon as you get it home, unwrap it and put it in a ziplock bag with a dry paper towel to help absorb moisture.

This will help extend the shelf life of cauliflower in the fridge. This is also a great time to pre-chop your cauliflower for recipes you’ll be needing it for.

Needing a Shortcut for Roasted Cauliflower Recipes? Now days, you can buy the cauliflower already cut into florets. Condensation can build up in the bag just from the temperature change going from the store to your home.

To maximize the shelf life, when you get the bag home, go ahead and open it, and place them in a ziplock bag with a couple dry paper towels.

Watch for Hidden Sugars: One of the most important steps in making this a Keto friendly side dish is using the homemade Ranch Seasoning.

Store-bought seasoning packets are loaded with sugar, maltodextrin or other ingredients that are not ideal for Keto or low carb diets.
