🔪 How to Make Keto Raspberry Lemonade
Wash your raspberries and add them to a blender. Then warm up 2 cups of the water in the microwave or stovetop. You don’t want it hot, just warm, as this will help dissolve the sweetener.
Add in the sweetener and 2 cups of the warm water.
Blend until pureed.
Pour the mixture through a fine mesh sieve to strain out all the seeds.
Pour the puree into a large pitcher, along with the 6 cups of cold water and mix.
Juice your fresh lemons. I would not use bottled lemon juice for this recipe.
Pour the lemon juice into the pitcher and mix until combined. Taste for sweetness and if not sweet enough, add more sweetener. The level of sweetness will depend on how ripe or tart your raspberries are.
Add in ice and serve.
☑️ Storage Instructions
Fridge: Store in an airtight pitcher for up to 3 days. Just give it a good stir before serving.
Freezer: Pour into ice cube trays and freeze. Use the cubes in water or sparkling drinks for a raspberry lemonade twist.
🍴 What to Serve with Homemade Lemonade
You can serve this beverage with your favorite entrée or one of these tasty Strawberry Meringue Cookies, Strawberry Cupcakes or any of your favorite sweet treats.
💡 Tips for Making Sugar-Free Lemonade
- Use a highspeed blender to ensure the raspberries are fully blended for the best flavor and smooth consistency.
- Use a fine mesh sieve to remove all seeds for a smoother drink.
- Taste your lemonade and add more monk fruit if your raspberries are extra tart.
- Freshly squeezed lemon juice gives the best flavor, avoid bottled juice if possible.
- Start with cold water to ensure the lemonade is ready to serve right away.
🔄 Substitutions and Additions
- Frozen raspberries: You can use frozen raspberries if that's what you have on hand. Just be sure to thaw them before pureeing in the blender.
- Minty twist: Add a handful of fresh mint leaves for an extra burst of flavor.
- Berry mix: Swap some raspberries for strawberries or blackberries for a fun twist.
- Sparkling lemonade: Replace some water with sparkling water for a fizzy refresher.
- Cucumber slices: Add a few thin cucumber slices for a cooling, spa-like drink.
- Lavender: Stir in a pinch of lavender for a subtle floral flavor.
- Citrus mix: Blend in a splash of orange or lime juice for a citrusy variation.
Why is My Lemonade Too Tart?
You may need to add more sweetener. Raspberries can vary in tartness depending on their ripeness.
What if I Don’t Have Monk Fruit?
You can substitute it with erythritol, stevia, or another sugar-free sweetener of your choice.
Why Does My Lemonade Separate?
Natural ingredients like raspberry puree can settle over time. No worries though; just stir it well before serving to combine.
What if I Don’t Have a Fine Mesh Sieve?
No problem! You can use a new, clean kitchen towel or multiple layers of cheesecloth to strain the seeds. Or, if you don't mind a slightly pulpy texture, you can skip straining altogether.
