This ricotta chocolate mousse is one of those desserts that you’ll want to keep in your back pocket for last minute cravings. It literally takes 5 minutes to whip up and uses just a handful of ingredients that you might already have on hand.
You might need to pick up the ricotta, but that’s something I usually like to keep on hand. It’s got a wonderful creamy texture, it’s low in carbs and honestly I just like to eat it by the spoonful, kind of like cottage cheese, but better!

Using a food processor or blender makes it really quick to mix up and you can enjoy it right away, or chill it in the fridge for later. My Cheesecake Fluff, Peanut Butter Mousse and Strawberry Coconut Cream Mousse are made in a similar way. Quick, easy and delicious!

- Ricotta cheese
- Unsweetened cocoa powder
- Sugar free semi-sweet chocolate chips
- Monk fruit/allulose
- Vanilla extract
- Salt

🔪 How to Make Ricotta Chocolate Mousse
Add the chocolate chips to a small microwave safe bowl and heat for 20 seconds or until most of the chips have melted, but not all of them.

Stir until the remaining chips have melted, then set aside to cool while you gather the rest of the ingredients. You don’t want the chocolate to be hot when you add it into the mousse.

Add the ricotta cheese into the bowl of a food processor or high powered blender.

Blend for a few seconds, then add in the cocoa powder, melted and cooled chocolate chips, sweetener, vanilla extract and salt.

Continue blending until well combined, rich and creamy.

Cover and chill in the fridge until it thickens up to the consistency of your liking.

Store leftovers in an airtight jar in the fridge for 3-4 days.

💡 Tips
- Don’t overheat the chocolate, or it could scorch and ruin it.
- Be sure to allow it to cool before adding it to the mousse, or it could seize up.
- While you can serve it right away, it’s best to let it chill and set up in the fridge first. This will give you a more mousse-like consistency.
- Portion it out into your serving glasses, so you can serve it as soon as it has set.
- Be sure to use the powdered sweetener for a smoother consistency. If all you have on hand is the granular, pulse it a few times in a coffee grinder, otherwise your mousse will be grainy.

🔄 Substitutions and Additions
- You could substitute cream cheese or mascarpone cheese for a thicker and richer consistency.
- For a similar texture as the ricotta cheese, you can sub with cottage cheese, though I recommend only using a full fat version.
- For a nice contrast in texture, add in some chopped toasted almonds on top.
- For a more rich chocolate flavor, add in 1/2 teaspoon instant espresso powder into the chocolate chips before melting them.
- Top with some homemade whip cream and chocolate shavings right before serving.
- You can also add some fresh berries over the top.
- For a hint of coconut flavor, add in some coconut extract and some shredded coconut over the top.
- For a hint of fruitiness, swirl in a tablespoon of Strawberry Sauce, Raspberry Sauce or Blueberry Sauce.
- Cut up some Keto Pound Cake into chunks and layer in a trifle dish with the mousse for a fancy presentation.

Do Chocolate and Ricotta Go Together?
Absolutely! Ricotta is a very mild-flavored cheese, similar to cottage cheese, but creamier and sweeter, which is often served with sweet toppings like berries or preserves.
What Are Some Common Mistakes When Making Mousse?
Overheating the chocolate can scorch it and ruin the batch. Not using good quality chocolate is also a mistake, since there are only a handful of ingredients in this recipe, you really want them to shine. Adding too much sweetener can be a problem too, so if you are sensitive to sweets, start by adding half the sweetener, taste it, then you can always add more if you need to. You can’t take it away, once added though.

Since ricotta is low in carbs, low on the glycemic index and high in protein, its’s ideal for stabilizing blood sugar.

- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon monk fruit/allulose, powdered
- 1/2 teaspoon vanilla extract
- pinch salt
