Preheat oven to 400°F.
Add the ricotta, salt, pepper and olive oil into a mixing bowl.
Whip using hand mixer for 2 minutes or until well combined and fluffy.
Add in the shredded mozzarella, parmesan cheese, chopped rosemary, garlic and lemon zest.
Mix by hand until well combined.
Pour into a small baking dish that’s been sprayed or brushed with olive oil and bake for 25 minutes or until slightly golden and bubbly.
Garnish with some fresh rosemary and (optional) drizzle of sugar-free honey and your favorite Keto crackers and/or raw veggies for dipping.
💡 Tips
- Make sure to buy whole milk ricotta, not the low fat version. This will give you a nice creamy dip that also has plenty of healthy fats.
- You can also make the dip in advance, store it in the fridge and then bake it when you're ready to serve it.
- If you're serving this dip to guests, you might want to use your most presentable casserole dish that can go from oven to table. If you don't love rosemary, you can use fresh lemon thyme or thyme instead.
☑️ Storage Instructions
Store leftover dip in an airtight container in the fridge for 3-4 days.
🍴 What to Serve with Baked Ricotta Dip
My favorite way to serve this dip is on a Charcuterie Board, but here are some great low carb choices for dipping:
- Keto Ranch Crackers
- Store bought crackers or tortilla chips
- Sliced cucumbers
- Raw carrot sticks
- Raw bell pepper sticks
- Celery
🔄 Substitutions and Additions
- Romano or Asiago cheese can be used instead of parmesan cheese
- Mozzarella cheese can be substituted with provolone cheese
- If you don't love rosemary, you can use fresh lemon thyme or thyme instead.
- For a slight kick of heat, you can add in a pinch of red pepper flakes.
- For a flavorful twist, you can orange zest instead of lemon.
Can Ricotta Cheese be Cooked?
Yes, it absolutely can! Ricotta is a classic ingredient in lasagna annd baked ziti, which are always baked. I use in this Zucchini Lasagna, Lemon Ricotta Cake and Zucchini Rollatini.
Can You Freeze Ricotta Cheese?
While technically you can, I really don't recommend it. The flavors will likely stay in tact, but the texture will change slightly. If you do need to freeze some, just be sure to drain as much of the liquid off as you can, otherwise ice crystals will form.
What is Ricotta Cheese Best for?
Traditionally the most common use for ricotta is lasagna or baked ziti. As I mentioned earlier, it's a quintessential ingredient in both. But you can also use it in other dishes, both sweet and savory, or even just have a scoop all by itself, which is what I do sometimes.
