If you love stuffed mushrooms, you're going to love this air fryer recipe. There're loaded with rich and decadent cream cheese and savory sausage, then cooked until they are melt-in-your-mouth perfection! With just a handful of ingredients and less than 15 minutes, these impressive stuffed mushrooms are ready to serve!
They are great served as an appetizer or side dish, but they're so satisfying and loaded with protein you could even have them as a light lunch with a simple green salad.

What’s in Air Fryer Stuffed Mushrooms
- Mushrooms
- Italian sausage
- Cream cheese
- Parmesan cheese
- Garlic
- Parsley
- Garlic salt
- Ground black pepper
- Optional: red pepper flakes
- Olive oil (for brushing)

How to Make Stuffed Mushrooms
Heat a skillet to medium heat and add in the Italian sausage. Cook until browned, then drain off any fat and add the sausage to a large mixing bowl.
Preheat air fryer to 370°F for 5 minutes, while you mix up the stuffing.
Add the cream cheese, garlic, garlic salt, pepper, parsley, (optional) red pepper flakes and , most of the parmesan cheese into the bowl with the sausage.
Mix until well combined and set aside.
Remove the stems from the mushrooms, then clean them using a damp paper towel (do not wash under water). Lightly brush the outsides with olive oil.
Take the stuffing mixture and spoon it into each mushroom cap. Do not overstuff them, or they’ll just ooze all over the air fryer.
Cook for 9-11 minutes or until the tops are slightly golden and the mushrooms are cooked through. Cooking times will depend on the size of your mushrooms, so if they're smaller, they'll likely need to cook 6-8 minutes.
Allow them to cool slightly before serving.
If you can find them in your grocery store, I highly recommend using the larger mushrooms. They are a bit more substantial and hold up nicely. They’re also more uniform in size, so they’ll cook more evenly.
Do You Wash Mushrooms Before Stuffing Them?
Mushrooms should not be washed prior to cooking or stuffing them. Because they are like sponges, mushrooms will soak up anything you put them in.
To prevent the mushrooms from retaining too much water, take a damp paper towel and gently wipe off any dirt or debris.
Are Mushrooms Keto? What are the Carbs in Mushrooms?
They sure are! Mushrooms are very low in carbs making them an excellent addition to your Keto recipes. Each serving, or about 5 baby bellas, has 42 calories per serving with .9 g fats, 5.2 g of protein and approximately 3.5 grams of carbs.

Are Air Fried Mushrooms Healthy?
Mushrooms are very nutritious! They’re loaded with fiber, vitamins and minerals. The actual nutritional benefits vary slightly depending on the type of mushroom.
But overall, they are a good source of vitamin B, copper, potassium and antioxidants which is associated with numerous health benefits that you can read about in this article on Healthline.
Why Do Stuffed Mushrooms Get Watery? How do You Make Stuffed Mushrooms not Watery?
- Mushrooms, by nature contain a good bit of moisture. For best results, do not wash or soak your mushrooms before cooking them.
- Air fry them on a high temp. You want the temp to be high enough to absorb any moisture than leaks out of them.
- Be mindful of the ingredients you use in the filling. If you stuff them with other veggies, the moisture in the veggies can make your mushrooms soggy.
- Be patient and let them cook the required amount of time. One of the main reasons air fried mushrooms are limp and watery, is because you didn’t cook them long enough for the water to cook out of them.
Stuffed Mushroom Variations and Add-ins
- Meat: Italian sausage is loaded with flavor, but if you prefer, you can use regular ground breakfast sausage, ground turkey or ground chicken.
- Cheese: The combination of cream cheese and parmesan cheese creates a nice golden brown crust. But if you want to add a little gooeyness to them, you can add a little shredded mozzarella or Gruyere!
- Seasonings: These mushrooms are like little flavor bombs! So have fun and add your own favorite seasonings, like basil or oregano. Red pepper flakes are a great way to add a little heat!
- Topping: If you want to add a crispy topping, you add just a little bit of these Keto Bread Crumbs mixed with a little melted butter to the tops before air frying.
Can I Stuff The Mushroom the Night Before?
Absolutely! Stuffing the night before can be a time saver, especially if you're busy preparing multiple other dishes. Just make sure you keep them in the fridge in an airtight container until you're ready to air fry them the next day.
Can I Bake these Sausage Stuffed Mushrooms in the Oven?
Using the air fryer is a great way to keep from heating your kitchen up during the hot summer months. But if you don't have one, don't let that stop you from making these mushrooms.
Place the stuffed mushrooms on a lined baking sheet. Bake them on 400°F for 15-20 minutes, or until they're nice and golden brown on the top.

Thanks for another great recipe. I make stuffed mushrooms often in the air fryer. This is a great addition to my recipe collection.
I usually use spinach artichoke dip (from Costco) and a sprinkle of grated cheese on top for a very quick filling.
