Cod is a mild tasting white fish that's so versatile, it's great served with just about any seasonings or vegetables you choose. When summertime brings us so many wonderful garden-fresh vegetables, you can put them to good use with a Greek salad, to go with your succulent bake cod fillets.
Even though cod is the center attraction in this dish, the simple salsa recipe truly creates a mouth-watering combination of flavors and textures that compliment the cod so well. From the creamy feta, tangy lemon and briny olives, to the crispy bell peppers and cucumbers, it just doesn't get any better.

- Fresh cod
- Tomatoes
- Cucumber
- Yellow bell pepper
- Kalamata olives
- Olive oil
- Red onion
- Feta cheese
- Lemon
- Dried oregano
- Salt

How to Bake Cod in the Oven
Preheat oven to 400°F.
Dry the pieces of cod with paper towels, then place on a baking sheet lined with a wire rack, sprayed with nonstick spray.
Brush 1 tablespoon of the olive oil over the tops and sides of the cod. Sprinkle half the salt, pepper and oregano over the top.
Tip: Lining your baking sheet with aluminum foil makes cleanup much easier.
Bake for 10-12 minutes or until the internal temperature reaches at least 145°F when checked with a thermometer.
While the cod is baking, add the tomatoes, yellow pepper, cucumber, red onion and Kalamata olives to a mixing bowl.
In a separate bowl, add the olive oil, remaining salt, pepper, oregano, lemon juice and zest to a bowl. Whisk until well combined.
Pour the mixture over the chopped veggies.
Mix until well combined and allow to sit at room temperature until ready to serve.
Once the cod is cooked through, serve with some of the salsa over each piece and top with the feta cheese.
Tip: If you have any leftover salsa, it's also great served over grilled chicken.

How Long Should You Cook Cod in the Oven?
This will vary based on the size of the pieces of fish you're cooking. For the average, pre-cut sized fillets you most often see in the grocery store, you'll cook them for about 10 minutes. But if your oven tends to cook a little hotter than most, start checking them for doneness after about 8 minutes.
How to Tell When Baked Cod is Done
To prevent any type of foodborne illness, the USDA recommends you cook fish until it reaches an internal temperature of 145°F when checked with an instant read thermometer, in the thickest part of the fillet.

Baked Cod with Greek Salsa
Ingredients
- 24 ounces fresh cod, cut into 6 pieces
- ⅓ cup tomatoes, diced
- ⅓ cup cucumber, diced
- ¼ cup yellow pepper, diced
- ¼ cup Kalamata olives, chopped
- ¼ cup olive oil, divided
- 2 tablespoons red onion, minced
- 2 tablespoons feta cheese, crumbled
- zest and juice of 2 small lemons
- 1 teaspoon dried oregano, divided
- ½ teaspoon salt, divided
- ¼ teaspoon ground black pepper, divided
