It’s a salad that just screams all things summer. This recipe takes those same vibrant flavors transformed into a warm, hearty chicken dish that’s perfect for an easy weeknight dinner.

Made with just a few simple ingredients, this Caprese Chicken is a hearty and comforting dish that’s bursting with freshness and flavor. The melted mozzarella perfectly complements the savory chicken, juicy tomatoes, and tangy balsamic, creating a family favorite you’ll want to make again and again.

🔪 How to Make Chicken Caprese Skillet

Slice each chicken breast in half, making 6 pieces in total.  Using a meat tenderizer, slightly flatten them out, making sure they are level and even. Sprinkle both sides with the garlic salt, pepper, dried basil and dried oregano.

Heat a large oven-safe skillet to medium.  Add in the olive oil and the chicken.

Sauté for a few minutes on both sides until they are cooked through.

Add the mozzarella cheese over the top of each piece of chicken.

Place the skillet under the broiler for 5-7 minutes or until the cheese has melted, then remove from the oven.

Add slices of the tomatoes over the top, with fresh basil leaves alternating between each slice.

Top with a drizzle of the (optional) balsamic reduction. I also like to add some flaked sea salt, oregano and ground black pepper over the top right before serving.

☑️ Storage Instructions

To store leftover Caprese Chicken, place it in an airtight container and refrigerate it for up to 3 days. When reheating, use a microwave or an oven at a low temperature to keep the chicken moist.

You can freeze it if you do so without the fresh basil and tomatoes, because these ingredients can become mushy when thawed. Instead, freeze the cooked chicken and cheese in a freezer-safe container for up to 2 months. When ready to eat, thaw it in the refrigerator overnight and add fresh tomatoes and basil after reheating.

💡 Tips for Making Chicken Caprese

  • To save time, you can buy pre-cut chicken cutlets instead of whole chicken breasts.  
  • Use Campari tomatoes for their sweet and juicy flavor if you can find them. If not, try Roma tomatoes instead. Just make sure the tomatoes are ripe for the best flavor.
  • Try to slice the tomatoes evenly so each piece of chicken gets an equal amount of tomato flavor.
  • Start with a hot skillet to get a nice sear on the chicken. This helps lock in juices, keeping the chicken tender and flavorful.
  • Make sure your oven broiler is fully preheated before placing the skillet under it. This helps the cheese melt quickly without overcooking the chicken.

🔄 Substitutions and Additions

  • Chicken thighs: Swap out chicken breasts for boneless, skinless chicken thighs. Adjust cooking time because thighs may take a bit longer to cook through.
  • Cheese: Use sliced provolone, fontina, or fresh burrata instead of mozzarella for a slightly different flavor and texture.
  • Garlic: Add minced garlic to the skillet when cooking the chicken for an extra layer of flavor. Just keep an eye on it so that it does not burn.
  • Spinach: Layer fresh spinach leaves under the tomatoes for added greens and nutrients.
