Are you bored with the same ole chicken recipes? You're in for a real treat with this healthy and delicious chicken bruschetta recipe!
It's so easy to make and uses fresh ingredients that just brighten up the whole dish.
I used an indoor grill pan when I made this recipe. They're great when inclement weather prevents grilling outdoors. It heats up very nicely and gives the chicken those perfect grills marks you are looking for.
But, my favorite way to prepare this Bruschetta Chicken is on the outdoor grill. It's a great way to avoid heating up the kitchen on hot summer days and let's face it, grilling outside is so much fun!
Grilled Bruschetta Chicken would not be complete without the finishing touches of a rich and flavorful homemade balsamic reduction. It adds a such fantastic depth of flavor that it will seem it took you hours to prepare, when it really only takes minutes.
What's in Grilled Chicken Bruschetta
- Chicken breasts
- Tomatoes
- Garlic
- Olive oil
- Fresh basil
- Balsamic vinegar
- Dijon mustard
- Garlic powder
- Dried basil
- Dried oregano
- Salt
- Ground pepper
- Balsamic reduction

How to Make Chicken with Bruschetta
To Make the Grilled Chicken
Add all the chicken marinade ingredients to a mixing bowl and whisk until well combined.
Add the chicken into a food storage bag, then pour the marinade over the top.
Seal up the bag and make sure the marinade is coating all sides of the chicken. Place in the fridge for 1 hour.
To Make the Bruschetta
Once you heat up your grill, I recommend making the bruschetta and allowing it to sit at room temperature while you grill and rest the chicken. This will give it time for the flavors to meld.
Add the tomatoes, garlic, basil, olive oil, salt and pepper, into a medium bowl, then toss to combine.
Set aside at room temperature while you grill the chicken.
Grill the chicken for several minutes on each side, until they reach an internal temperature on a meat thermometer of at least 165°F.
Allow the chicken to rest at least 10 minutes before cutting into it.
Top each piece of chicken with some of the bruschetta.
Add a drizzle of the balsamic reduction, then serve.
Store leftover chicken and bruschetta in separate airtight containers.
What is Bruschetta? Is Bruschetta Keto?
So, I know what you are thinking! Bruschetta is actually toasted Italian bread drizzled with olive oil and balsamic glaze and topped with a tomato, garlic mixture.
But, those on Keto know that traditional Italian bread would not be considered Keto at all. But there's no reason to miss out on all those same amazing flavors when you serve it over grilled chicken! You take an savory appetizer and turn it into a complete meal!
Tip for the Best Grilled Chicken
- After you've cleaned the grill grates, brush them with a little oil to help create a nonstick surface. Chicken breasts are so lean, they will sometimes stick without the spray.
- When it comes to chicken breasts, it is best to look for the brand that has, "organic, natural or fresh" on the label. That means it is additive-free chicken and hasn’t been sitting in a freezer for a while.
- If the chicken breasts extra large are uneven in thickness, pound down the thicker side to the thickness of the thinner side. Or you can opt to butterfly the breasts, if you prefer. Both will ensure even cooking.
- Because boneless, skinless chicken breasts are so lean, they should be grilled quickly over high heat to retain as much moisture as possible.
- Once your chicken has reached 165°F, cover the breasts and allow them to rest for about 10 minutes before dressing and slicing.

Grilled Bruschetta Chicken
Ingredients
For the Chicken/Marinade
- 6 chicken breasts, thinly sliced (4 ounces each)
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- 1 teaspoon dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon dried basil
- ¼ teaspoon dried oregano
- ¼ teaspoon salt

- 1 ½ cups vine ripe tomatoes, diced
- 3 cloves garlic, very finely minced
- ¼ cup olive oil
- 2 tablespoons fresh basil, chopped
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- ¼ cup balsamic reduction
