    This salad starts with juicy peaches, grilled to perfection, which brings out their natural sweetness. Each bite is a delightful blend of contrasting flavors and textures, with the soft and creamy burrata that pairs perfectly with the smokiness of the slightly charred peaches.

    Served over a bed of fresh peppery arugula and drizzled with a sweet and tangy dressing, this is a simple, beautiful, and incredibly flavorful summer salad the whole family will love.

    The prosciutto makes this salad hearty enough and adds so much flavor, you can even serve it as a main course if you'd like!

    🛒 What’s in Burrata Salad

    • Burrata cheese
    • Prosciutto
    • Arugula
    • Peach (or nectarine)
    • Walnuts
    • Fresh mint
    • Flaked sea salt
    • Ground black pepper
    • Olive oil
    • Apple cider vinegar
    • Sugar-free Keto honey (or maple syrup)
    • Dijon mustard
    • Dried oregano
    • Garlic

    • Grill pan or outdoor grill
    • Mini chopper or food processor
    • Serving platter

    🔪 How to Make Burrata Arugula Salad

    To Make the Dressing

    Add all of the dressing ingredients into the bowl of a mini chopper or food processor.

    Blend until well combined and emulsified.  Set aside while you prepare the salad.

    To Make the Salad

    Heat up your grill or grill pan and rub olive oil over the grates.

    Grill the peach slices for about 2-3 minutes on each side. 

    Tip: Do not grill them too long or they will get mushy and stick to your grill.

    Once finished, remove and set them aside to cool.

    Wash, dry and arrange the arugula on a large serving platter.  Pour half the dressing over the top and gently toss to coat.

    Tip: Be sure you are ready to serve the salad, otherwise the arugula will become soggy if it sits too long.

    Add the 4 pieces of the burrata over the arugula. Next, add each slice of prosciutto in little bundles spaced throughout the platter.

    Add the cooled peach slices and the toasted chopped walnuts, chopped fresh mint, flaked sea salt and pepper.

    Tip: If you don't have walnuts, slivered almonds, pecans or pine nuts will work well too. Just be sure to toast them first, it helps enhance the flavor.

    Finally drizzle the remaining dressing over the top and serve.

    Are Peaches Allowed on Keto Diet?

    On average, one medium-sized peach contains approximately 10 net grams of carbohydrates. While Keto typically restricts high-carbohydrate fruits, incorporating a small portion of fresh peaches can be completely acceptable.

    For instance, this recipe makes 6 servings, which means there are approximately 1.6 net carbs of peaches per serving. By adding just a few slices of fresh peaches adds a burst of natural sweetness and a refreshing flavor that helps to keep your salads interesting.

    What is Burrata?

    Burrata cheese is a type of Italian cheese that is best known for its rich, creamy indulgent texture. It's made from cow's milk and is actually a variation of mozzarella cheese.

    What really makes burrata extra special, is its unique filling. The cheese consists of a soft outer shell, which is made from stretched mozzarella curds, and a luscious, creamy center that is filled with a combination of fresh cream and strands of mozzarella curds. This gives burrata its distinct characteristic of a creamy and oozing center, similar to a small pouch.

    How Many Carbs are in a Burrata Salad?

    For this Keto version of Burrata Salad, there are approximately 4 net carbs per serving. If you're tracking macros, you'll want to add each ingredient to your own tracker because the brand, size and weight of the ingredients you use can cause the carbs to vary.

    Recipe Variations and Add-ins

    • Dressing: Instead of the dressing used in this recipe, you can drizzle some of this homemade Balsamic Glaze over the salad.
    • Lettuce: You can use romaine or butter lettuce if you prefer. You can also use baby spinach in place of the lettuce.
    • Fresh herbs: This recipe calls for fresh mint, but other fresh herbs you can try are fresh parsley, basil, dill and oregano. You'll want to adjust the amounts based on the strength of the herb.
    • Other fresh veggies: Juicy cherry tomatoes, thinly sliced red onion, and bell peppers work well in this salad. Or for a really great twist, add in some grilled asparagus tips.
    • Crispy pancetta: Crumble or chop crispy pancetta and sprinkle it over the salad for an extra layer of savory goodness.
    • Pomegranate seeds: Add a pop of color and a burst of sweetness with juicy pomegranate seeds, creating a delightful contrast with the other flavors.
    • Pesto: Add a pop of vibrant green color and a delicious fresh herby flavor with a little bit of homemade Pesto Sauce.

    What Can I Eat with Burrata?

    Other than adding a creamy decadence to salads, here are some other delicious ways to use burrata cheese:

    • Caprese salad: You can use burrata instead of fresh buffalo mozzarella in this Classic Caprese Salad. Drizzle with extra virgin olive oil, balsamic glaze, and sprinkle pinch of flaked sea salt and pepper.

    Grilled Peach Burrata Salad with Prosciutto

    Ingredients
     

    For the Salad

    • 8 ounces burrata, 2 pieces, each cut in half
    • 4 ounces prosciutto, sliced thin
    • 5 ounces arugula
    • 1 medium peach (or nectarine), sliced thin
    • ¼ cup chopped walnuts, toasted
    • 1 tablespoon fresh mint, chopped
    • ½ teaspoon flaked sea salt
    • ¼ teaspoon ground black pepper
    • Olive oil for grilling the peach

    For the Dressing

    • ⅓ cup extra virgin olive oil
    • 3 tablespoons apple cider vinegar
    • 2 tablespoons sugar-free Keto honey, or SF maple syrup
    • 2 teaspoons dijon mustard
    • 1 teaspoon dried oregano
    • 1 clove garlic, grated
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    To Make the Dressing

    • Add the cooled peach slices, toasted chopped walnuts, chopped fresh mint, flaked sea salt and pepper.
    • Finally drizzle the remaining dressing over the top and serve.

    Recipe Notes

    If you don't like arugula, you can use any lettuce that you like instead.
    If you don't like walnuts, slivered almonds, pecans or pine nuts will also work well.  Just be sure to toast them first.
    If you can't find sugar-free Keto honey, you can use sugar-free maple syrup instead.  It will change the flavor of the dressing some, but will still be delicious!
    If you don't like mint, you can just omit it.  I do recommend adding it though, it gives the salad such a nice boost of flavor.
