    Who doesn't absolutely love all things ice cream? I certainly do! This no churn coffee chip ice cream recipe is at the very top of my favorite desserts! It has a secret ingredient that helps take the creaminess right over the top... mascarpone cheese!

    And the best part about this coffee ice cream recipe is its sugar free, making it an amazing Keto sweet treat you're going to love! If you've ever had the coffee chip Rebel ice cream, you are going to LOVE this!

    If you've never tasted coffee ice cream before, just imagine your favorite iced mocha coffee but in ice cream form. It's just that simple, yet oh so good! The chocolate chips add an extra touch of decadence that will be hit with your whole family, including the kids!

    This is a hassle free no-churn Keto ice cream recipe. No need to sit waiting for it to stop churning in an ice cream maker. You just mix up the ingredients, stick it in the freezer and in just a couple of hours it's ready to serve.

    What's in Keto No Churn Ice Cream

    • Heavy cream
    • Mascarpone cheese
    • Allulose confectioners
    • Sugar-free dark chocolate
    • Instant coffee granules
    • Vanilla extract
    • Xanthan gum

    How to Make Keto Ice Cream

    Heat up ¼ cup of the heavy cream in the microwave, then pour the instant coffee over the top.

    Whisk in the coffee granules until dissolved, then set aside to cool.

    Add the remaining heavy cream, mascarpone cheese, allulose and vanilla into the bowl of a food processor.

    Blend until well combined.

    Pour in the cooled coffee and heavy cream mixture and continue blending.

    Sprinkle the xanthan gum over the top and blend.

    Add in the chopped chocolate and pulse briefly, then remove the blade and mix using a silicone spoon.

    Poor the mixture into a freezer safe glass container, cover and allow to chill in the freezer for at least 2-3 hours or until it reaches the consistency of ice cream.

    Can You Have Ice Cream on Keto?

    Anything that contains large amounts of sugar, like traditional ice cream, should be avoided when on Keto. With the sugar substitute, allulose, there is no reason not to enjoy a Keto Ice Cream version as a sweet treat on occasion.

    How Do I Keep No Churn Ice Cream from Freezing Too Hard?

    This Keto Ice Cream does not freeze as hard as most Keto recipes, because it uses allulose and xanthan gum. These ingredients help it maintain a creamy texture while freezing without becoming super hard.

    Can I Substitute Cream Cheese for the Mascarpone?

    A lot of Keto desserts that use mascarpone will allow you to substitute cream cheese in its place. Because you want a really smooth texture and for the flavor of the coffee to take front and center, cream cheese is not recommended as a good substitute in this recipe.

    What are Some Add-ins and Flavor Variations?

    • Adding just a touch of unsweetened cocoa powder will give it extra chocolate flavor.

      Hi Julianne
      I tried your Coffee Chip recipe, and it ended up all curdled with lots of small lumps. I followed your recipe to the letter. The only think I did differently (by accident) was use heavy whipping cream instead of heavy cream. Is there a real difference between these creams. Please help I am very confused. I will try making this recipe again after reading the comments from experts like you.
      I tasted the ice cream and it is like eating cold fat lumps. Please let me know where I went wrong. Love your recipes. I would love to order your recipe BOOKS if any are published.

        I'm sorry to hear about the challenges you faced with the ice cream. I have never had this issue and I make it all the time, but it seems like a few factors might have affected the outcome. First, substituting Heavy Whipping Cream for Heavy Cream generally shouldn't cause issues, as they are quite similar. However, the use of a blend containing stevia instead of pure allulose might have contributed to the texture problem. Stevia blends can sometimes crystallize or behave differently in frozen desserts.

        Regarding the curdling issue, it's possible that the xanthan gum wasn't evenly dispersed or incorporated too quickly. It's best to sprinkle it evenly over the mixture and mix gently to avoid clumping. For your next attempt, I recommend ensuring the xanthan gum is added slowly and mixed thoroughly. You might also want to consider using pure allulose or another sweetener recommended in the original recipe to ensure the best texture. I hope this helps clarify things, and I'm sure your next batch will turn out beautifully!

      Thank you so much for this recipe. I made it today exactly what the recipe called for except I didn't have dark chocolate so I used milk chocolate. It turned out great. My only complaint is that the mascarpone cheese is so hard to find and when I did find it it was sooo expensive. However, I got it anyway because I am worth it 🙂 I won't make this every week but at least once a month to satisfy my ice cream cravings.

        The price of groceries has certainly gone up. Mascarpone is a little more expensive than cream cheese, but I always catch it when it goes on sale. I am so glad you enjoyed the ice cream though.

      Was so excited to make this... I love coffee ice cream....and have missed having it.... I followed the directions exactly, but found the flavor bland. I even checked the recipe again (2 Tbs. instant coffee). I mixed 2 Tbs. heavy cream with two Tbs. of dry instant coffee, then let it set in the fridge for a few days, then incorporated with the thawed ice cream.... The flavor was quite powerful! When I make it again, I will probably just use 3 Tbs. of dry instant coffee.

        This recipe was written to have a really mild coffee flavor. You can always adjust the amount of coffee flavor to suit your personal tastes. I am so glad you made and look forward to hearing how you enjoy the changes you make next time you try it.

      This is the absolute best! It’s easy to make and is delicious! I have to go ahead and put it in popsicle molds so that it is portioned out and I don’t eat the whole thing.

      Could I sub plain Greek yogurt for the mascarpone?

        I would try cream cheese if you can't get mascarpone. I have not tried yogurt, but you have to be careful of the water content and I think yogurt would have too much water to keep this ice cream nice and creamy.
