    As these almond flour cookies begin to bake in the oven, your home will be overtaken with the sweet aroma of made-from-scratch cookies.

    Within just a few minutes the dough begins to brown, the nuts begin to roast and the chocolate begins to melt creating these ever so irresistible cookies.

    However, this Keto cookie recipe comes with a warning: Baker beware-you can never eat just one! Trust me, they're just that delicious.

    What Ingredients are in Keto White Chocolate Macadamia Nut Cookies

    • Almond flour
    • Oat Fiber
    • White chocolate Chips
    • Macadamia nuts
    • Butter
    • Egg
    • Swerve confectioners
    • Brown Swerve
    • Vanilla extract
    • Baking soda
    • Xanthan gum

    How to Make Keto Macadamia Nut Cookies

    Preheat oven to 325F.

    In a mixing bowl, add the almond flour, oat fiber, baking soda and Xanthan gum and whisk until well combined, then set aside.

    Add the butter, Swerve confectioners and Brown Swerve in a separate bowl and cream together using a hand mixer.  Add in the egg and vanilla extract and continue mixing.

    Mix in the dry ingredients, only until combined.

    Fold in the white chocolate chips and macadamia nuts and make sure they are evenly distributed throughout the dough.

    Using a cookie scoop, scoop out the dough onto a baking sheet lined with parchment paper or a Silpat.

    Gently press down to flatten the dough slightly, then bake for 15-17 minutes or until the edges are golden.

    Allow them to cool on the sheet pan for at least 20 minutes or more. Cookies made with almond flour tend to be a more delicate until they have cooled some.

    Note: If you want crispier cookies, flatten the dough out more.  If you want a more soft baked type cookie, do not flatten the dough out.

    These cookies can be stored right on your counter top in an air tight cookie jar like this one for about a week.

    Can You Freeze Leftover Macadamia Nut Cookies?

    You sure can. In fact, you can freeze the raw dough or the baked cookies.

    To freeze the dough, just form into balls and place them onto a sheet pan that has been lined with silpat or parchment paper. Freeze for a couple of hours then transfer them to freezer bags. When you're ready to bake them, let them sit out at room temp for about 30 minutes before baking.

    For baked cookies, place cookies in a single layer between pieces of parchment paper in an air-tight, freezer safe container for up to a couple of months.

    What are Keto Friendly Chocolate Chips?

    In order to be Keto friendly, chocolate chips must have a low GI, meaning they do not cause a spike in your blood sugar levels.

    There are several great sugar-free chips on the market that taste really good and they melt perfectly. Most of these chips are sweetened with a sugar substitute and are suitable for those that are on Keto or low carb diets, but you should always read the label.

    Two of the most popular brands are Lily's, that uses Stevia as a sweetener and Choc Zero, that uses Monk Fruit sweetener. Both are excellent choices for your Keto baking needs.

    Tips for Baking Almond Flour Cookies

    • One of the main reasons Keto cookie recipes don't turn out the way they should is the mix up between almond meal and blanched super fine almond flour. Make sure you're using almond flour. Almond meal has a grainier texture and just doesn't work as well in most cookie recipes.
    • Almond flour is much more dense than traditional flour. In many of my baked Keto recipes, you'll see the addition of oat fiber. Oat fiber is a game changer in low carb baking. The combination of these two gluten free flours allows the cookie, or whatever you're baking, to become light and fluffy without falling to pieces.
    • Because almond flour doesn't contain gluten, you need to use some sort of binder to help hold the dough together as it bakes. Eggs along with xanthan gum, arrowroot flour or guar gum are great Keto friendly binders.

    INGREDIENTS

    • 1 ½ cups almond flour
    • ¼ cup oat fiber, see notes
    • ⅔ cup white chocolate chips
    • ½ cup macadamia nuts, chopped
    • ½ cup butter, softened
    • 1 egg
    • ⅓ cup Swerve confectioners
    • ⅓ cup Brown Swerve
    • 1 ½ teaspoons vanilla extract
    • ½ teaspoon baking soda
    • ½ teaspoon Xanthan Gum

    INSTRUCTIONS

    • Preheat oven to 325F.

      I’m wondering if we can sub for another nut. Macadamia’s are great, but the nuts just for this recipe alone are over $5, not including other ingredients and we are on a strict budget. I’m thinking of switching out to slivered almonds and doing the almond extract switch like another posted in comments here. I’ll let you know how it goes!

      I do t have any oat fiber but I do have psyllium husk powder and coconut flour both. How much of these would I use to replace the oat fiber?

        The oat fiber is one of the key ingredients in giving these cookies great texture and is all I have ever used to make them. I cannot tell you for sure because I have never used either of those things as a substitute.

      I don't use Oat Fiber. What can I substitute for it? Will almond flour work?

        You could possibly substitute the oat fiber with the same amount of additional almond flour. The texture of the cookies will be slightly different but I can't tell you to what extent because I use oat fiber in most all my Keto baked goods to give them a more traditional texture than what almond flour alone provides.

      I made these. I can not begin to tell you how decadent these were. Oh. My. Goodness. I did use the the Bake Believe. However, based on your review, I put them in when I took them out of the oven. The cookies where till soft and I was easily able to insert them into the cookie and left them to harden as they cool. Worked like a charm. Also, instead of vanilla extract, I used almond extract. That substitution took these cookies to another amazing level. Thank you so much for this recipe.

      YUMMMM!!!! White chocolate-macadamia cookies have always been my favorite. I haven't been able to have them in years so of course I had to try this recipe as soon as I saw it. This did not disappoint - they are amazing! I made them on the smaller side so I could enjoy 2 of them with my coffee as a treat in the evening. The only problem is now I got my honey hooked on them too so I have to share them! Thank you for a great recipe, this will be on my list to make again very soon = )

        Maybe lupin flour? Not if you have a any type of nut allergy, though. Be veryl careful about allergies.
