    Zucchini is one of those easy to grow summer crops that you’ll always find in abundance at farmer’s markets and grocery stores. And because it's one of the best low carb veggies you can have on Keto, I am always looking for tasty and healthy ways to incorporate it into my weekly meal planning.

    One of things people love most about zucchini is just how versatile it is. You can eat it raw, like this in Zucchini Noodle Salad, for a main course meal like these Lasagna Stuffed Zucchini Boats or as a savory appetizer like these amazing Zucchini Fritters.

    You can even make some of the best breakfast Chocolate Zucchini Muffins that will even fool the kids into eating their veggies!

    Even if you aren't a big zucchini fan, I really encourage to try this recipe. These gluten free fitters are loaded with amazing flavors that you're simply going to love! Trust me, after than first bite, you'll be going back for seconds!

    What's in Keto Zucchini Fritters

    • Zucchini
    • Almond flour
    • Mozzarella cheese
    • Parmesan cheese
    • Garlic
    • Eggs
    • Chives
    • Olive oil
    • Butter
    • Homemade ranch seasoning
    • Salt
    • Ground black pepper
    • Sour cream
    • Lemon

    How to Make Zucchini Fritters

    To Make the Dipping Sauce


    Add all the sauce ingredients to a mixing bowl.

    Whisk them together until well combined. Set aside at room temperature, so the flavors can meld while you prepare the zucchini.

    To Make the Zucchini Fritters

    Wash and grate the zucchini, then add to a colander over a large mixing bowl with the salt.

    Allow to sit for 15 minutes, then using a cheesecloth or clean lint-free kitchen towel, squeeze out all the liquid.  It’s important to get them as dry as possible.

    Add in the eggs, almond flour, ranch seasoning, pepper, garlic, chives and cheeses.

    Mix to combine, then form small patties a few inches in diameter. I used a heaping cookie scoop full, so they were uniform in size.

    Heat a large nonstick skillet to medium and add in the olive oil and butter.

    Fry the patties for about 5 minutes on each side, or until they are golden and cooked through.

    Drain on paper towels, sprinkle with a little salt and serve with a dollop of the dipping sauce on the side. ENJOY!

    Are Zucchini Keto Friendly?

    Most all above ground veggies are lower in carbs than below ground ones like potatoes and carrots. Zucchini is no exception. With just barely over 3 net grams of carbs per serving, they're a great option for Keto and low carb diets.

    Zucchini is low in calories and incredibly nutrient dense, associated with many health benefits as noted in this article on Healthline. It's an awesome low carb substitute for carb heavy foods like pasta, and it’s super versatile. You can grill it, bake it or even eat it raw. It’s just an all-around perfect vegetable for any diet.

    Why are my Zucchini Fritters Falling Apart?

    Fritters must have some type of ingredient that works to bind them together. For these gluten-free fritters, almond flour, egg and mozzarella cheese all work together to make sure they hold up during pan-frying.

    Why are My Zucchini Fritters Soggy?

    Zucchini contains a lot of water. To keep your fritters from being soggy, it's really important to squeeze out as much moisture you can before mixing in the other ingredients.

    How Do You Keep Fritters Crispy?

    The issue with vegetable fritters, of any kind, is after they sit a while, the moisture in the vegetables causes them to become soft. They will still taste amazing, but they'll become less crispy the longer they sit.

    If you want to try to crisp them up, you can add them back to the skillet with a little olive oil or avocado oil just for a few seconds.

    Keto Zucchini Fritters

    Ingredients
     

    For the Fritters

    • 3 zucchini, grated (about 4 cups)
    • ½ cup almond flour
    • ½ cup shredded mozzarella cheese
    • ½ cup grated parmesan cheese
    • 2 cloves garlic, minced
    • 2 whole eggs, beaten
    • 1 tablespoon chives, chopped
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 2 teaspoons homemade ranch seasoning
    • 1 teaspoon salt
    • ¼ teaspoon ground black pepper

    For the Dipping Sauce

    • ½ cup sour cream
    • zest and juice of ½ lemon
    • 1 teaspoon homemade ranch seasoning
    • ½ clove garlic, grated

    Instructions

    Recipe Notes

    Makes 12 fritters, serving size 2 fritters
    If you don't have sour cream, you can use a low carb Greek yogurt.
    If you don't have chives, you can use green onion instead.
    If you don't make your own ranch seasoning, you can use the store-bought packet, just be sure to use a little less, since it's saltier.

      For those with an air fryer, ‘re-crisp’ the fritters by setting the air fryer to 350°F. Preheat a few minutes and add the fritters. Cook till just warmed through—about 3 to 4 minutes. Voila! Crisp again!
