Zucchini is one of those easy to grow summer crops that you’ll always find in abundance at farmer’s markets and grocery stores. And because it's one of the best low carb veggies you can have on Keto, I am always looking for tasty and healthy ways to incorporate it into my weekly meal planning.

- Zucchini
- Almond flour
- Mozzarella cheese
- Parmesan cheese
- Garlic
- Eggs

How to Make Zucchini Fritters
To Make the Dipping Sauce
Add all the sauce ingredients to a mixing bowl.
Whisk them together until well combined. Set aside at room temperature, so the flavors can meld while you prepare the zucchini.
To Make the Zucchini Fritters
Wash and grate the zucchini, then add to a colander over a large mixing bowl with the salt.
Allow to sit for 15 minutes, then using a cheesecloth or clean lint-free kitchen towel, squeeze out all the liquid. It’s important to get them as dry as possible.
Add in the eggs, almond flour, ranch seasoning, pepper, garlic, chives and cheeses.
Mix to combine, then form small patties a few inches in diameter. I used a heaping cookie scoop full, so they were uniform in size.
Heat a large nonstick skillet to medium and add in the olive oil and butter.
Fry the patties for about 5 minutes on each side, or until they are golden and cooked through.
Drain on paper towels, sprinkle with a little salt and serve with a dollop of the dipping sauce on the side. ENJOY!

Why are my Zucchini Fritters Falling Apart?
Fritters must have some type of ingredient that works to bind them together. For these gluten-free fritters, almond flour, egg and mozzarella cheese all work together to make sure they hold up during pan-frying.
Zucchini contains a lot of water. To keep your fritters from being soggy, it's really important to squeeze out as much moisture you can before mixing in the other ingredients.
How Do You Keep Fritters Crispy?
The issue with vegetable fritters, of any kind, is after they sit a while, the moisture in the vegetables causes them to become soft. They will still taste amazing, but they'll become less crispy the longer they sit.
If you want to try to crisp them up, you can add them back to the skillet with a little olive oil or avocado oil just for a few seconds.

For those with an air fryer, ‘re-crisp’ the fritters by setting the air fryer to 350°F. Preheat a few minutes and add the fritters. Cook till just warmed through—about 3 to 4 minutes. Voila! Crisp again!
