I’m usually not one to take big shortcuts with meals, I like making things as authentic and “from scratch” as I can. But sometimes when we’re short on time but want a healthy and hearty meal that tastes like you put a lot of effort into making it, recipes like this are the answer!

This quick and easy Keto Stroganoff uses roast beef, fresh mushrooms, sour cream and a few simple ingredients that you might have on hand.  And the best part? It can be made in 20 minutes, has great flavor and will satisfy even your picky eaters!

🔪 How to Make Keto Beef Stroganoff

Heat a skillet over medium and add in the butter and olive oil, then sauté the mushrooms and onions for a few minutes, until you have some good color. Then add in the salt and pepper.

All the brown bits on the bottom of the pan, that’s exactly what you want!  This is important, because it will give a lot of flavor to the sauce!

Add in the garlic for about 20 seconds, careful not to burn it.

Deglaze the pan with the white wine, scraping up the brown bits of flavor.

Add in the beef broth, roast beef and Worcestershire sauce.

Simmer for 5-7 minutes, then stir in the sour cream. Once it has melted, whisk in the xanthan gum and simmer for another 2 minutes or until thickened to your liking.

I only used 1/4 teaspoon of the xanthan gum and it was the perfect amount.

Serve over Palmini noodles, zucchini noodles, cauliflower rice, mashed cauliflower or shirataki noodles and enjoy!

🍴 What to Serve with Beef Stroganoff

This Keto beef stroganoff, when served over cauliflower rice or any type veggie noodles, is pretty much a complete meal. But if you’re wanting to stretch it out by serving a Keto side dish with this, here are some excellent options:

💡 Tips

  • Don’t rush sautéing the mushrooms and onions. The key is to cook them long enough so they are slightly caramelized. This helps to give them great flavor and make the gravy rich.
  • Slice the roast beef evenly, whether you prefer larger pieces of thin strips (as I have done), as long as they’re the same size, they will cook evenly.
  • Allow the wine to reduce slightly, this will help grab all that wonderful flavor from the skillet and adds it to your gravy.
  • Don’t salt the mushrooms too soon, otherwise they will give up their juices too early and prevent them from caramelizing properly.
  • Don’t add too much xanthan gum otherwise your gravy could get gummy and have a strange texture. Start with 1/4 teaspoon and allow it to simmer for a couple of minutes, you will likely find that is plenty.

🔄 Substitutions and Additions

  • If you prefer to use fresh beef, just be sure to use a lean cut and it’s thinly sliced. Otherwise it could be tough and chewy. This recipe uses roast beef to make this a quick and easy dinner.
  • If you prefer not to use white wine, you can use chicken or beef broth instead.
  • If you can’t find baby bella mushrooms in the store, you can use white mushrooms if you’d like. Several other varieties would also work as well.
  • You can use Greek yogurt instead of sour cream, if that’s what you have on hand or prefer. Mascarpone cheese also makes a great sub for sour cream and will also help thicken the gravy.
  • If you’d like to add in some fresh herbs, thyme and parsley would be perfect.
  • If you happen to have shallots on hand, you can use them instead of onions for a slightly milder flavor.

What Kind of Beef Do I Use in Keto Stroganoff?

This is a very versatile recipe in that you can use leftover Instant Pot Roast or you can use deli roast beef.

Make sure you read the label because you’ll want to avoid any brands that have dextrose or any type of sugar listed as an ingredient.

Can I Freeze Leftover Stroganoff?

You sure can! Easy Keto Beef Stroganoff is excellent for meal planning also! Make a batch or even a double batch, place in an air tight freezer safe container and freeze for up to a couple of months. Just thaw in the fridge and reheat stove top just until heated through. You can change up what you serve it over for a completely different flavor each time.

Ingredients
 

  • 1 pound rare/medium-rare roast beef, sliced into thin strips
  • 1 1/2 cups beef broth
  • 8 ounces baby bella mushrooms, sliced
  • 2/3 cup sour cream
  • 1/2 yellow onion, sliced thin
  • 1/3 cup white wine, I use Pinot Grigio
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire Sauce
  • 1/4-1/2 teaspoon Xanthan Gum
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
