Who doesn’t love chicken spinach artichoke dip!? It’s been one of my favorites for many years and was the inspiration for this casserole. I take my traditional recipe and add shredded chicken to it, along with some heavy cream.
I bake it in the oven with plenty of shredded mozzarella cheese on top and bake until it’s golden and bubbly! And I think we all know picking off that cheese is the best part, right!? Also be sure to try my classic cold Spinach Dip!

This is honestly one of my favorite Keto chicken casseroles now! It’s great for meal prepping because it freezes beautifully and makes 8 servings. The taste is so amazing, even your non-Keto family is sure to love it.
I made this super easy to put together using cooked chicken (you can use rotisserie), frozen spinach and artichokes in the jar. My Spinach Artichoke Chicken Casserole is a great Keto dinner made in 30 minutes!

🔪 How to Make Spinach Artichoke Chicken Casserole
Preheat oven to 375°F.

Add the cream cheese, sour cream, heavy cream, mayonnaise, garlic, salt and pepper to a large mixing bowl and mix until combined.

Then add in the rest of the ingredients, except for the mozzarella cheese.

Mix well, then pour into a 9″ x 13″ baking dish that has been sprayed with nonstick spray.

Top with the shredded mozzarella cheese and bake for 20 minutes.

Increase the temperature to 400°F and bake for another 5 minutes or until the cheese is slightly golden and bubbly. Allow to cool slightly before serving.

Store leftovers in the fridge for a few days or freeze.

Note: The artichoke hearts that I used were in a jar, plain, not marinated. You can use either canned or frozen (thawed), whichever is easier for you, just be sure to rinse them first.

Spinach Artichoke Chicken Casserole (Keto)

Ingredients
- 4 cups cooked chicken, shredded/chopped
- 9 ounce package frozen spinach, thawed and well drained
- 14 ounces artichoke hearts (plain), chopped
- 8 ounces cream cheese, at room temperature
- 1 cup parmesan cheese, grated
- 1 1/2 cups shredded mozzarella cheese
- 2/3 cup sour cream
- 1/2 cup heavy cream
- 1/4 cup mayonnaise, see my recipe
- 3 cloves garlic, minced
- salt and pepper to taste

This came out really soupy for me… I’m not sure why! I did use half and half instead of heavy cream (didn’t have any). Otherwise it was really tasty! I’d like to make again but maybe omit some of the liquid?
Sounds like it could be the half and half that did it. I’ve made this several times and never had it turn out soupy. I’d use the heavy cream next time you make it 🙂
Sooo good! I roasted my chicken breasts In the oven with a little butter and Zaratains Blacken seasoning. I then added a couple shakes to the dish with 1 bunch of very thin fresh asparagus broken into 2” pieces. I also didn’t have any mozzarella, so I topped it with Gruyere cheese instead!! Also, my artichokes were marinated and my spinach was fresh but this didn’t effect the amazing flavor this dish has! We were licking our bowls 👅 ❤️

Just made this and it was a big hit! Thank you!! I’m a slacker who used canned chicken (4 cans which was a little over 4 cups but worked ok.) For anyone who wants to try it with canned chicken make sure to briefly rinse it so it doesn’t taste too salty. I also cut the artichoke hearts into smaller pieces and cooked it 5 mins longer before I turned it up to melt the cheese. (My oven temp is probably off.) Definitely a keeper. Thanks again!

Can I freeze this before I bake it? Chuck all the ingredients (including the cooked chicken) in a bag so it doesn’t take up too much room in my freezer?
I don’t see why that wouldn’t work, but since I’ve never tried it, I can’t say for sure how it might turn out.
Would I be able to use a mix of mozzarella and cheddar cheese for the top? I don’t have enough mozzarella and I really don’t want to the grocery store just for cheese.
Sure, it would change the flavor slightly, because cheddar is stronger.
I doubled the recipe. Second time making first time doubling. Oddly doubling I think needed more mayo and sour cream. But still absolutely my hubby and my favorite chicken casseroles and have leftovers for both of us all week.

This is a keeper. Made it last night and my husband must of said at least 3 times how delicious it was. I admit it was a bit of work by the time I cooked the chicken from scratch, but well worth it.

I made this the other day and it was amazing the only thing I had a hard time with was trying to figure out the individual serving size can you tell me what you based everything on.
If you take the casserole and cut it into 8 servings, each will make up one serving. There is no other way really, I didn’t see the need to measure each slice by the cup.
I will be making this a soon as I get to the store. Can’t wait.

I’ve used fresh spinach, I just chopped it up before using it. It added a little bit of moisture which absorbed back into everything after the first day. I’ve also made it with shrimp. Make sure they’re clean and thawed, otherwise you get soup. Today i’m going to try making it a saucier and serve it over spaghetti squash.

I would say maybe 3 days, but I’m extra careful when it comes to chicken. It freezes/thaws really well, so I’d freeze anything you won’t be eating in 3 days.

You can use fresh, but I’d sauté it first, before adding it to the casserole.

Hello! Most on Keto aren’t overly concerned with calories, but if you are, it only has 493 calories for each serving. There are 8 servings in the casserole. It’s pretty filling, so I like to have a light salad with it. I hope that helps!

Hi, This looks so good, but I cannot do heavy cream or even whole milk. What can I sub in its place….regular milk?
I wouldn’t use whole milk, it’s too high in carbs, but you can use sour cream and add a tiny bit of water to loosen it up. I hope that helps!

Hmm, I’m honestly not sure I’d make it in a crockpot. It really needs to bake in an oven, so the cheese can melt and become golden.

I made this recipe twice and LOVE IT! I actually made it in a large skillet and didn’t bake it. I left out the mayo….I’m just not a fan. It turned out perfect. I just didn’t brown the mozzarella melts, because I put the lid on the skillet for the last few minutes. Love it! One of my favs!!

Looks awesome! I make spin/art dip every Christmas, very similar to your recipe…I use Monterey Jack instead of the mozz, and I add some freshly grated nutmeg (like you’d find in Alfredo sauce) and a little fresh lemon juice. I am going to make this.

Sure you can, and you don’t need to reduce the baking time by much. Since all the ingredients are cooked, you’re just looking to heat everything through and melt the cheese. I’d bake it for about 15 minutes or until the cheese is melted and golden. I hope that helps!
