- Perfect for meal prepping

Who doesn't love chicken spinach artichoke dip!? It's been one of my favorites for many years and was the inspiration for this casserole. I take my traditional recipe and add shredded chicken to it, along with some heavy cream.
I bake it in the oven with plenty of shredded mozzarella cheese on top and bake until it's golden and bubbly! And I think we all know picking off that cheese is the best part, right!?
This is honestly one of my favorite Keto chicken casseroles now! It's great for meal prepping because it freezes beautifully and makes 8 servings. The taste is so amazing, even your non-Keto family is sure to love it.
I made this super easy to put together using cooked chicken (you can use rotisserie), frozen spinach and artichokes in the jar. My Spinach Artichoke Chicken Casserole is a great Keto dinner made in 30 minutes!

Preheat oven to 375°F.
Add the cream cheese, sour cream, heavy cream, mayonnaise, garlic, salt and pepper to a large mixing bowl and mix until combined.
Then add in the rest of the ingredients, except for the mozzarella cheese.
Mix well, then pour into a 9" x 13" baking dish that has been sprayed with nonstick spray.
Top with the shredded mozzarella cheese and bake for 20 minutes.
Increase the temperature to 400°F and bake for another 5 minutes or until the cheese is slightly golden and bubbly. Allow to cool slightly before serving.

Note: The artichoke hearts that I used were in a jar, plain, not marinated. You can use either canned or frozen (thawed), whichever is easier for you, just be sure to rinse them first.

This came out really soupy for me... I’m not sure why! I did use half and half instead of heavy cream (didn’t have any). Otherwise it was really tasty! I’d like to make again but maybe omit some of the liquid?
Keto Cooking Christian
Sounds like it could be the half and half that did it. I've made this several times and never had it turn out soupy. I'd use the heavy cream next time you make it 🙂
Ashley
Sooo good! I roasted my chicken breasts In the oven with a little butter and Zaratains Blacken seasoning. I then added a couple shakes to the dish with 1 bunch of very thin fresh asparagus broken into 2” pieces. I also didn’t have any mozzarella, so I topped it with Gruyere cheese instead!! Also, my artichokes were marinated and my spinach was fresh but this didn’t effect the amazing flavor this dish has! We were licking our bowls 👅 ❤️
Keto Cooking Christian
Wow, such creative changes. Thanks for sharing and I'm glad you liked it!
Linsey
Any idea of the sodium content per serving?

This recipe is so fire!!!
Keto Cooking Christian
Thanks!

Just made this and it was a big hit! Thank you!! I’m a slacker who used canned chicken (4 cans which was a little over 4 cups but worked ok.) For anyone who wants to try it with canned chicken make sure to briefly rinse it so it doesn’t taste too salty. I also cut the artichoke hearts into smaller pieces and cooked it 5 mins longer before I turned it up to melt the cheese. (My oven temp is probably off.) Definitely a keeper. Thanks again!
Victoria
Thank You for the scripture! God is so good! I'm in the process of cooking my chicken now...I think I'm going to try to add a few fresh tomatoes from my garden...I'll let you know...I love everything in this dish...can't wait!!! thank you again!
Keto Cooking Christian
Absolutely He is and you are most welcome! I hope you enjoy it 🙂
Audrey
Can I freeze this before I bake it? Chuck all the ingredients (including the cooked chicken) in a bag so it doesn't take up too much room in my freezer?
Keto Cooking Christian
I don't see why that wouldn't work, but since I've never tried it, I can't say for sure how it might turn out.
Miskustru
Would I be able to use a mix of mozzarella and cheddar cheese for the top? I don’t have enough mozzarella and I really don’t want to the grocery store just for cheese.
Keto Cooking Christian
Sure, it would change the flavor slightly, because cheddar is stronger.
Andrea
I doubled the recipe. Second time making first time doubling. Oddly doubling I think needed more mayo and sour cream. But still absolutely my hubby and my favorite chicken casseroles and have leftovers for both of us all week.
Keto Cooking Christian
Happy to hear you both enjoyed it!
Katie
Do you cover and then bake or leave it uncovered?
Keto Cooking Christian
You'll want to bake it uncovered.
Belen Uribe
This is a keeper. Made it last night and my husband must of said at least 3 times how delicious it was. I admit it was a bit of work by the time I cooked the chicken from scratch, but well worth it.
Thank you for sharing this recipe.
Keto Cooking Christian
Glad you both enjoyed it! To save some time, you can use rotisserie chicken next time 🙂
Belen Uribe
Yes, I'll definitely use rotisserie chicken the next time. Actually I have a rotisserie chicken in the freezer right now, waiting for the other ingredients!
Keto Cooking Christian
It makes it quick and easy for sure!
Andrea
I made this tonight. Added siracha sauce and boiled 4 chicken breast vs rotisserie chicken. It was a hit.
Keto Cooking Christian
Sounds like a great touch!

I can’t find a contact tab so I’ll ask here...I ordered and paid for the 5 ebook bundle (which looks amazing btw) but when it came to the download page I was only able to download one then it brought me back to the page I bought it from. I’m not sure where it was downloaded to either. Can you help?
This recipe looks amazing too!

I made this the other day and it was amazing the only thing I had a hard time with was trying to figure out the individual serving size can you tell me what you based everything on.
Keto Cooking Christian
If you take the casserole and cut it into 8 servings, each will make up one serving. There is no other way really, I didn't see the need to measure each slice by the cup.
Sue
I will be making this a soon as I get to the store. Can't wait.
Keto Cooking Christian
Awesome, hope you enjoy it!
Laura Atkinson
I've used fresh spinach, I just chopped it up before using it. It added a little bit of moisture which absorbed back into everything after the first day. I've also made it with shrimp. Make sure they're clean and thawed, otherwise you get soup. Today i'm going to try making it a saucier and serve it over spaghetti squash.
Lisa Mendes
This was amazing!!! I’ll bet shrimp would be great in it too... what do you think?
Keto Cooking Christian
Awesome, glad you liked it! Not sure about the shrimp, they might get overcooked. But you can certainly give it a try!
Janet Warner
Yum!. Perfect Covid recipe. I added a small can of chopped green chilies cause I live in New Mexico. We shared with our neighbors. We leave each other meals/ treats outside each other’s houses.
Keto Cooking Christian
How nice! Glad you all enjoyed it!
Ashley
Hi! How many days would you say this dish would last in the fridge?
Keto Cooking Christian
I would say maybe 3 days, but I'm extra careful when it comes to chicken. It freezes/thaws really well, so I'd freeze anything you won't be eating in 3 days.
Alisha
Hi! Do you have to use frozen spinach or can it be fresh?
Keto Cooking Christian
You can use fresh, but I'd sauté it first, before adding it to the casserole.
Chris Cavin
Me & My wife loved it, Great leftovers for work.
Keto Cooking Christian
Oh that's wonderful, glad you both loved it!
Kel
Looks delicious! If I use fresh spinach do I need to sauté it first or just chop and add to the recipe?
Keto Cooking Christian
Yes, I would recommend you sauté it first, then add it to the casserole and bake.
Nikki
This is delicious! My favorite keto recipe so far!!
Keto Cooking Christian
Awesome, thanks for stopping by to let me know!
Jen
Can I freeze it and then bake?
Keto Cooking Christian
Yes, you sure can!
Monica
Made this tonight and had my mom and sister over who are not on keto and lets just say everyone LOVED it! Thank you for sharing this with us!
Keto Cooking Christian
That's wonderful to hear!!
Isabela
I made it last night and it was phenomenal delicious! Thank you.
Now, any special directions for frozen and heating?
Keto Cooking Christian
Glad to hear you liked it! No special instructions, you can freeze in an airtight container and either reheat in the microwave or in the oven as you would any other casserole 🙂
Katie
Hey there! Looks delicious! I’m going to make it tonight! I’m a little concerned about calories though... how much is considered 1 serving?
Keto Cooking Christian
Hello! Most on Keto aren't overly concerned with calories, but if you are, it only has 493 calories for each serving. There are 8 servings in the casserole. It's pretty filling, so I like to have a light salad with it. I hope that helps!
Karan
I just made this, it’s so delicious! I doubled the spinach, added sautéed onion and more garlic. I also added lemon zest and chili flakes. I’m totally going to make this again . Thank you!
Keto Cooking Christian
Wonderful, glad you enjoyed it and thanks for sharing your additions!
J Castillo
Thanks for the recipe. Will try this soon. Still on the program. Lost 70 pounds so far. Sounds like a 5 star.
Keto Cooking Christian
Thanks so much, hope you enjoy it! Congrats on the 70 pounds, that's amazing!
Cassandra
Hi, This looks so good, but I cannot do heavy cream or even whole milk. What can I sub in its place....regular milk?
Keto Cooking Christian
I wouldn't use whole milk, it's too high in carbs, but you can use sour cream and add a tiny bit of water to loosen it up. I hope that helps!
Julie
So I absolutely despise mayo do u think this will taste good if I just skip or use something in place of it?? I hope so bc this sounds good!!
Keto Cooking Christian
Sure, you can just sub with more sour cream if you'd like!
Rhiannon
Looks so delicious! How would you make adjustments if made in the crock pot?
Keto Cooking Christian
Hmm, I'm honestly not sure I'd make it in a crockpot. It really needs to bake in an oven, so the cheese can melt and become golden.
Amy Johnson
This looks delicious! TFS!
Karen
Fantastic recipe! Not rich like we were afraid of and I halved it since there’s just two of us. Was perfect!!!!
Keto Cooking Christian
Awesome, glad to hear you liked it!
Debbie
Loved this dish! Made tonight for dinner tonight, honestly thought it was going to be too rich by looking at all the ingredients. Pleasantly surprised with how delicious it was. Huge kudos around the table. Thank you
Keto Cooking Christian
That's wonderful to hear, thanks so much for letting me know everyone enjoyed it!
Nancy Markle
I made this recipe twice and LOVE IT! I actually made it in a large skillet and didn’t bake it. I left out the mayo....I’m just not a fan. It turned out perfect. I just didn’t brown the mozzarella melts, because I put the lid on the skillet for the last few minutes. Love it! One of my favs!!
I used fresh spinach! What a great recipe!!!!
Love getting scripture! My ALL TIME FAV!!!! Love the Lord and the WORD!!
Keto Cooking Christian
Hi Nancy,
So nice to hear and it's one of my favorite easy breakfast meals too! I'm glad you like the scripture as well, I appreciate you stopping by to let me know 😀
Mary
What amount of fresh spinach would you use??
Keto Cooking Christian
Hi Mary,
I would say about 15 ounces or so should be plenty.
Mary
If you use fresh spinach, what amount do you use?
Megan
Awesome!!!
Jane
This might be my favorite low carb casserole! I’ve made it a few times and add extra artichokes and diced water chestnuts. I like to use fresh, cooked spinach, too.
Keto Cooking Christian
Hi Jane,
The water chestnuts are a great idea for adding more texture! Glad you like the casserole, it's one of my favs too 🙂
HEIDI B MCCULLOUGH
Looks awesome! I make spin/art dip every Christmas, very similar to your recipe...I use Monterey Jack instead of the mozz, and I add some freshly grated nutmeg (like you'd find in Alfredo sauce) and a little fresh lemon juice. I am going to make this.
Keto Cooking Christian
Sounds great! I love a little nutmeg in my cream sauces 🙂
Barbara Hamilton
This is heavenly!! A big hit with the family. Thank you for the recipe!
Keto Cooking Christian
Hi Barbara,
So glad to hear you and your family enjoyed it! Thanks for stopping by to let me know 🙂
Jen
Can I cut this recipe in half? Same cooking time?
Keto Cooking Christian
Hi Jen,
Sure you can, and you don't need to reduce the baking time by much. Since all the ingredients are cooked, you're just looking to heat everything through and melt the cheese. I'd bake it for about 15 minutes or until the cheese is melted and golden. I hope that helps!
Jack Knowlton
Thank you!
Jack Knowlton
What is the best way to cook the chicken for this dish?
Keto Cooking Christian
Hi Jack,
You can either use rotisserie chicken, poach or roast it. Whichever you prefer would work just fine.
Tari
Wow sounds awesome do you think I could use fresh chopped spinach vs frozen?
Keto Cooking Christian
Hi Tari,
I haven't tried it using fresh spinach, but I'm sure you could.
Sharon Gregg
I love all your casseroles so far they are so easy to make and dont require strange ingredients
Keto Cooking Christian
Thanks Sharon, I'm glad you like them 🙂
Rod Wal
This casserole is delicious! The artichoke hearts really compliment the chicken and spinach so that this savory meal is as yummy as it is healthy. Highly recommended, and my compliments to the Chef!
Keto Cooking Christian
Hi Rod,
Thanks so much, glad you enjoyed it!
Patty
Is the parmesan cheese fresh parmesan grated, or the kind already grated for Spaghetti?
Keto Cooking Christian
Hi Patty,
Yes, I grated it fresh, but you can use whichever parmesan you like.
Cassie
Amazing recipe! I can't wait to make this!
Keto Cooking Christian
Hi Cassie,
Thanks so much and I hope you enjoy it!
