How to Make Blackberry Gluten Free Coffee Cake
To Make the Gluten Free Cake
Preheat oven to 325F. Add the almond flour, oat fiber, cinnamon, baking powder and salt to a mixing bowl and whisk to combine.
In a separate bowl, mix together the eggs, sour cream, heavy cream, Swerve and vanilla.
Add in the dry ingredients and mix just until combined.
Pour all the batter into a 8″x 8″ baking dish lined with parchment paper (for easy removal) baking dish and spread out evenly.
Dollop the blackberry jam over the top of the batter, then swirl it into the batter using a knife. Set aside while you make the sugar free crumble topping.
To Make the Gluten Free Crumb Topping
Add almond flour, cinnamon, nutmeg and Swerve into a mixing bowl and whisk.
Pour the melted butter over the top and mix until well combined.
Sprinkle the crumb topping over the batter.
Gently press the crumbs into the batter slightly. This will help the topping stick to the coffee cake and not fall off when you cut into it.
Bake for 45-50 minutes or a toothpick, when inserted, comes out clean and the crumb topping is golden. Mine took exactly 50 minutes.
Store leftovers in an airtight container in the fridge for 5-7 days.
Can I Freeze Blueberry Coffee Cake?
You sure can! This makes an amazing make ahead dessert. You can slice the coffee cake into squares, double wrap in plastic wrap and store in an airtight container in the freezer for up to several months.

Tips For Making the Best Keto Coffee Cake
This Blackberry Coffee Cake is so easy to make and taste just like traditional coffee cake. Here are a few tried and true tips to ensure your coffee cake turns out perfect every time:
How to Get Perfect Keto Coffee Cake Texture
By using a mix of both almond flour and oat fiber you'll get that authentic coffee cake texture that you’re looking for. Super fine almond flour works best in most any low carb or gluten-free desserts as a substitute for traditional flour and when mix with a little oat fiber, you just can't beat it.
What's the Best Sweetener for Gluten Free Coffee Cake?
Swerve Confectioners is used in this recipe. It dissolves well in the batter and it taste a lot like regular sugar without having a funny aftertaste like a lot of artificial sweeteners. You can also use Allulose, Powdered, if that's what you have on hand.
What Makes the Best Gluten Free Crumb Topping?
The best brown sugar substitute I've found is Swerve Brown. It tastes and bakes just like brown sugar and makes the BEST sugar free crumb topping!
If you're eating this coffee cake like a dessert, you can add homemade whipped cream and a few fresh blackberries right on top for a little added decadence.
What is Oat Fiber? Is Oat Fiber Keto?
Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. It helps give a more traditional texture and that's why I use it so often. Check out all the Keto Oat Fiber Recipes you can make!
What is a Substitute for Oat Fiber?
To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.

Delicious!

Thank you so much!

Could you use your blueberry sauce recipe in this instead of blackberries?
Keto Cooking Christian
It might work, but you may need to add a little xanthan gum to the sauce, just to thicken it up a bit before adding it. Maybe 1/2 teaspoon or so.
Jane
I would like to know at what temperature the raspberry jam should when you add to the batter.
Keto Cooking Christian
The blackberry jam should be at room temperature.
Jane
Should you have made the jam ahead and add it cold from frig or make it just before the cake recipe and add it warm?
