Keto Strawberry Granola Parfaits are one of those recipes that feels way fancier than it is. Every bite gives you a little sweetness, a little crunch, and a whole lot of yum.
This is one of my favorite ways to use up extra keto strawberry sauce or turn plain yogurt into something way more exciting. 🥣 Recommended Tools
- Small jar or bowl
🔪 How to Make Keto Strawberry Parfaits
Prepare the strawberry sauce, per the recipe instructions, then set aside to cool.
Add some of the granola to the bottom of a small jar.
Add in the vanilla extract to the Greek yogurt, mix to combine, then add some over the granola.
Spoon some of the strawberry sauce over the yogurt.
Repeat the layers once more, then top with a little more granola and serve.
☑️ Storage Instructions
Store parfaits in airtight jars for up to 2 days. Add top granola layer right before serving.
I do not recommend freezing the assembled parfaits. However, the strawberry sauce freezes well for up to 2 months.
💡 Tips
- Let the strawberry sauce cool completely before layering so it doesn’t melt the yogurt.
- Use a clear glass or mason jar so you can see those pretty layers. It really makes a difference.
- Use full-fat plain Greek yogurt for the best creamy texture and richer protein.
- Make sure your granola is fully cooled if you’re using homemade, so it stays crunchy.
- If packing ahead, keep the top layer of granola separate until ready to eat.
🔄 Substitutions and Additions
- Berries: Swap in raspberries or blackberries for a fresh twist on the berry parfait.
- Extra nuts: Add a handful of chopped nuts between layers for extra crunch and healthy fat.
- Yogurt: Use a flavored Greek yogurt (like vanilla or coconut) to change up the vibe.
- Extra protein: For a protein boost, stir in a scoop of your favorite low carb protein powder to the yogurt.
- Chia seeds: Try layering with Keto Strawberry Chia Seed Jam instead of strawberry sauce for a keto breakfast switch-up.
- Nut butter: Add a drizzle of keto-friendly peanut butter or almond butter for a creamy, nutty layer.
- Chocolate: Top it off with a few shavings of sugar-free dark chocolate for dessert vibes.
- Short cuts: If you’re short on time, use a store-bought keto granola and keto strawberry jam.
Is Yogurt Keto?
Plain, unsweetened Greek yogurt can fit into a keto lifestyle because it’s lower in carbs and higher in protein. Just check the label because some brands sneak in extra sugar.
Can I Use a Different Kind of Fruit for the Sauce?
Totally. Raspberries, blueberries, or even a mix of berries all work well and keep the carb count low.
Can I Make This Dairy-free?
You can! Swap the Greek yogurt for a dairy-free, unsweetened coconut or almond-based yogurt. Just check the carb content.
Why is My Parfait Watery After Sitting in the Fridge?
That’s usually from fruit juice or yogurt separating. Stir the yogurt first and make sure your sauce is cooled before layering.
