    Homemade strawberry shortcake is such a great summer time dessert! And with a few substitutions it gets a sweet and delicious low carb makeover!

    One of the great things about this Keto Shortcake recipe is it's an actual full size cake recipe that will feed everyone in the family, and then some!

    And it makes such a gorgeous presentation with the ruby-red strawberries peaking out from the middle and crowning the top!

    What's in Keto Strawberry Shortcake

    • Strawberries
    • Super fine almond flour
    • Monk fruit/allulose granular
    • Sour cream
    • Butter
    • Oat fiber
    • Eggs
    • Baking powder
    • Lemon juice
    • Heavy cream
    • Mascarpone cheese
    • Monk fruit/allulose confectioners
    • Vanilla extract
    • Salt

    How to Make Keto Strawberry Shortcake

    To Make the Shortcake

    Preheat oven to 350°F.

     Add the almond flour, oat fiber, baking powder and salt to a mixing bowl and whisk to combine.

    In a separate bowl, add in the sour cream, sweetener, butter, egg yolks, lemon juice and vanilla. Mix until combined, then set aside.

    In another bowl, add in the egg whites and whip to stiff peaks using a hand mixer.

    Mix into the wet ingredients, then add in the dry ingredients.

    Mix just until combined, then pour into two 9" nonstick cake pans sprayed with nonstick spray and lined with parchment rounds. Smooth the tops level using an offset spatula.

    If you'd like to be absolutely sure that you have an even amount of batter in both pans, you can weigh them using a food scale, which is what I like to do.

    Bake for 15-18 minutes or until a toothpick, when inserted comes out clean. Allow to cool completely before frosting.

    To Make the Whipped Topping and Filling

    Add the heavy cream into a large mixing bowl and mix using a hand mixer until soft peaks are formed.

    Add in the mascarone in small dollops, monk fruit/allulose and vanilla extract and continue mixing until well combined and thickened. Chill in the fridge until you the cakes have cooled.

    To Assemble the Cake

    Take one of the cakes and place it on a cake stand or plate. Add half of the whipped topping over the top and spread evenly using an offset spatula.

    Add half of the strawberries on top, then repeat with the second layer.

    You can add the strawberries on the top layer in a decorative pattern, just to make it look extra special.

    Are Strawberries Keto? What are the Carbs in Strawberries?

    One cup of strawberries contains 12 total carbs with 3 grams of fiber resulting in 9 grams of net carbs. Strawberries have a low glycemic index making them an acceptable option for Keto and low carb diets.

    How to Store Strawberry Keto Shortcake

    You can store the shortcakes in the freezer if you need to make this cake in advance. Just allow them to cool and wrap them really well in plastic wrap. They will keep in the freezer for up to a couple of months.

    If making it fresh, once you have decorated the cake with whipped topping, it should be kept in the fridge to ensure the whipped cream stays fresh.

    What Sweetener is Best for Keto Strawberry Shortcake?

    For the whipped topping, you'll want to use a sugar substitute that is powdered. That ensures you get a smooth and creamy topping.

    More Tips for Gluten Free Strawberry Shortcake

    • Allow to cool completely: Cakes made with almond flour are more delicate due to the absence of gluten. To ensure your cakes stay together, it's really important to allow them to cool completely before moving them around.
    • Can I Make Smaller Portions? Absolutely. If you are just really wanting the smaller traditional sized shortcake this Keto strawberry cake is perfectly adaptable. Use smaller, ramekins, sprayed with non-stick spray, and bake at the same temp. The cooking time will be reduced so keep a close eye on them after about 12-15 minutes.
    • What Can I do if the Cake Crumbles? Did you forget and leave the cake in the oven a little too long? No worries. Just take the cakes and break them into pieces and serve them layered with the whip cream in a trifle bowl.
    • Can I Use Frozen Strawberries? The easy answer is yes. But, keep in mind there is a lot more moisture in frozen strawberries. This could make the cake a little soggy, but it will still be delicious.

    Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet.     What is a Substitute for Oat Fiber?

    To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.

    Ingredients
     

    • 1 ½ cups of sliced strawberries

    For the Shortcake

    • 2 cups super fine almond flour
    • 1 cup monk fruit/allulose granular
    • ⅔ cup sour cream
    • ½ cup butter, room temperature
    • ⅓ cup oat fiber, see notes
    • 4 whole eggs, separated
    • 1 ½ tablespoons baking powder
    • 1 teaspoon vanilla extract
    • 1 ½ teaspoons lemon juice
    • ¼ teaspoon fine sea salt

    For the Whipped Topping and Filling

    • 2 cups heavy cream, cold
    • 4 ounce mascarpone cheese, or cream cheese
    • ½ cup monk fruit/allulose confectioners
    • ½ teaspoon vanilla extract

    Instructions
     

    To Make the Shortcake

      This is the best strawberry shortcake I have ever eaten! it has been a big hit with friends and family, not just once but 3 times I've made it. No one can guess it was gluten free or sugar free and, it's now my go to dessert for guest. Thanks for sharing it.

      Unfortunately, I am not able to find oat fiber. Could you please tell me which quantities of psyllium husk powder and coconut flour should I use to replace it?

        Thank you so much! I would just use a little extra almond flour in place of the oat fiber. I have not used psyllium husk as a replacement, so I am not sure about the quantities.
