🔪 How to Make No-Bake Keto Cookies

Add the butter and almond butter into a microwave safe bowl and melt in the microwave for about 15 seconds.

Add in the sweetener and cocoa powder.

Whisk until well combined.

Add in the shredded coconut, chopped pecans and seeds.  You can use all sunflower or pumpkin, or what I did was use half and half.

Mix with a silicone spatula until everything is combined.  The mixture will seem too loose to stay together, but once it sets up, it stays together perfectly!

Using a cookie scoop (1 1/2 tablespoons) scoop onto the parchment paper in small mounds.

Gently press down to flatten them a bit, resembling a cookie shape. Chill them in the fridge for at least 2 hours or until they have firmed up.

Fridge: Place the cookies in an airtight container and store them in the refrigerator for up to 7 days.

Freezer: For longer storage, freeze them on a tray first, then transfer to a freezer-safe container or bag. They’ll last up to 3 months.

Why Won’t My Cookies Stick Together?

Make sure the cookie mixture is thoroughly combined, and give the cookies enough time to chill. This should do the trick.

Can I Use Crunchy Peanut Butter Instead of Almond Butter?

Yes, but it will change the texture slightly and add extra crunch.

Can I Make These Cookies Nut Free?

Sure. Just swap the almond butter for sunflower seed butter and leave out the pecans.

Can I Use Coconut Flour Instead of Shredded Coconut?

No. Raw shredded coconut does not have to be cooked and it adds texture. Coconut flour will not work well as a substitute.

    I made these last week and I am still enjoying them. Mine set up perfectly. For the first time, I followed the recipe exactly as written. I miss oats a lot, but they send my glucose sky-high. These mimic the no-bake chocolate/oats cookie to my satisfaction. I may add hemp seeds to the next batch. Thank you for the recipe. My only criticism (as with all recipes) is how unrealistic is the prep time given in the recipe. I always have to at least quadruple the time.

    I love no bake cookies which a friend made with the processed sugars etc. But since being diagnosed with T1D 4 yrs ago I tried to adapt the recipe with my monk fruit/allulose which was good but had to be frozen or they would melt. I am not a baker so didn’t know how to make recipe different. I saw your recipe and these are delicious. I have tried several of your recipes and love them all. Thank you.
