    Wash and dry your assortment of fresh berries.

    Add all the dressing ingredients to a dressing shaker or mixing bowl.

    Shake or whisk until well combined and emulsified, then set aside while you prepare the salad.

    Add the mixed greens to a large serving bowl.

    💡 Tips for Making Summer Salad

    • Only wash berries right before you use them to prevent them from absorbing excess moisture and becoming soft. Rinse gently under cold water and pat dry with paper towels.
    • As mentioned before, wait to add the dressing right before you serve it. This gives you the best and most crisp results.
    • If you end up with a bitter red onion, soak the slices in cold water for about 10 minutes. This helps to give them a milder flavor. Drain and dry well before adding them.
    • After washing the raspberries, give them a little shake. The hole will trap water which can result if a soggy salad.

    🔄 Substitutions and Additions

    • Nuts: Swap the almonds for pecans or macadamia nuts for a different crunch.
    • Cheese: If you're not a fan of goat cheese, try feta or blue cheese, which are also keto-friendly.

    Ingredients
     

    For the Salad

    • 5 ounces spring greens mix
    • 1 cup fresh strawberries
    • ⅔ cup fresh raspberries
    • ½ cup fresh blueberries
    • ½ cup sliced almonds, toasted
    • ⅓ cup goat cheese, crumbled
    • ⅓ cup red onions, sliced thin
    • ¼ cup fresh mint, chopped

    For the Dressing

    • ⅓ cup olive oil
    • ¼ cup fresh lime juice
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon sugar-free honey
    • 1 teaspoon dijon mustard
    • 1 clove garlic, grated
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    • Wash and dry your assortment of fresh berries. Slice the strawberries and set them aside.
    • Add all the dressing ingredients into a dressing shaker or mixing bowl.
