Coconut Lime Keto Fat Bombs

I use coconut cream, mascarpone cheese and shredded coconut in these fat bombs, along with a punch of flavor from fresh lime!

These Keto treats freeze in this non-stick mini tart pan, which I just love!  Or you can use any silicone fat bomb mold that you have.

Coconut and lime are two flavors that go so well together!  These Keto fat bombs are super easy to make and they taste absolutely delicious!  They double as a sweet treat and they only have 1 carb each!

How to Make Keto Coconut Lime Fat Bombs

The night before you make these low carb coconut fat bombs, refrigerate a can of full fat unsweetened coconut milk so the cream can separate from the water and solidify.  The cream at the top is what you want. It should be thick and creamy. Once the cream has separated, measure out 1/2 cup of just the cream and save the rest for another recipe.

Add all of the ingredients to a mixing bowl and whisk until well combined.

Spoon into a mini tart pan (or other fat bomb mold), that’s been sprayed with coconut oil.  

Top each one with a little extra unsweetened shredded coconut and lime zest.

Place them in the freezer for 30 minutes or until fully set.  

You will want to keep these fat bombs chilled. They’ll be a little soft in the fridge, so you may prefer to store them in the freezer until you want one, then just pop it in the fridge and allow to thaw for a few minutes.

One of the things that makes these Keto fat bombs incredibly rich and smooth is Mascarpone cheese which is made from heavy cream instead of whole milk like that in cream cheese. The extra fat from the heavy cream is what gives Mascarpone a slightly sweeter, more buttery flavor.

Mascarpone cheese has a 50% fat content, which really helps boost your healthy fat intake!

How Many Carbs in Coconut?

Another key ingredient in these Keto fats bombs is unsweetened coconut flakes. The great news is there is only 1 carb per tablespoon of unsweetened coconut.

Is Coconut Keto Friendly?

Yes! Unlike many other fruits that are high in carbs, coconuts are mostly fiber and fat. Even better, the fat found in coconuts is MCT (medium-chain-triglycerides), which promotes a feeling of fullness and has been linked to other healthy benefits. Why Eat Keto Fat Bombs?

A Ketogenic Diet consists of a high amount of fat, moderate protein and low carbs, so the bulk of our calories come from healthy fats.  If we don’t consume enough healthy fat, we run the risk of following a high protein diet which is not Keto.  

Some people struggle with this concept, since we’re been told for many years that fat is bad and we should eat low/no fat.  Nothing could be further from the truth!

  • Add all of the ingredients to a mixing bowl and mix until well combined. Spoon into a mini tart pan (or other fat bomb mold), that's been sprayed with coconut oil.  Top with some shredded coconut and lime zest. Freeze for 30 minutes or until fully set.
  • Store leftovers in the fridge for a few days or freeze.

  2. Hi Julianne, do I use coconut cream or coconut milk, you mention coconut cream in the ingredients & coconut milk in the preparation, unsure which one to use. Thank you ☺ (not sure if I have posted this twice)

    1. Hi Tracey, You would buy unsweetened coconut milk and refrigerate it, so that the cream rises to the top and solidifies. Then you scoop out the solids and use that in the recipe. Sorry for any confusion and I hope it makes more sense now!
