🔪 How to Make Keto French Toast
Prepare the Keto Brioche Bread according to the directions in the recipe. Once the bread has cooled completely, slice into thick pieces and set 8 of them aside to use in this recipe.
In a large shallow bowl, add in the eggs, heavy cream, orange zest, vanilla extract, cinnamon and nutmeg, then whisk to combine.
Dip a piece of the bread into the mixture, making sure all sides are well coated in it.
Heat a large skillet to medium low and add in some butter and a little avocado oil. The butter adds flavor, while the avocado oil prevents it from burning.
Fry each piece for a few minutes on each side, making sure to cook them on the low/slow side so they don’t brown too much. It will brown a little from the cinnamon and nutmeg, which is perfectly fine.
Repeat the process for the remaining slices and serve with your choice of toppings: powdered sweetener, whip cream, fresh berries, and/or SF maple syrup.
☑️ Storage Instructions
Fridge: Store leftovers in an airtight container for up to 3 days. You can reheat the slices in a skillet or toaster oven to bring back the crisp edges.
Freezer: Freeze slices in a single layer, then stack with parchment between each. You can reheat them straight from frozen in a skillet or oven.
🍴 What to Serve with Sugar-Free French Toast
Breakfast Casserole: Hearty and packed with protein, this is a great make-ahead option that balances the sweetness of the French toast.
Keto Eggs Benedict: A classic brunch dish with creamy hollandaise and poached eggs that adds richness without competing with sweetness.
Jalapeno Popper Egg Cups: Simple, satisfying, and full of flavor. These can be made ahead and warmed up for a fuss-free breakfast plate.
Easy Caprese Frittata: Fresh and flavorful with tomato, basil, and mozzarella—this one adds color and lightness to the meal.
Keto Candied Bacon, or sausage: A simple protein like bacon or sausage is a perfect savory side.
💡 Tips
- If using frozen bread slices, let them thaw before dipping so they soak evenly.
- Gently press down lightly on the bread in the custard to make sure the middle gets coated without oversoaking.
- Keep the first batch warm in a low oven while finishing the rest.
- Avoid overcrowding the skillet so the slices cook evenly and stay crisp.
- If making a double batch, refresh your butter/oil mix halfway through.
🔄 Substitutions and Additions
- Extract: Instead of vanilla, use a dash of almond extract for a slightly nutty twist.
- Spices: Use ground cardamom instead of nutmeg for a unique spiced flavor.
- Powdered sweetener: Sprinkle a powdered monk fruit sweetener over the top for a classic look.
- Chocolate chips: Try sugar-free chocolate chips on top if you're in the mood for something extra.
- Toppings: Instead of traditional syrup, top them with a drizzle of this, Keto Strawberry Sauce, Blueberry Sauce or a spoonful of homemade Raspberry Jam.
Can I Prep French Toast Ahead of Time?
You can whisk the custard and store it in the fridge, but wait to dip and cook until ready to serve.
How Do I Stop the Bread from Falling Apart?
Just make sure you use cooled brioche and dip quickly so it absorbs without getting mushy.
Why is My Toast Sticking to the Pan?
The pan may need more butter and oil, or the heat might be too high. Try adjusting both.
Can I Use Store-Bought Keto Bread?
Of course, but homemade keto brioche gives the best texture and flavor.
