    There are few desserts that are more perfect that a decadent pound cake. As the buttery pound cakes begins to bake in your oven, the unbelievably tantalizing aroma that fills your entire kitchen lets you know this is going to be one of the best low carb cake recipes you'll ever make! It's just that AH-mazing!

    Once the mouth-watering Keto pound cake cools, serve it with a big dollop of fresh sugar-free whipped cream and some fresh berries of your choice.

    Making desserts during the week can just seem too time consuming. Using less than 10 ingredients this Keto pound cake is so easy to make and can be ready in under an hour, making it the perfect week night homemade dessert.

    What's in Keto Pound Cake

    • Almond flour
    • Oat fiber
    • Butter
    • Sour cream
    • Eggs
    • Swerve confectioners
    • Baking powder
    • Vanilla extract

    How to Make Keto Pound Cake with Almond Flour

    Preheat oven to 350F.

    Add the almond flour, oat fiber and baking powder in a large mixing bowl and whisk together.

    In a separate bowl, add in the butter and Swerve confectioners, then whip using a hand mixer until fluffy.

    Add in the sour cream and continue mixing.

    Add in the eggs and vanilla extract and mix until combined.

    Add the wet ingredients into the dry and mix, just until well combined.

    Pour the batter into a 9x5 nonstick loaf pan that's been sprayed with nonstick spray and lined with parchment paper.  Bake for 40-45 minutes or until a toothpick, when inserted, comes out clean. 

    If the top starts to brown too much, gently tent it with foil for the remainder of your baking time.

    Once done, allow the cake to cool for about 15 minutes before you turn it on on a cooling rack to completely cool. Because cake made with almond flour is usually very tender, cooling it completely before slicing is an important step to ensure it doesn't break apart.

    Can You Have Cake on Keto?

    Any cake made with traditional flour and sugar is, without question, is not recommended for Keto or a low carb diet. Pound cake, for instance has approximately 60 grams of carbs per serving! WOW, right? That's a whole lotta carbs for one slice of cake.

    But this Keto pound cake, made with almond flour, comes to the rescue! With only 3 net carbs per serving, this gluten free pound cake is a perfect low carb treat. And trust me, you will not feel deprived from enjoying cake when you give this recipe a try.

    Does Keto Pound Cake Need to be Refrigerated?

    Technically, this pound cake does not have to be stored chilled; however, it will stay fresh longer if kept in the fridge in an air tight container. If you want to make this recipe in advance, it can also be frozen for up to 3 months.

    Ways to Enjoy Gluten Free Pound Cake

    Wanting to take your Keto pound cake to the next level? Try some of these suggestions for ways to use your new favorite pound cake recipe:

    • Ever heard of pound cake French toast? Well, you should give it a try for a super decadent breakfast. Because this recipe already has eggs in the recipe, there's no need for an egg wash. All you have to do it smear room temp butter on sliced pieces of pound cake and sprinkle with a little cinnamon and granular sugar substitute like Allulose or Swerve. Put the buttered pound cake in a warm non-stick skillet and cook until slightly browned. Drizzle with your favorite sugar-free maple syrup.
    • Make a rich and decadent trifle with any of your favorite flavored Keto mousse or sugar-free sauces. You can use layers of Strawberry Coconut Mousse or this quick and easy Lemon Curd to make one amazing dessert.
    • Drizzle fresh sugar-free berry coulis or sauce to give pound cake a fresh punch of flavor. This homemade Strawberry Sauce, Blueberry Sauce or Raspberry Sauce are all sugar-free and are super easy to make.

    • One of my most favorite ways to use Keto pound cake is making it into strawberry shortcake. Thin slices with strawberries and fresh cream layered in a deep casserole or soufflé dish is an easy dessert but will have your guests thinking you spent all day in the kitchen!

    • 1 ¾ cups almond flour
    • ¼ cup oat fiber, see notes
    • ¾ cup butter, room temperature
    • ½ cup sour cream, room temperature
    • 3 whole eggs
    • ⅔ cup Swerve confectioners
    • 2 teaspoons baking powder
    • 2 teaspoons vanilla extract

    Instructions

      Your recipes are always the BEST! I made this last weekend after picking up some beautiful strawberries at the farmer's market. 🍓🍃 WOW, it's soooo good, toooo good! I ate a "few" slices after it cooled, some with strawberries I macerated with an allulose monk fruit blend sweetener and later I tried a slice drizzled with ChocZero keto honey. The only change I made to the recipe was adding a pinch of salt and zest of one lemon to the batter. 🍋

          I tried the Madeleine pan and they came out great! I added the zest of two lemons 🍋🍋 for this version, brushed the pan with melted butter, filled each one to the top, and smoothed with an offset spatula. I baked them for 12 minutes, let them cool a bit in the pan before turning out, and dusted them with powdered allulose.😋

      this recipe turned out great. I made it into 12 cupcakes will be making again. my husband says he likes them better than the spongy store bought things lol you use for strawberry shortcake since thats how we dressed our pound cakes. Thank you for a great recipe.

      I know this is a keto website, but will the recipe work if I sub almond flour with all purpose? I have oat fiber I want to bake a cake with but can only find keto recipes! Thanks!

        I have only used it in keto recipes so I can't say for sure how it would work with regular flour. Because oat fiber absorbs up to seven times its weight in water, you may have to add additional liquid to account for that.

      Made this today. Looked great and tested done. Moved it to a cool rack. Removed from pan after 15 minutes. About 5 minutes later I see the center had sunk :(.

      What could have been the cause of this. I know in regular baking - too much oil or sugar but wasn’t sure on this

        Oh no! I hate that happened. I don't see that much with almond flour recipes. Just from a baking standpoint, I typically see that happen when the wrong size pan is used, or it's baked in an oven that is either too hot or too cold. And sometimes if you add too much baking powder it can make a cake sink. I hope you can figure it out and will give this recipe another try.

      I am so excited about this recipe! Thank you for so many details! Do you have a substitute for oat fiber? I have psyllium husk powder, xanthan gum, organic whole wheat flour in my pantry. Yes, Amazon has it and can get it in two days... Just need to know of a sub. Thank you for all your heartfelt and delicious recipes, ideas, and tips.

        You're so welcome! I haven't tried any substitutions for the oat fiber. When I first started Keto, I looked for a Keto friendly ingredient that would give baked goods a similar texture to traditional recipes. So far, oat fiber is about the only thing I have found that I really enjoy using. You could possibly try a substitution, but I am not sure how the pound cake would turn out.

      How would you change this to make it a chocolate pound cake? I don't know if you'd just add cocoa powder, or need to up some of the wet ingredients too....

        When baking, you would have to add more liquid to offset the dry cocoa powder. I have not made that modification but I am planning on writing a separate chocolate pound cake recipe later. In the meantime, if you'd like something chocolatey, try my Keto Double Chocolate Muffins. They have amazing taste and texture.
