These low carb pork chops make the perfect easy weeknight dinner. They can be ready in under 30 minutes, and you just won't believe just how flavorful they are!

- Pork chops
- Uncured bacon
- Mushrooms
- Mascarpone
- Heavy cream
- Bone broth
- White wine
- Butter
- Onion
- Garlic
- Parsley
- Salt

How to Make Keto Pork Chops with Bacon Mushroom Gravy
Heat a large skillet to medium heat, and fry the bacon until crisp.
Remove the bacon and allow to drain on paper towels, then reserve for the gravy.
Add in the pork chops and fry for a few minutes on each side, making sure to get a nice sear before flipping them over. Once they've reached an internal temperature of at least 145F on a meat thermometer, remove and set them aside.
Add in the butter and sauté the mushrooms for a few minutes, until they get some good color.
The darker the color of the mushrooms, the more flavor your gravy will have! Add in the onion and sauté for about 2 minutes. Then add in the garlic and sauté for about 20 seconds, careful not to brown it!
Deglaze the pan with the wine, scraping up the brown bits. Allow some of the liquid to evaporate, then add in the chicken stock and continue to simmer for another minute or so, allowing the liquid to reduce slightly.
Stir in the mascarpone cheese.
Once melted, add in the heavy cream, parsley, crumbled bacon, salt and pepper. Simmer uncovered for 5-7 minutes or until thickened to your liking.
Add the pork chops back in, just long enough to heat them through. Serve with a side of cheesy mashed cauliflower and a garnish of parsley over the top.

Can I Freeze This Low Carb Pork Chop Recipe?
Yes. Just store leftovers in an airtight freezer safe container and place in the freezer up to a couple of months. To thaw, place the container in the fridge over night then reheat the pork chops in the oven on 350F until warm.
Can I Use Different Pork Chop Cuts?
Absolutely. There're several different cuts for pork chops. The great part about this Keto pork chops recipe is you can use what ever cut you prefer, but you'll still use the same cooking method. These are some of the more common cuts to consider:
- Shoulder chop-stands up great to braising and high heat cooking.
- Center cut-leaner than other cuts and is cooked best seared on high heat. Brining is a good idea to help them retain their moisture.
- Pork loin-very versatile cut. Perfect served with in a low carb gravy or sauce. Be careful not to overcook this cut.

Are There Carbs in Keto Mushroom Sauce?
Most traditional gravy or sauces are totally out of the question for those on Keto because flour is used a thickener. With this low carb pork chop recipe, Mascarpone cheese is used as a thickener.
Mascarpone cheese is low in carbs and is an excellent way to get a rich and thick gluten free gravy without adding all the carbs.
If you can't find mascarpone, or don't have any on hand, you can substitute it with cream cheese instead. Just be sure to recalculate the macros, since cream cheese has more carbs. This will also change the flavor of the gravy a little, but will still taste amazing!
Note: This recipe calls for chicken bone broth. I use Kettle and Fire brand because I have found the flavor to be most like homemade stock. If you’d prefer to make your own chicken stock, you can certainly use it instead.
