I don’t know about you, but I’m a huge fan of anything buffalo!  I just love that vinegary punch of flavor, with the classic blue cheese and celery you get with traditional buffalo wings.

To make things easy and lower in carbs, I skipped the breading and sautéd shrimp in buffalo sauce.  Serve over a simple buffalo style coleslaw, wrapped in pieces of hearty romaine lettuce.  

Top with a drizzle of buffalo sauce and blue cheese crumbles and you have a quick and very flavorful weeknight dinner!

How to Make Keto Buffalo Shrimp

Heat a large skillet to medium high and add in the butter.  Once the butter has melted, sauté the shrimp for a couple of minutes on each side.  As soon as they turn pink they’re done!  

You don’t want to overcook them or you’ll be serving up little rubber bands and no one wants to eat that!

Pour the buffalo wing sauce over the tops and toss to coat, cooking for another 20 seconds.  Remove from the heat and assemble your lettuce wraps.

I used romaine lettuce hearts for mine, but you could use any lettuce you like.

Top each piece of lettuce with some Buffalo Cole Slaw.

Add some of the shrimp over the top.   Garnish with a drizzle of the buffalo wing sauce and some blue cheese crumbles.

Tips for Making the Best Low Carb Buffalo Shrimp

The shrimp I used were medium, cleaned, deveined and with the tails removed.  It makes eating these much easier without having to take off the tails!  

I also decided to skip the bread to make things even easier and also save on the carbs!  Feel free to add breading if you’d like, you can use the same breading mixture that I use for Fried Shrimp. If you go that route, you can fry the breaded shrimp, then toss in the buffalo sauce and serve.

I also use my homemade Buffalo Cole Slaw, which is super easy to make and as I mentioned earlier, tastes better the long it sits.  So to save on time, you could make the slaw in advance, allow it to chill in the fridge, then sauté the shrimp when you’re ready to eat.

Homemade Buffalo Wing Sauce - Keto and Low Carb

I prefer a little extra buffalo flavor and heat, so I added a very healthy drizzle of buffalo sauce over the top.  The Buffalo Sauce that I used is homemade and you won’t believe how easy it is to make!  If you happen to have some on hand already, by all means, use what you have!

Romaine lettuce works best for these wraps, because they’re large and pretty sturdy.  You can use any lettuce that you like though, or even serve everything over a salad instead.  If you have some Keto friendly wraps, you can certainly serve those.

If you’re not a huge fan of shrimp, you can make this same recipe using chicken.  Just be sure the chicken is fully cooked through, with an internal temperature of at at least 165F.
