🔪 How to Make Keto Lobster Rolls

Add the mayonnaise, celery, chives, lemon zest, lemon juice, smoked paprika, salt and ground black pepper to a large mixing bowl and mix to combine.

Cook your lobster tails just until cooked through, making sure not to overcook them.  I like to boil mine and place a skewer through them to prevent them from curling up. I used spiny lobster tails, but you can use Maine if you prefer.

Once they are cool enough to handle, remove the meat from the shells and chop into bite size pieces.

Heat a skillet to medium and add in the butter and once melted, the chopped lobster meat.

Sauté for 1 minute, stirring often and making sure all the lobster is coated in the butter and heated through.

Remove the lobster, leaving the remaining butter in the skillet, then add the lobster to the bowl with the mayonnaise mixture, then stir until well combined.

To serve, open the buns, add in a romaine lettuce leaf and fill with the lobster mixture.

    ☑️ Storage Instructions

You can store any leftover lobster mixture separately from buns in airtight containers for up to 2 days. Freezing isn't recommended for best texture and freshness.

    • Crispy Keto Zucchini Fries
    • Creamy Cucumber Salad
    • Broccoli Salad
    • Creamy Homemade Coleslaw

    💡 Tips

    • Avoid overcooking the lobster tails to prevent them from getting tough.
    • Toast the keto buns in the lobster-infused butter for extra deliciousness.
    • Don't skip lemon zest; it adds a unique brightness.
    • Dice celery finely to get crunch without overpowering bites.
    • Cool the lobster completely before adding the dressing to prevent a runny mixture.
    • Skewer lobster tails while boiling to keep them straight and evenly cooked.

    🔄 Substitutions and Additions

    • Avocado: Add diced avocado for extra creaminess and healthy fats.
    • Bacon: Sprinkle in some crispy bacon bits for a savory crunch.
    • Crunch: Replace celery with finely chopped cucumber for a different crunch.
    • Fresh herbs: Stir in fresh dill or green onions for added herb flavor.
    • Lobster salad: For a lobster roll salad version, serve the mixture over lettuce or spinach instead of buns.
    • Spice: Add a dash of hot sauce or cayenne pepper for some heat.
    • Cheese: Top the rolls with mozzarella cheese and broil briefly for melted cheesy goodness.

Can I Use Frozen Cooked Lobster Meat?

Sure, though I prefer to cook it fresh because the texture is better. If using frozen, just thaw completely and pat dry.

What Can I Do if My Lobster Mixture Seems Runny?

You should not have a runny filling with this recipe. If it seems runnier than you prefer, just drain excess moisture or add more celery and mayo to balance it.

Can I Prepare These Rolls Ahead of Time?

Yes, keep lobster mixture refrigerated separately, then toast buns and assemble right before serving.

How Do I Prevent Chewy Lobster Meat?

Cook the lobster only until opaque and immediately remove from heat.

Can I Use Regular Buns if I'm Not Keto?

Of course! They’ll be just as delicious.
