    I recently made this wonderful Slow Cooker Corned Beef and Cabbage dinner, and I ended up with a few leftovers. These mini sandwiches were the perfect way to put them to good use! They have all the things we love most about a full-size Reuben sandwich but in a low carb, bite sized package.

    Loaded with tangy sauerkraut, homemade and sugar-free Thousand Island Dressing, tender and juicy corned beef, with gooey Swiss cheese all sandwiched inside from-scratch Keto Rolls...need I say more?

    The great thing about these Reuben sliders is that they're the perfect snack sized sandwich that's not only great for a hearty appetizer, but they also hold up well to pack in lunch boxes, to take on a picnic or to carry to your next potluck.

    Your guests won't be able to get enough of them, so considering making a double batch!

    • Keto Dinner Rolls
    • Corned beef

    🔪 How to Make Keto Reuben Sliders

    Prepare the Keto Dinner Rolls and allow them to cool while you prepare all the ingredients.

    Remove the buns in one piece, which should be easy since they are the “pull apart” type. Place them on a cutting board and using a bread knife, slice all the buns in half, trying to keep them together as one solid piece.

    Tip: If you're short on time and can't make the Keto Dinner Rolls recipe, you can use store bought slider buns instead.

    Take the bottom buns and place them in a half sheet pan that’s been sprayed with nonstick spray or brushed with olive oil. Preheat oven to 350°F.

    Tip: Alternatively you could use the same casserole dish that you baked the rolls in.

    Place half the cheese over the bottom buns.

    Next, add the corned beef in bunches, rather than laying it completely flat.

    Then add the (well drained) sauerkraut and thousand island dressing.

    Tip: If you prefer Russian Dressing, you can use that instead. Just be sure to use a Keto friendly version.

    Top with the remaining cheese.

    Lastly, add the top buns, brush with the melted butter and a sprinkling of Everything Bagel Seasoning.

    Tip: If you don't have Everything Bagel Seasoning, you can use poppy seeds and some dried onion flakes instead.

    Lightly tent the casserole with aluminum foil and bake for 20 minutes or until the cheese has melted and the buns are golden.

    Allow them to cool slightly before cutting them into individual sliders.

    How Long Do Sliders Keep in the Fridge?

    These sliders will keep in an airtight container in the fridge for up to 3 days. If you anticipate having leftovers, you may want to add the sauerkraut and dressing right before serving so the leftovers won’t cause the rolls to become too soggy.

    Do Corned Beef Sliders Freeze Well?

    They certainly do. You can freeze them for a few months but again, you may want to wait to add the dressing after they have thawed, reheated and ready to serve.

    What to Serve with Reuben Sliders?

    If you're serving these as a main course, here are some great Keto side dishes to consider:

    What Can I Use Instead of Homemade Corned Beef?

    Even though corned beef is the cornerstone of any Reuben sandwich, you can still make a delicious slider by using leftover Roast Beef or even sliced deli roast beef.

    How Do You Keep Reubens from Getting Soggy?

    There are a couple of elements of these sliders that can make them soggy. But that is easy to prevent with these three simple tips:

    1. Always drain as much liquid as possible out of the sauerkraut before adding it to the bread. You can even use a tea towel to help squeeze the liquid out.
    2. As much as we love juicy corned beef, you'll want to dry off the liquid it's cooked in. The meat will still be juicy, but it will be dry enough to keep your sandwich nice and dry.
    3. Brush the butter topping, don't pour it. A lot of slider recipes will pour the butter over the tops, but I find that it settles and makes the bottoms soggy.

    What's the Difference Between a Rachel and Reuben?

    The difference between a Rachel sandwich and a Reuben boil down to the ingredients used. While a Reuben sandwich is made using corned beef and sauerkraut, a Rachel is made using deli sliced turkey or pastrami and crunchy coleslaw.

    Is Corned Beef Healthy Keto?

    Similar to most meat, corned beef is high in protein, vitamin B12, and iron and contains low to no carbs, making it an ideal choice of Keto. Keep in mind that some manufacturers add preservatives, additives, and sugar to their products.

    How Many Net Carbs in a Reuben Sandwich?

    For the average Reuben sandwich there can be up to or over 60 grams of carbs. In comparison, you can have TWO of these Keto sliders for just 4 net carbs. Talk about a guilt-free snack or meal; these sliders are the perfect answer.

    If you already store bought Keto buns on hand you can use those instead of making them from scratch.  Just be sure to adjust your macros accordingly.
