Cool and refreshing, fresh strawberry puree, heavy cream, cream cheese and mascarpone cheese are blended together until smooth and creamy.
This is such a quick Keto dessert to make and you only have to bake the gluten-free pie crust for 20 minutes, the rest is no-bake.

How to Make the Best Keto Strawberry Cream Tart
To Make the Easy Gluten-Free Pie Crust
This crust is so easy to make and if you have a food processor, it's even easier! So let's get started by preheating your oven to 350F.
Add the almond flour, butter, egg, Swerve and vanilla extract to the bowl of a food processor and mix until a dough is formed.
Scoop out the dough and put it into a 9" non-stick tart pan, then press it out, going up the sides.
Prick the dough with a fork and cover with parchment paper and pie weights or you can use dried beans. I use dried beans and reuse them over and over. I just store them in a food storage container and they're ready to go whenever I need them!
Bake for 20 minutes, then let it cool at room temperature.
How To Make the Best Strawberry Pie Filling
Wait until you see how easy this is! You are essentially dumping everything into a food processor and blending away!
Add the strawberries, mascarpone, cream cheese, vanilla extract, Swerve and some of the heavy cream in the bowl and mix until smooth and creamy.
Add in the Xanthan gum and keep mixing. If the mixture is too thick, add in more heavy cream.
Pour it into the cooled tart crust and smooth it out using a spatulaor spoon.
You can serve as is, or you can top with sliced strawberries and whipped cream.
You don't have to make it this fancy, but it's honestly so easy, why not make it pretty!?
Be sure to chill it in the fridge for at least 1-2 hours or until it fully sets, before cutting into it.
Tips on How to Make Low Carb Strawberry Tart
Making an Easy Gluten-Free Pie Crust
Almond flour is used in this low carb pie and tart crust because it adds the perfect texture and is also gluten-free. When combined with melted butter (I use grass-fed unsalted butter), an egg and vanilla extract and mixed in a food processor, the dough pulls together nicely and is very easy to work with.
A 9" non-stick tart pan is used in this recipe, but you can use any pie dish or pan instead and instead of making a tart, you can make a low carb strawberry pie! The tart pan has fluted edges, which makes the crust really pretty, and it also has a removable bottom, making it so easy to serve!
WHAT SWEETENER IS BEST FOR KETO BAKING?
Swerve Confectioners has the best balance for low carb dessert recipes. If you can’t get Swerve where you are, you can substitute with another brand. If you can’t get confectioners, you can always grind the granular to a fine powder using a coffee grinder.
The Creamy Strawberry Low Carb Pie Filling
Fresh strawberry puree, made in the food processor, makes this filling sweet and delicious! A combination of cream cheese and mascarpone make the filling super creamy.
This recipe is a lot like a no-bake Keto cheesecake because you are only baking the crust, but not the filling. But, because there is also mascarpone cheese in this tart, along with cream cheese, the flavor is milder and really allows the strawberries to stand out more.
Mascarpone cheese is a lot like cream cheese, it has the same texture but it’s not tangy and has less carbs. It’s loaded with healthy fat and has a very mild flavor, so it doesn't overpower any dish that you use it in.
I use it to thicken sauces and gravies, like pot roast gravy, butter chicken, creamy mushroom gravy, cauliflower “risotto” and so many more recipes. I also use it in many fat bombs too!
If you can't find mascarpone, you can just use all cream cheese. The tart will taste more like a strawberry cheesecake, but hey, there's nothing wrong with that!
Storing Leftovers
Leftovers can be stored in the fridge for several days in an airtight container. You can also freeze this tart and it will thaw perfectly!
How Many Carbs in Strawberries?
There are about 9 net carbs in one cup of strawberries. Most of these low carb strawberry recipes will use that amount or much less, in the entire recipe. So the net carbs per serving, ends up being very low.

Ingredients
For the Tart Crust
- 2 cups super fine almond flour
- ¼ cup grass-fed unsalted butter, melted
- 1 whole egg
- ¼ cup swerve confectioners, or powdered erythritol
- 1 teaspoon vanilla extract
For the Filling
- 1 cup fresh strawberries, hulled and sliced
- 8 ounces mascarpone cheese
- 4 ounces cream cheese
- ¼ cup + 2 tablespoons swerve confectioners
- 2-3 tablespoons heavy cream, as needed
- 1 teaspoon vanilla extract
- ½ teaspoon Xanthan gum
- *Optional: Sliced Strawberries and homemade whip cream for the topping
Instructions
To make the tart crust
- Preheat oven to 350F.
- Add the almond flour, butter, egg, swerve confectioners and vanilla extract to the bowl of a food processor and mix until a dough is formed.
- Place the dough in a 9" non-stick tart pan and press out, going up the sides.
- Prick the dough with a fork and cover with parchment paper and either pie weights or dried beans.
- Bake for 20 minutes, then allow to cool at room temperature.
To make the filling
- Add the strawberries, mascarpone, cream cheese, vanilla extract, swerve confectioners and some of the heavy cream in the bowl of a food processor. Mix until smooth and creamy. Add in the Xanthan gum and continue mixing. If the mixture is too thick, add the remaining heavy cream.
- Pour into the cooled tart crust and smooth out.
- *Optional: Top with sliced strawberries and whipped cream. Enjoy!
- Chill in the fridge for at least 1-2 hours or until set.

I've not tried that before, but I think as long as you make sure they are well thawed and drained, it should work out fine.
