🔪 How to Make Low Carb Strawberry Sauce
Cut up your strawberries and pour them into a saucepan. Add the lemon juice and sweetener over the top.
Simmer for 10 minutes or until they have broken down and have a thick sauce.
Using a masher, break down the strawberries until you get your desired texture.
Once cool, it’s ready to use.
Alternatively, you can puree the sauce in a food processor if you prefer a smooth sauce.
☑️ Storage Instructions
Store leftover sauce in an airtight jar or container for up to 7 days. You can also freeze it in a sealed container for up to 2 months. Thaw in the fridge overnight and stir before using.
🍴 What to Serve with Sugar-free Strawberry Sauce
- Pour it over your favorite Keto Cheesecake or Cheesecake Fluff for a decadent dessert.
- Drizzle it over these easy Keto Pancakes, Waffles or Crepes.
- Serve it with this Keto Vanilla Ice Cream.
- Swirl into full-fat Greek yogurt for a quick breakfast.
- Layer with whipped cream for an easy keto parfait.
💡 Tips
- Use a potato masher for a rustic, chunky texture or blend it for a smooth finish.
- Let the sauce cool fully before storing to avoid condensation in the container.
- If your strawberries are super sweet, start with less sweetener and adjust to taste.
- For a slightly thicker sauce, let it simmer a few extra minutes to reduce more liquid.
- Always simmer over medium heat to avoid burning the fruit or scorching the bottom.
- Stir frequently while it simmers to make sure it doesn’t stick.
🔄 Substitutions and Additions
- Strawberries: Use frozen strawberries if fresh aren’t available, just thaw them first.
- Spice: Add a pinch of cinnamon for a cozy twist.
- Thickness: You can stir in a little chia seed after cooking to make a thick jam-style version. Or you can add a dash of xanthan gum can help thicken the sauce if you prefer it really rich.
- Berries: Mix in some crushed raspberries or blackberries for a berry blend.
- Citrus: Add orange zest instead of lemon juice for a citrusy variation.
- Extract: Try a little almond extract for a different flavor profile.
Are Strawberries Okay on Keto?
Absolutely! They’re one of the lower carb fruits, and because they’re naturally sweet, a few go a long way. Just be mindful of the serving size since the carbs can add up if you go overboard.
Why is My Strawberry Sauce Too Thin?
You may not have simmered it long enough. Let it cook a few extra minutes and it should begin to thicken naturally.
Is This Sauce Sweet Enough With Just ¼ Cup of Sweetener?
That’s usually perfect because ripe berries taste even sweeter as they cook. But you can always taste it and adjust it to your liking before it finishes cooking.
Can I Use This Sauce for Meal Prep?
Sure! It holds up well in the fridge and can be frozen in portions for later use.
Is it Okay to Add Xanthan Gum to Thicken It?
Yes, but go light. Just a tiny pinch will do the job, and be sure to stir well to avoid clumping.
Can I Double the Recipe for a Party or Batch Cooking?
Definitely. Just use a large enough saucepan and allow a little extra time for simmering.

can you make the keto strawberry sauce without the beef gelatin or do you need it?
Keto Cooking Christian
The gelatin helps to thicken it up. The sauce will be a bit runny without it.
Rina
Will it work to can your different sauces?
Keto Cooking Christian
I have not tried canning this sauce, so I can't say for sure.
Malorie Edie
Can you use pectin in place of beef gelatin?
Keto Cooking Christian
I have never used pectin in the place of beef gelatin, so I can't say for sure.
Tara
When does the lemon juice go in?
Keto Cooking Christian
You would add it in the beginning, along with the strawberries, swerve and salt.
Joyce Milliser
I am I reading that this is approx 1 or 2 net carbs per tablespoon? I’d love this on pancakes and cheesecake. Thank you.
Also do you have a loaf sandwich bread recipe?
Keto Cooking Christian
Hi Joyce,
Would be approx. 1 net carb per tablespoon, since the entire recipes yields 50 tablespoons @ 2 net carbs per serving (25 servings). I don't have a loaf bread recipe at this time, but you can try this recipe from Gnom-Gnom, it looks like a great one!

Could use I the strawberry sauce on crumb cake instead of cranberries?
Keto Cooking Christian
Hi Cheryl,
If you're referring to my recipe for the Cranberry Walnut Crumble Bars, I'm afraid the strawberry sauce might be too thin. It may work if you can thicken up some.
Sherri
Can you use Xanthum gum in place of beef gelatin?
Keto Cooking Christian
I haven't tried using Xanthan Gum in this recipe, but it might work. You'd definitely want to use much less, so it won't be a 1:1 substitution. I would start with 1/4 teaspoon and check the consistency. I hope that helps!
