The drop biscuits bake up golden and tender, and the rich, peppery sausage gravy is so good you’ll want to east straight off the spoon. This is one of those keto recipes that doesn’t feel like it’s low-carb…it’s just good food.
While I’ve tested a lot of biscuit and gravy recipes, this is the one I keep coming back to. The mascarpone gives the gravy a silky texture and a rich a decadent flavor you just don’t get with other recipes. Pair that with how easy the biscuits are to make and you’ve got the perfect cozy Keto breakfast you’ll be tempted to make every weekend.

- Almond Flour
- Uncured breakfast sausage
- Eggs
- Sour cream
- Butter
- Cheddar Cheese
- Unsweetened almond milk
- Mascarpone cheese
- Heavy cream
- Monk fruit/allulose
- Baking powder
- Baking soda
- Nutmeg

🔪 How to Make Keto Biscuits with Sausage Gravy
To Make the Almond Flour Biscuits
Preheat the oven to 450°F.
Add the almond flour, baking powder, baking soda, and sweetener to a bowl and mix using a hand whisk or fork.
In a separate bowl, add the eggs, sour cream and melted butter and mix with hand mixer until combined.
Add the cheese into the wet ingredients and continue mixing.
Add the dry ingredients into the wet and mix.
Scoop the biscuit mix into silicone muffin pan liners (or spray a non-stick muffin pan with non-stick spray).
Bake for 10-12 minutes (mine took exactly 10 min).
For the Keto Gravy
Add the sausage to a large frying pan and cook over medium heat.
Once the sausage is cooked through, add in the mascarpone cheese and melt it.
Then add in the rest of the ingredients and cook over medium heat for 5-7 minutes, or until the gravy has thickened nicely.
Allow the biscuits to cool slightly before cutting them open. Once slightly cooled, slice the biscuits in half and pour some of the piping hot sausage gravy over the top. Enjoy!

Store leftover biscuits in the fridge or freezer. If you decide to freeze them, wrap them individually in plastic wrap and store for up to a couple of months.

It may need more time to simmer. Keep it on medium heat and stir often until it thickens.
Can I Reheat This Gravy in The Microwave?
Yes, but heat the gravy in short intervals and stir in between so it doesn’t separate.
What Thickens Keto Gravy?
This sausage gravy recipe uses mascarpone cheese as a natural thickener, because it’s a rich and creamy cheese that melts beautifully when melted.
Also, using a large frying pan to make the gravy helps it thicken up as well. If you choose to use a smaller pan, you’ll need to extend the cooking time longer.
Can I Freeze Keto Sausage Gravy?
This gravy is so quick and easy that it’s best served fresh. You can freeze it, but because it’s mostly dairy, you’ll have to whisk it really well as it reheats.
Because of the moisture content, be sure to freeze in an air tight container to ensure optimal freshness.

Ingredients
For the Biscuits
- 1 1/2 cups super find almond flour
- 2 whole eggs, beaten
- ½ cup sour cream
- ½ cup cheddar cheese, shredded
- 4 tablespoons butter, melted
- 1 teaspoon monk fruit/allulose
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
For the Gravy

Hi! I was wondering what the nutritional facts would be without the biscuits
I did not run separate values, so you’ll have to enter the ingredients in your macro tracker to get the correct nutritional value. Because ingredients can vary, it’s always a good idea to calculate your own macros.
Both the biscuits and the gravy were amazing! The biscuits were light. I did them in my iron skillet do they had a crunchy outside. My daughter is gluten intolerant, so she especially loved the gravy. Thanks!

How much salt is needed for the biscuits? I noticed the directions say to mix it with the dry ingredients, but there is no measurement listed. Thanks so much!
There is no salt in the biscuits, only in the gravy. Sorry for any confusion!
I like more gravy and use chicken stock added and a little xantham gum. Sounds weird but is delicious. I also freeze it in small portions for work days.
How many serving is this and is this per serving?

No, there isn’t much and I do not drain the healthy fat from the gravy.
Hello I have two questions for you. Why the xatham gum and what can I use in place of it? And can I use cream cheese instead of mascarpone cheese?

The xanthan gum is a thickener, you can use Glucomannan instead if you like. You can also substitute cream cheese for the mascarpone as well. It will change the flavor a little, but will still be good 🙂 I hope that helps!
It was very good. I used arrowroot to thicken up the gravy. I think I used about 2 1/2 teaspoons until I got it to the thickness I liked. Thank you for making this recipe.
