🔪 How to Make Wedge Salad Bites
Fry bacon in a skillet, then allow to cool on paper towels.
Chop into small pieces, then set aside.
Wash, dry and cut lettuce into small wedges.
Chop the red onion into small pieces.
Insert a 4” party skewer into a cherry tomato, then into a mini iceberg wedge, then set on a platter. Drizzle blue cheese dressing over the lettuce.
Sprinkle the chopped bacon, red onion and chopped chives over each wedge. Top with salt and finish with blue cheese crumbles, then serve.
☑️ Storage Instructions
If you have leftovers you can store the assembled bites in an airtight container for up to 1 day. Add dressing just before serving. I do not recommended freezing them because lettuce and tomatoes just don't hold up well.
🍴 What to Serve with Mini Wedge Salads
These mini wedge salads make a great appetizer but leftovers are wonderful the next day as a light side with a main course. Here are some low-carb recipes that I love to serve them with:
- Cast Iron Steak with Mushrooms
- Grilled Ribeye with Compound Butter
- Blackened Chicken Tenders
- Chipotle Lime Grilled Chicken
- Sheet Pan Garlic Shrimp
- Air Fryer Salmon

💡 Top Tips
- Use fresh lettuce: Pick a head of iceberg lettuce that feels firm and has no browning on the edges.
- Cut cherry tomatoes evenly: If they’re too large, halve them to make them easier to skewer.
- Extra dressing: Serve extra blue cheese dressing on the side in a small dish for dipping.
- Season to taste: Sprinkle a pinch of ground black pepper on each wedge for added flavor right before serving.
- Wait to add toppings: Though you can make these ahead of time, I prefer to wait to add the topping. This keeps the bacon and lettuce crisp and prevents sogginess.
- Press to stick: If the cheese crumbles are falling off, lightly press them with your fingers to help them adhere better.
🔄 Substitutions and Additions
Swap the dressing: Homemade Ranch or Caesar dressing can work if you’re not a fan of blue cheese.
Avocado: A small cube of avocado adds a creamy, fresh twist.
Cheeses: Feta crumbles or shredded Parmesan make excellent alternatives to blue cheese.
Add a spicy kick: Sprinkle with a dash of hot sauce or a pinch of red pepper flakes.
Cucumbers: A thin slice of cucumber adds even more delicious crunch.
Can I Make These Ahead of Time?
Yes! Assemble the skewers up to 4 hours in advance, but drizzle the dressing just before serving.
How Do I Keep the Lettuce Crisp?
Dry the lettuce thoroughly after washing and store it in the fridge until ready to assemble.
Can I Use Another Kind of Lettuce?
Iceberg is best for its crispness, but romaine hearts can work as a substitute.
How Can I Keep the Skewers from Falling Apart?
Ensure the skewer or party pic goes through the tomato, lettuce, and at least one other topping to stabilize it.
