I absolutely love mushrooms- sautéed, marinated, raw in a salad, any which way I can get them! They're also loaded with potassium, which is great for Keto! One of my favorite ways to serve this low carb mushroom gravy is over a piece of steak. This time around, I made some for my pan fried pork chops and wow, what a great combo!
If you decide to pan fry your steak, chicken or pork, I highly recommend using the same pan to make this low carb mushroom sauce in. That will give this gravy that much more flavor! I've outlined the steps in the Tips section below.
And the best part of this gravy is not only is it ready in under 15 minutes, but you don't need to use any thickeners! Keep reading, I explain why down below.
🛒 Ingredients Keto Mushroom Sauce
- Baby bella mushrooms
- Mascarpone cheese
- Heavy whipping cream
- Chicken stock (or beef stock)
- White wine (I use Pinot Grigio)
- Garlic
- Fresh lemon thyme (or thyme)
- Butter
- Salt and pepper

🔪 How to Make Mushroom Gravy
Heat a large skillet to medium heat, add in the butter and sauté the mushrooms for a few minutes, until they get some good color.
The darker the color of the mushrooms, the more flavor your gravy will have! Add in the garlic and sauté for about 20 seconds, careful not to brown it!
Deglaze the pan with the wine, scraping up the brown bits. Allow some of the liquid to evaporate, then add in the chicken stock and continue to simmer for another minute or so, allowing the liquid to reduce slightly.
Stir in the mascarpone cheese.
Once melted, add in the heavy cream, lemon thyme, salt and pepper.
Simmer uncovered for 5-7 minutes or until thickened to your liking.
Serve with a garnish of fresh thyme over a steak, pan fried pork chops, steak or chicken.
💡 Tips for Making Mushroom Gravy
- If you are making this gravy to serve over pork chops (as I have), steak or chicken I highly recommend following these steps before starting this recipe: season your protein with salt and pepper, then sear in a large skillet for a few minutes on each side, until it is cooked through. Remove the protein and set it aside covered with aluminum foil while you make the gravy. Don't wipe out the pan because those juices will give extra flavor to your gravy! Then follow the recipe from there.
- Don't rush sautéing the mushrooms! Make sure they have some good color on them before adding in the garlic. Color = flavor!
- Don't be tempted to add the salt to the raw mushrooms, but instead add it at the heavy cream step. If you salt mushrooms before they've cooked, they will give up their juices and will steam rather than sauté which gives you that great sear, color and intense flavor that you want.
- Watch the garlic closely! Garlic goes from perfect to burnt in seconds and nobody wants bitter burnt garlic as a base for a gravy. You actually don't want much color on the garlic at all, as that is when it starts to turn bitter and if that happens, you have to start all over or it will wreck your gravy.

Store leftover mushroom gravy in an airtight container in the fridge for a few days or freeze.
🍴 What to Serve Mushroom Gravy With
This mushroom gravy is best served over chicken, pork chops or steak. These are some of my favorites that would work well with this gravy:

- Grilled Steak
- Air Fryer Chicken Thighs
- Crockpot Meatloaf
- Air Fryer Pork Chops
- Air Fryer Pork Tenderloin
- Cheesy Mashed Cauliflower
🔄 Substitutions and Additions
- The white wine really adds a nice depth of flavor and since most of the alcohol cooks off and evaporates, your gravy will not taste like wine. But if you prefer not to use any, you can substitute with more chicken stock.
- I find that baby bella or cremini mushrooms work best in this gravy, but you can certainly use white button mushrooms or for a more upscale twist, use a wild mushroom mix. Porcini mushrooms are my favorite to make a gravy with, but they can be harder to find. If you happen to get your hands on some, they will likely be dried which is even better. Reconstitute them in hot water, then add some of the mushroom liquid (which has incredible flavor) to your gravy in place of some of the chicken stock. I am telling you, it takes this gravy to a whole new level of deliciousness!
- If you can't find lemon thyme, fresh thyme will work just as well. If you can't find thyme, you can use fresh parsley. I'd recommend the fresh parsley over using dried thyme. Rosemary would also work really well, just don't use too much, it's stronger than thyme.
- I use mascarpone in this gravy because it's creamy texture helps to thicken the gravy and also has a mild flavor, which allows the mushrooms to be the star. If you can't find mascarpone, you can use cream cheese instead. Just know that it will change the flavor slightly, but will still be delicious!

What is creamy mushroom sauce made of?
There really isn't much to this gravy, just a handful of ingredients, including cream, garlic, thyme, chicken stock, white wine and of course mushrooms, plus one more key ingredients, which I'll explain more on below.
How do you thicken mushroom sauce?
Instead of using xanthan gum or another Keto friendly thickener, which I try to use sparingly, I used mascarpone cheese. It has a very mild, almost no flavor to it, which is perfect in this gravy. It also gives the gravy a luscious velvety texture. As I mentioned earlier, cream cheese will do the same, but will alter the flavor some.
Does mushroom sauce have carbs?
Yes, but only 3 net carbs per serving!

Recipe looks delish but wondering if dried thyme can be used. It's winter and my garden is dormant right now. Sometimes the supermarket has growing herbs, but I haven't seen thyme there.
