These chocolate and peanut butter fat bomb truffles are so delectable, very easy to make and they're the perfect Keto snack.
The combination of these two flavors, along with Mascarpone cheese, creates a wonderful smooth and creamy truffle. A drizzle of my favorite Crazy Richard's Creamy Peanut Butter, or a light dusting of Crazy Richard's Peanut Butter Powder over the top is the finishing touch!
What's in Keto Peanut Butter Fat Bombs
- Crazy Richard's Creamy Peanut Butter
- Mascarpone cheese
- Heavy cream
- Pure vanilla extract
- Swerve confectioners
- Lily's Chocolate Bars
- Coconut Oil
- Option #1: Drizzle Crazy Richard's Creamy Peanut Butter over the tops.
- Option #2: Dust Crazy Richard's Peanut Butter Powder over the tops.

How to Make Chocolate Peanut Butter Keto Fat Bombs
Add the Mascarpone cheese, heavy cream, vanilla, Swerve and peanut butter to a bowl.
Mix the ingredients using a hand mixer, until well combined.
Scoop the batter into balls using a small melon baller or mini cookie scoop and place onto a sheet pan lined with parchment paper.
Freeze for 10 minutes, or until firm.
Add the chopped chocolate and coconut oil to a bowl and microwave for 20 seconds. Stir and microwave for another 10 seconds. Microwave in 10 second increments, if needed, and stir until all the chocolate has melted. You can do this over a double boiler instead, if you'd like.
Spoon the melted chocolate over each truffle and place back onto the parchment paper.
Drizzle the tops with peanut butter or dust with peanut butter powder.
Store leftovers in an airtight container in the fridge up to 5-7 days or in the freezer.
Is Peanut Butter Keto Friendly?
Yes, as long as eaten in moderation. Let me explain. Peanuts are a legume, which are typically discouraged on Keto. But, peanuts are higher in fat than other beans and also high in fiber which give them a lower carb count. So, peanut butter is fine when eaten in small amounts, such as in a Keto fat bomb or when used in a low carb salad dressings.
Nutritionally, peanuts are more similar to nuts, like almonds, than they are to beans. Just make sure to read the label. The only ingredient that should be listed is, “peanuts.”
Are There Carbs in Peanut Butter?
There are a few carbs in peanut butter but the amount can vary slightly depending on the brand. A good rule of thumb in determing if a brand is Keto friendly is it should be all natural and there should be approximately 5 net carbs per two tablespoons.
What is a Keto Fat Bomb?
Fat bombs are a high fat snack for people on the Keto diet. They’re low in carbs and are used mostly to boost daily healthy fat intake. Most fat bombs are sweet and that can really help to satisfy the occasional sweet craving without causing you to binge on sugary desserts.
Why Eat Keto Fat Bombs?
A Ketogenic Diet consists of a high amount of fat, moderate protein and low carbs, so the bulk of our calories come from healthy fats. If we don't consume enough healthy fat, we run the risk of following a high protein diet which is not Keto.
Some people struggle with this concept, since we're been told for many years that fat is bad and we should eat low/no fat. Nothing could be further from the truth!
These fats can include butter, heavy cream, coconut and coconut oil, avocados and avocado oil, mascarpone cheese, olive oil, cream cheese to name a few. Ingredients
For the Filling
- ¼ cup Crazy Richard's Creamy Peanut Butter, single ingredient: peanuts/no sugar added
- 1 cup mascarpone cheese

Can you substitute granulated swerve instead of confectioners??

I would recommend grinding it in a coffee grinder, otherwise they might be a little gritty.

The Nutritional Facts info is the incorrect info I think. It should be 3, not 1 (right? 😉 ♥

Correct, each batch makes 45 truffles. Each serving is 3 truffles, so there are 15 servings in a batch. I've updated the card to avoid any confusion 🙂

Hi Cheryl,
It's much like a cross between cream cheese and creme fraiche. Very mild in flavor, loaded with healthy fats and very low carbs (lower than cream cheese). I love using it to thicken sauces or in desserts because of the mild flavor, it doesn't overpower the dish. It might be best known for being used to make Tiramisu.
