This is such a fun and delicious dish! Lime cilantro cauliflower rice combined with all those favorite burrito fillings, but without all the carbs that traditional burritos have.
Fresh juicy cherry tomatoes, homemade taco meat, quintessential healthy fat favorite avocado and shredded cheddar cheese all topped with a sour cream chipotle lime drizzle.
This bowl is so simple to make, and most of it can be prepared ahead of time and then assembled when you're ready.
What's in Low Carb Burrito Bowl
- Grass-Fed Organic Ground Beef
- Onion
- Cauliflower
- Cilantro
- Lime
- Tomatoes
- Avocado
- Sour cream
- Cheddar cheese
- Smoked chipotle
- Smoked paprika
- Ground cumin
- Tomato paste
- Garlic sea salt
- Olive oil
- Water

How to Make a Keto Burrito Bowl
To Make Low Carb Taco Meat
Brown the ground beef in a skillet, adding a pinch of salt and pepper. Push the meat to one side of the pan, add the olive oil and the onion. Add a pinch of salt and sauté the onion until translucent.
Add the smoked paprika, cumin, and chipotle to the meat and onions and toast the spices for about 1-2 minutes. Stir in the tomato paste and water. Mix well and simmer for 10 minutes.
To Make the Lime Cilantro Cauliflower Rice
Add a small amount of the cauliflower florets to the bowl of a food processor and pulse until you get rice-sized pieces.
Remove and add to a bowl, while you process the next batch.
Continue the process until all the florets have been riced.
Melt the butter in a large skillet on medium heat and add in the riced cauliflower.
Sauté for about 5 minutes, or until it reaches your desired texture.
Remove from the heat and mix in the cilantro, salt, pepper, lime juice and zest.
To Make the Gluten Free Chipotle Sauce
Add all the ingredients into the bowl of a mini chopper and pulse until well blended.
How to Assemble the Low Carb Burrito Bowl
Add some of the cauliflower rice to a bowl. Add some of the taco meat, chopped tomatoes, shredded cheddar and avocado in sections (or rows), leaving some of the lime cilantro cauliflower rice exposed. Drizzle the chipotle sauce over the top and serve with a wedge of lime and garnish of cilantro.

What Keto Taco Seasoning Should I Use?
The meat used in this Burrito Bowl recipe uses most all the same seasonings as I use in this Easy Keto Taco Meat. You can use any seasoning you like but if you're on Keto or a low carb diet, you will want to avoid store bought seasoning packets.
Most all prepackaged seasonings contain Maltodextrin. This is an ingredient you will find in many store bought products. Maltodextrin is a highly processed preservative that comes from rice, corn, wheat, or potato starch. It has a high GI and raises blood glucose causing insulin spikes, which is what Keto tries to avoid.
By mixing up your own seasoning and keeping them on hand in an air tight spice keeper, you will have sugar free and preservative free spices anytime you need them.
Substitutions for Keto Burrito Bowl
- Frozen Cauliflower is an easy substitute for fresh. If you opt for frozen, be sure to cook the extra moisture out before adding any other ingredients. You can also use the pre-cut fresh florets found in most produce sections of a grocery stores.
- Feel free to switch up the cheese. Queso Fresco (or crumbling cheese) and Pepper Jack make great alternatives.
- If you want a little extra kick, serve with a little Pico-de-Gallo, instead of tomatoes, dolloped right on top.
- For quick and easy taco meat, make up extra homemade taco seasoning to keep on hand in the freezer.
- If you have left over taco meat, make a taco salad served with homemade Avocado Lime Cilantro Ranch dressing.
Is Cauliflower Keto?
The star ingredient in a lot of Keto Mexican recipes is cauliflower rice. There's only 3 net carbs in one cup of cauliflower rice verses 43 grams found in brown grain rice, making it a great substitution for those on Keto and low carb diets.

Keto Burrito Bowl with Lime Cilantro Cauliflower Rice
Ingredients
For the Taco Meat
- 1 pound Grass-Fed Organic Ground Beef, I use 85%
- ¼ Onion, minced
- 1 Smoked Chipotle, in the can, chopped
- 1 teaspoon Smoked Paprika
- 2 teaspoons Ground Cumin
- 1 teaspoon Tomato Paste
- ½ teaspoon garlic sea salt
- 2 teaspoons olive oil
- ½ cup Water
For the Lime Cilantro Cauliflower Rice
- 1 small head of cauliflower, cut into florets
- ⅓ cup fresh chopped cilantro
- 2 tablespoons grass-fed butter, unsalted
- Juice and zest of 1 lime
- Salt and Pepper to taste
For the Chipotle Sauce
- 1 Smoked Chipotle, in the can, chopped
- ½ cup sour cream
- Squeeze of lime
- Pinch of Salt
Other
- 1 cup chopped tomatoes
- 1 cup shredded cheese, I use a cheddar mix
- 2 avocado, sliced thinly

Are you saying that the serving size for this bowl will have to be divided by 6? Won't that leave you with about 1/2C of food? Please tell me I'm wrong bc it looks delish!
