Buffalo Wings are one of the most popular appetizers, Keto or not, most people love ’em! The flavor from the buffalo sauce is really unlike anything else around and there are so many different ways to use it, so it’s not just for wings!

This recipe uses a quick and easy Homemade Buffalo Wing Sauce and you can use it in Buffalo Chicken Tenders (“boneless wings”), Buffalo Cole Slaw,  Cauliflower Buffalo “Mac” and Cheese and even Buffalo Deviled Eggs, that’s right, deviled eggs and they are delicious!

The great thing about a casserole is you essentially throw everything together into one pan and bake it.  This baked Keto chicken casserole makes the perfect make ahead weeknight dinner!  You can prepare it ahead of time, then just bake it when you’re ready to serve it.  Doesn’t get much easier than that!

How to Make the Best Low Carb Chicken Casserole

Wait until you see how easy this is to make, you won’t believe it!  You can either use all store bought ingredients to make things even easier, or with just a few steps and simple ingredients, you can make your own Blue cheese dressing and Buffalo wing sauce to use in this recipe.

Ok, let’s get started by preheating your oven to 375F.  In a large mixing bowl, add in the cream cheese, blue cheese dressing, eggs, buffalo wing sauce, salt, celery and scallions, then mix until well combined.

Pour in the cauliflower rice and mix.

Then add in the chicken and mix well.

Pour into a 9″ x 13″ baking casserole dish that’s been sprayed with nonstick spray.

Sprinkle the cheddar cheese all over the top and bake 35-40 minutes or until the cheese is slightly golden.

Top with a drizzle of buffalo wing sauce, sliced celery and blue cheese crumbles and serve.  Store leftovers in the fridge for a few days in an airtight container, or freeze.

Tips on How to Make the Best Keto Buffalo Chicken Casserole

Ingredients to Use in This Chicken Casserole

Several different types of cheese are used in this recipe, including cream cheese, cheddar and blue cheese dressing.  The combination of flavors is perfect with the buffalo sauce. You can make your own blue cheese dressing and buffalo wing sauce, or use store bought Keto friendly versions.  

Sharp cheddar cheese works best in this recipe, but you can use medium or mild.  If you don’t have cheddar on hand, you can use Monterey Jack, Colby or mozzarella instead. 

Scallions and celery are also used in this casserole.  If you can’t get scallions, you can use minced onion instead.  Celery is most often served with buffalo wings, so it really goes well in this casserole.  

When you buy the celery, if you buy a stalk that has the leaves you can chop the leaves and use them as garnish over the top and it adds a little more mild celery flavor.  

Is Cauliflower Rice Good for a Low Carb Diet?

For sure! It’s very healthy, packed with nutrients, fiber and antioxidants, there are many health benefits of cauliflower!  What’s great about cauliflower for Keto, is it closely mimics the texture of rice, so it makes the perfect substitute for rice.  And you can add flavor to cauliflower rice, like in this Mexican Cauliflower Rice or Lime Cilantro Cauliflower Rice.

Cauliflower rice helps make this casserole a complete meal and it’s also very filling!  If you have a food processor or large grater, it’s easy enough to rice the cauliflower yourself.  

If you want to save time, you can use fresh pre-riced cauliflower or even the frozen bags.  If you use frozen, I would thaw it first and pat it dry with paper towels, so there won’t be too must moisture in the casserole.

Using Chicken in This Low Carb Casserole

To make things easy, you can use rotisserie chicken and shred it, including the breasts, legs and thighs.  For this recipe, I used the 2 breasts from an average size rotisserie chicken.  

What’s great about using rotisserie chicken in Low Carb meals is it’s a real time-saver! It’s easy enough to grab one on the way home and your meal is halfway done for you.  I try to get organic, when possible and shredding it while it’s still warm is much easier than once it’s been in the fridge for a few hours.

Is Chicken Good for a Keto Diet?

Absolutely!  Chicken is a great protein to eat on Keto!  There are so many Keto recipes using chicken that we get to enjoy.  Chicken is not only a great source of protein for a Low Carb diet, but it also has many vitamins and minerals.  You can read more about the health benefits of chicken in this article.

How Many Carbs are in Chicken?

Zero!  The carbs will come from whatever you decide to add to it.  So for this casserole, there are 4 net carbs, which come from the cream cheese cauliflower, blue cheese dressing, so basically everything but the chicken itself.

How Many Carbs in Cream Cheese?

The cream cheese that I use is made by Philadelphia brand, that comes in an 8 ounce package and has 8 carbs for the entire package, or 1 carb per ounce.  So with this casserole having 8 servings, that’s only 1 carb per serving, not bad at all!  Always by the original, full fat version, not the low fat cream cheese.

How to Serve and Store This Baked Buffalo Chicken Casserole

The best way to serve this casserole is with a healthy drizzle of buffalo wing sauce or hot sauce, thinly sliced celery, chopped celery leaves and some blue cheese crumbles.  You might also like a wedge of iceberg lettuce with blue cheese dressing on the side.  That’s my absolute favorite way to enjoy this casserole!

Leftovers can be stored in an airtight container in the fridge for a few days or freeze.  If you use this casserole dish, it comes with a lid which is so convenient to pop right in the fridge.

Ingredients
 

  • 4 cups cooked chicken, shredded
  • 4 cups cauliflower, riced
  • 8 ounces of cream cheese, at room temperature

    Amazingly delicious dish! My son even liked it and he’s very picky. Fun and easy to make as well. I cooked my chicken in the slow cooker and shredded it then added to everything else. This is definitely a keeper!
