I was experimenting with different fun and colorful desserts to serve on Memorial Day or July 4th and came up with these dreamy little desserts!

Let me just start by saying this Keto cheesecake mousse is great all on it’s own, without any topping at all, it’s just THAT good! It’s almost delicious with this Homemade Sugar-free Salted Caramel Sauce.

But of course, we need the red and the blue to pay homage to our national flag, so enter strawberries and blueberries!  You could also use raspberries if you’d like, I just prefer strawberries in this dessert.

These are super fun to serve at a party, barbecue, or take with you to a potluck.  I made 4 different styles, shown below, to give you some ideas on how to present them to your guests.  The truth is, they will look great in just about any glass or cup you have!  

This is also a great make ahead low carb party dessert!  You can prepare these the night before and cover with plastic wrap.  I tested this out and they keep in the fridge perfectly!

How to Make Keto Cheesecake Berry Cups

With a hand mixer, whip the heavy cream in a bowl to soft peaks.  

In a separate bowl, add the cream cheese and mix until blended well.  

Mix in the Mascarpone, Swerve confectioners and vanilla extract. Then mix in the whip cream and blend until smooth and creamy.

Add a layer of chopped strawberries to the bottom of a dessert glass. Pipe or dollop the cheesecake mousse over the strawberries, then add some blueberries over the top.  

I’ve prepared them in several different ways to give you some ideas.

I made a small dessert cup, using the strawberries to form a star and one blueberry in the center. How cute is this?!

Another way you can serve this is by piping the cheesecake mousse over the top of a cut strawberry.  Add a blueberry on top and they make adorable mini dessert bites that you can serve on a platter to your guests!  

I also used these mini trifle dessert glasses, which look great!

But I think my absolutely favorite way to serve this is in a martini glass! Who wouldn’t want to eat this!?

How to Make Cheesecake Keto Mousse Extra Creamy

I like using a little Mascarpone in mousse because it adds a extra creaminess, without a strong flavor or extra carbs. That is a key ingredient in most of my mousse recipes because of its silky texture.

Of course, if you don’t have Mascarpone cheese, you can substitute it with more cream cheese. 

Mascarpone vs Cream Cheese

What is Mascarpone Cheese? Mascarpone cheese is a creamy Italian cheese, somewhat like its American counter part, cream cheese or in France crème fraiche. Though used similarly to cream cheese, they are quite different.

Mascarpone- Made from fresh cream and citric acid. It has a rich and sweet milky flavor and is excellent in many Italian recipes. Mascarpone has 50% fat content making it a perfect ingredient for those on Keto or low carb diets where healthy fats are a focus. Though primarily used in desserts, Mascarpone is excellent when used as a thickener in savory dishes, like these Pork Chops with Bacon Mushroom Gravy.

Cream Cheese- Is an American cheese made from milk, cream, and stabilizer called carrageenan. It has a 33% fat content but because of the way cream cheese is processed, there’re a few carbs in it, about 1 gram per tablespoon. Cream cheese is thicker and has a bit of a tart flavor that easily compliments savory dishes but also makes delicious sweet frostings like in this Vanilla Cream Cheese Frosting.

What are the Carbs in Berries?

The carbs in berries vary depending on the type. Here’re the most commonly used berries in Keto desserts and approximate net carbs per 1/2 cup serving:

  • Carbs in Blueberries– 9 net g of carbs
  • Carbs in Strawberries– 5 net g of carbs
  • Carbs in Blackberries-3.5 net g of carbs
  • Carbs in Raspberries-3 net g of carbs

Patriotic Keto Cheesecake Berry Cups

Ingredients
 

  • 8 ounces cream cheese, at room temperature
  • 1 cup heavy cream
  • 1/4 cup mascarpone cheese
  • 1/2 cup Swerve confectioners
  • 1/2 teaspoon  vanilla extract
  • Strawberries
  • Blueberries

Instructions
 

  • Whip the heavy cream in a bowl to soft peaks.  In a separate bowl, add the cream cheese and whip using a hand mixer.  Mix in the mascarpone, swerve confectioners and vanilla extract.
  • Then mix in the whip cream and blend until smooth and creamy.Add a layer of chopped strawberries to the bottom of a dessert glass.
  • Pipe or dollop the cheesecake mousse over the strawberries. Add some blueberries over the top.  These can be served in the glass or cup of your choice.

Recipe Notes

I like using a little mascarpone in this because it adds a great creaminess, without a strong flavor or extra carbs. If you don’t have mascarpone cheese, you can sub with more cream cheese. 
The cheesecake mousse can serve anywhere from 6 servings on up.  It all depends on the glass or cup you decide to serve it in.

    I absolutely loved this recipe! So easy to make and tasted delicious with no guilt. I just need to know how many cups/ounces is one serving? I don’t see that anywhere and really need to know for my bariatric tracking app. Thank you.

    1. The serving size is just 1/6th of the entire recipe. I don’t have an exact measurement by cups though. Glad you enjoyed it 🙂

    Excellent recipe-I made it today and my husband really liked it. He is recovering from surgery and it is hard to stay keto when his body is craving carbs right now. I’d purchased some mini cheesecake cups by Kraft and he liked those, so I figured I would try your recipe and make it more keto. He loved it!
