I just discovered Crazy Richard's peanut butter and am in love! I wanted to write a recipe that really showcased the clean and pure taste of this peanut butter that has just one ingredient... peanuts!
These are a Keto friendly inside out version of a Reese's peanut butter cup and are absolutely delicious! Super easy to make, these low carb dessert bites will satisfy your cravings for sweets!
What's in Low Carb Peanut Butter Bars
- Crazy Richard’s Creamy Peanut Butter
- Mascarpone cheese
- Grass-fed unsalted butter
- Swerve confectioners
- Lily's Dark Chocolate
- Organic coconut oil

How to Make Inside Out Keto Peanut Butter Cups
Add the Crazy Richard's peanut butter, Mascarpone cheese and butter to a microwave safe cup and melt in the microwave for 15 seconds.
Stir in the Swerve confectioners, then microwave for an additional 10-15 seconds, or until melted.
Whisk to combine.
Separate out ¾ cup of the mixture and set aside for the top layer.
Pour the mixture into silicone molds ⅓ of the way up, then put in the freezer for 10 minutes, or until set.
If you don't have silicone candy molds, you can use silicone muffin cups. You'll want to use a silicone type mold of some sort so they will release from the sides easily.
Add the Lily's chocolate and coconut oil to a microwave safe cup and melt in the microwave.
Stir until well combined.
Then pour another ⅓ of the way up the molds. Freeze for another 10 minutes, or until set.
Pour the remaining peanut butter mixture over the top and freeze for 15-20 minutes or until firm.
These Keto chocolate and peanut butter fat bombs need to be stored chilled in the fridge.
Can I Freeze Chocolate Peanut Butter Fat Bombs?
Absolutely. Making a double batch and freezing some for later is a great way to portion control sweet treats. The best way to do this is by doing a quick pre-freeze. Place them on a sheet pan and place in the freezer for 30 minutes.
Remove them from the freezer and put in an air tight container and put back in the freezer for up to several months.
Is Peanut Butter Keto?
The answer is yes and no. Unfortunately, some of the brands we grew up with in our PB&J sandwiches contain a significant amount of sugar and are not suitable for people on Keto or low carb diets.
However, there are some really great no-sugar added brands, like Crazy Richards, that is perfectly fine when eaten in moderation. When you're selecting a Keto friendly peanut butter, just make sure to read the label. There should be only one ingredient listed, peanuts!
What are the Carbs in Peanut Butter?
Each all natural brand may have a various amount of carbs. But, on average there're 2 net carbs per serving, which is 2 tbls.

Why Eat Keto Fat Bombs?
A Ketogenic Diet consists of a high amount of fat, moderate protein and low carbs, so the bulk of our calories come from healthy fats. If we don't consume enough healthy fat, we run the risk of following a high protein diet which is not Keto.
Some people struggle with this concept, since we're been told for many years that fat is bad and we should eat low/no fat. Nothing could be further from the truth!

Ingredients
For the top and bottom layers
- ½ cup Crazy Richard’s Creamy Peanut Butter
- ½ cup mascarpone cheese
- ½ cup grass-fed unsalted butter
- 2 tablespoons swerve confectioners
For the middle layer
- 3 ounce bar Lily's Dark Chocolate, very finely chopped
- 1 tablespoon organic coconut oil
Instructions
