How to Make Biscuits with Keto Sausage Gravy
To Make the Almond Flour Biscuits
Preheat the oven to 450 degrees.
Add the almond flour, baking powder, baking soda, and Swerve to a bowl and mix using a hand whisk or fork.
In a separate bowl, add the eggs, sour cream and melted butter and mix with hand mixer until combined.
Add the cheese into the wet ingredients and continue mixing.
Add the dry ingredients into the wet and mix.
Scoop the biscuit mix into silicone muffin pan liners (or spray a non-stick muffin pan with non-stick spray).
Bake for 10-12 minutes (mine took exactly 10 min).
For the Keto Gravy
Add the sausage to a large frying pan and cook over medium heat.
Once the sausage is cooked through, add in the mascarpone cheese and melt it.
Then add in the rest of the ingredients and cook over medium heat for 5-7 minutes, or until the gravy has thickened nicely.
Allow the biscuits to cool slightly before cutting them open. Once slightly cooled, slice the biscuits in half and pour some of the piping hot sausage gravy over the top. Enjoy!
Oh, but wait! If you'd like other great ways to enjoy these drop biscuits, try them with Strawberry, Blueberry, Raspberry sauce or this Strawberry Chia Seed Jam.
Store leftover biscuits in the fridge or freezer. If you decide to freeze them, wrap them individually in plastic wrap and store for up to a couple of months.
What Thickens Keto Gravy?
This sausage gravy recipe uses mascarpone cheese as a natural thickener, because it's a rich and creamy cheese that melts beautifully when melted.
Also, using a large frying pan to make the gravy helps it thicken up as well. If you choose to use a smaller pan, you'll need to extend the cooking time longer.
Can I Freeze Keto Sausage Gravy?
This gravy is so quick and easy that it's best served fresh. You can freeze it, but because it's mostly dairy, you'll have to whisk it really well as it reheats.
Because of the moisture content, be sure to freeze in an air tight container to ensure optimal freshness.
Is Almond Flour Keto?
Almond flour is one of if not the best gluten-free, grain-free alternatives to regular flour making it perfect for Keto. For an entire cup of almond flour, there are 8 grams of net carbs.
Almond flour is made by grinding blanched, skinned almonds into a fine powder. If you'd like to know more about gluten free and Keto baking ingredients, "Keto Baking Made Easy" is a great article you may find useful.

So good. Makes so many biscuits I had one with keto strawberry preserves & it was delicious
Keto Cooking Christian
Sounds perfect!
Kathy
This was surprisingly good. Has a few more carbs than I’m suppose to have but I don’t care. It was well worth it.
Keto Cooking Christian
I'm so glad you enjoyed it and it's great for the occasional treat!
Ebony Humphrey
Hi! I was wondering what the nutritional facts would be without the biscuits
Keto Cooking Christian
I did not run separate values, so you'll have to enter the ingredients in your macro tracker to get the correct nutritional value. Because ingredients can vary, it's always a good idea to calculate your own macros.

Both the biscuits and the gravy were amazing! The biscuits were light. I did them in my iron skillet do they had a crunchy outside. My daughter is gluten intolerant, so she especially loved the gravy. Thanks!
Keto Cooking Christian
I love the cast iron skillet idea! I am so glad you and your daughter enjoyed them! I have to admit, the gravy is my favorite too!
Vanessa
How much salt is needed for the biscuits? I noticed the directions say to mix it with the dry ingredients, but there is no measurement listed. Thanks so much!
Keto Cooking Christian
There is no salt in the biscuits, only in the gravy. Sorry for any confusion!
Mandy
I like more gravy and use chicken stock added and a little xantham gum. Sounds weird but is delicious. I also freeze it in small portions for work days.
Heather
How many serving is this and is this per serving?
Kim
This is really good. I left out the sweetener and nutmeg. Hubby even liked it. Thank you!
Keto Cooking Christian
Awesome, glad you both enjoyed it!
Anita Dalton
Do you drain the grease off of the sausage?
Keto Cooking Christian
No, there isn't much and I do not drain the healthy fat from the gravy.
Brenda
Hello I have two questions for you. Why the xatham gum and what can I use in place of it? And can I use cream cheese instead of mascarpone cheese?
Thank you
Keto Cooking Christian
Hi Brenda,
The xanthan gum is a thickener, you can use Glucomannan instead if you like. You can also substitute cream cheese for the mascarpone as well. It will change the flavor a little, but will still be good 🙂 I hope that helps!
Leighanne
It was very good. I used arrowroot to thicken up the gravy. I think I used about 2 1/2 teaspoons until I got it to the thickness I liked. Thank you for making this recipe.
Keto Cooking Christian
Glad you enjoyed it!

Being a country girl from the south, biscuits & gravy are a given! However, being on keto/low carb is impossible with the recipe we grew up on, but this is as close as it could possibly get!
Easy, and so good!
