In a mixing bowl, add in the heavy cream and whip to stiff peaks using a hand mixer. Then set it aside.
Add the mascarpone cheese to a separate bowl and whip using a hand mixer.
Add in the sweetener, lemon zest and vanilla extract, then continue mixing.
Add the mixture into the whipped cream and mix until well combined.
Add layers of the cream and berries, alternating and serve.

Store leftovers in an airtight container or covered glasses for up to 3 days. Freezing it not recommended. The mascarpone and whipped cream mixture can become grainy once thawed.
