    🛒 Ingredients for Low Carb Berries and Cream

    • Mascarpone cheese
    • Heavy cream
    • Fresh strawberries
    • Fresh raspberries
    • Fresh blueberries
    • Monk fruit/allulose
    • Lemon zest
    • Pure vanilla extract

    🔪 How to Make Keto Berries and Cream

    In a mixing bowl, add in the heavy cream and whip to stiff peaks using a hand mixer. Then set it aside.

    Add the mascarpone cheese to a separate bowl and whip using a hand mixer.

    Add in the sweetener, lemon zest and vanilla extract, then continue mixing.

    Add the mixture into the whipped cream and mix until well combined.

    Add layers of the cream and berries, alternating and serve.

    ☑️ Storage Instructions

    Store leftovers in an airtight container or covered glasses for up to 3 days. Freezing it not recommended. The mascarpone and whipped cream mixture can become grainy once thawed.

    🔄 Substitutions and Additions

    • Nuts: Add a slivered almonds or pecans between the layers for a little crunch
    • Chocolate: Mix in a few sugar-free chocolate chips with the cream for a fun twist.

    💡 Tips

    • Whip the heavy cream until it forms stiff peaks for the best texture. Soft peaks will make the dessert too loose.
    • Make sure the mascarpone is softened before mixing. Cold cheese can clump and won’t blend smoothly.
    • Use a hand mixer or stand mixer for quicker prep. Whipping by hand takes longer and may affect the final consistency.
    • Taste the cream mixture before layering. Depending on your berries, you may want to adjust the sweetener.
    • Chill the dessert for 10-15 minutes if you want it firmer, but it’s great right away too.

    Are Berries Keto?

    Berries are allowed on Keto in moderation because out of most all other fruit, berries are the lowest in sugar. When mixed with a healthy fat, like this cream or cream cheese, they are a really quick, healthy and satisfying snack.

    What are the Carbs in Blueberries?

    There're approximately 18 net grams of carbs per cup of blueberries. Since most Keto recipes only call for ½ to ¾ cup in a whole recipe, the carb impact is very minimal. Try blueberries in these Keto blueberry recipes:
